    I discovered this little gem on a recent trip to Pueblo. It was within walking distance if my hotel, and in an area filled with public art. The host Rachel was extraordinary, friendly, and attentive. The cuisine is Basque and Albanian, which provides a creative mix of Mediterranean flavor. I would definitely recommend stopping in if you're nearby and want a cozy spot to dine with friends or family.

    The food was awesome the pilzstake had an awesome flavor and paired great with the greens and fries so if you have low carb or carb lover this restaurant has good versatility. Staff was friendly and made good recommendations. We don't drink so we just came for the food and it was awesome. Wasn't a 5 star because portion size was smaller. They also felt like they were running around and were slower to get our orders and check in.

    Stuffed Piquillo Peppers  (Sweet and zesty red peppers stuffed with Basque potato salad). They are little, but pack a ton of flavor.

    Wowowowowow! Where do I even begin when describing the lovely meal I enjoyed at Bistoro last week?! First of all-- the food. As an appretizer, I ordered the Stuffed Piquillo Peppers. Small and mighty, these peppers were packed with an explosive array of flavors, both sweet and zesty with the flavorful potato salad to soften the flavors and bring them together. I was really impressed-- and tempted to order a few more plates of them for my entree and leftovers. I'm glad I didn't because... For my entree I ordered the Bisteak Bocata (in Panini form) with mushrooms added on. The sandwich was plentiful with meat and toppings, and the flavors were impeccable-- it was a unique flavor profile, especially for a sandwich-- anything but basic, and similar to app, they did a wonderful job of infusing various aspects of flavor into a well-blended dish. I was also fortunate to receive a small sampling of the Pueblito Pintxos, since I was chatting about the chili peppers. It, too, was delicious, and I plan on ordering it next time I visit. The restaurant is fairly new, but seems warm, inviting, and down-to-Earth. When I hear "spanish tapas", I tend to imagine a dressy, over-priced restaurant, but Bistoro was very reasonably priced and had a cafe feel to it. Katherine, the Server, greeted me with a warm smile as soon as I entered, which was remarkably inviting, especially since I was dining alone while in Pueblo for work. The owners, Joyetta (sp?) and Plume, were so passionate about their food and the way they took care of customers. That passion is clearly detectable in the quality of food and overall experience of dining here. This restaurant has not only become a staple for me to visit every time I'm in Pueblo, from now on, but also a destination in and of itself now. I do hope you have a chance to go, and if you do, try to say hello to the owners. They were so kind, I think you'll appreciate the experience even more after meeting them.

    Absolutely delicious authentic food packed with flavor. The staff was so helpful and friendly. We drove in from Ouray and got there just a couple minutes before they were closing the kitchen but they gladly kept it open for us. The waitress explained the whole menu to us without us even having to ask. Very genuine people and delicious food. Great experience :)

    My boyfriend and I were in Pueblo for a wedding. As he was part of the groomsmen's party, and I was not, I had an afternoon free to myself while he was out golfing. Wired to Central time, I started to feel peckish for lunch at around 11. I saw that Bistoro had good reviews and was open, so I headed there from the Marriott where we were staying. My timing could have not been more perfect. At 11:30-ish when I walked in, there were just two ladies waiting for their takeout orders at the counter. I opted to sit at the counter because I feel less like a "Loser, Party of One" at a counter than I do at a table. I was greeted and given a menu promptly. I only had water to drink although they have soda, coffee, and smoothie options. For my lunch, I decided on the bisteca on greens, and it was MAGNIFICENT. You have the option to have it served on greens, a hoagie, or something else that I can't recall, and I opted for the greens, which the server/owner informed me were dressed in apple cider and olive oil. I chose the greens because I knew I was going to be a super fat fat later in the weekend. Anyway, as a person who normally has to begrudgingly take a way a sytrofoam box, I devoured my bisteca with green chile and onion. After 12-ish, the place was PACKED, so go git ya some! I love you, Bistoro, and I'd be a regular if I lived in Pueblo.

The food was top notch and the menu ranging from commonplace to exotic. Every dish had an element of gourmet treatment. All the entrees we ordered were excellent. The venue is small. I wouldn't say 'intimate', given that it has large windows facing the street, but it was cozy enough on a cold night. OUr server was very friendly, helpful and attentive. Prices are not cheap, but reasonable for the quality and creativity of the menu. We didn't order wine, but instead Italian beers in a brand I'd not heard of, allowing us to try something other than the usual two brands commonly available.

The chile in the sauce was a really nice touch, adding some interesting spice to the dish. The sauce itself was very thick, the heaviness took away from the dish a tiny bit. But all in all, a great sit down meal in Pueblo!

We ordered a couple of dishes to start (tacos and a salad) and chatted away until we chose our next plates. Each dish that came out was very tasty, beautifully presented, and arrived very quickly. My favorites were the dates and crème brûlée dishes lol. I've had a massive sweet tooth lately so I found these extra yummy. Price was pretty reasonable for two people; our bill came out to be about $75, and that included two mixed drinks as well as all of the food seen here (though don't be fooled because we got two plates of the dates!). I wish there were more places like this up by me, but I do have a couple of very good reasons to frequent Colorado Springs, so I'm positive I'll be back. I'm looking forward to making my way through the menu and excited to try everything!

My daughter had to drown them in ketchup for her to be able to eat, so I'm guessing they were very dry or tastless. We also waited for a very long time for staff to bring us our bill. We waited about 30-40 minutes for anyone to come back to our table to bring our check after we had already finished eating. We each took one and split the Maduras. The Tamal Cubanos were different than the Mexican tamales we are used to. But they were extremely good, and I would definitely order them again. The surface was friendly and helpful, although not fast. But as long as you aren't in a hurry, the meal was perfect!

The ham is fried up to crisp it up a bit but the ham seems to be lacking flavor wise compared to everything else in the sandwich. The Cuban Mojo Sandwich also is an amazing sandwich. The pork shoulder is crisped up nicely and works so well with everything else. The winter soup was a tomato soup with some grilled cheese croutons and it is the best tomato soup I've ever had. The tomato soup isn't puréed, there are noticeable definitions in the tomatoes in the soup. The soup isn't too acidic which is the usual issue in tomato soups. The croutons really amplify this dish on to another level and I just wish there were more in my soup. I can't wait to come back here and my biggest issue will to try and order new things.
