I made a pit stop here on the way to Bent's Fort. I LOVE the look and feel of this place. This is the type of coffee shop I love visiting and spending time in. I ordered a 12 ounce dark coffee. I passed on food. There is a nice display case with various pastries at the ordering area. This hits you immediately when entering the coffee shop. I noticed they had a favorite, bear claws. They also offer other food items from their menu. Coffee was great! Nice and earthy. Staff was friendly and service was good. It didn't take long to get my coffee shortly after I ordered it. I spent some time in this wonderful nook, at the rear of the coffee shop. You ascend a small flight of stairs where there is a nice lounge area with plenty of seating. This is a nice area to socialize with family or friends. Personally, I enjoyed that it was quiet during my visit. The building itself has a nice old school feel to it. I loved the gypsy memorabilia and art work. I would love to spend more time here. When I'm passing through or by Pueblo, I will definitely stop by for a visit. Brilliant job making great use of an older building. If you're passing through or spending time in Pueblo, I recommend checking out Gypsy Java. Especially if you have a gypsy type spirit!

Stopped here for brunch when we passed through town. Lox on wheat was the best thing we ordered. They were out of bagels and English's muffins but the croissant buns were a good substitute on the breakfast sandwiches. The large chai tea had a stronger chai flavor than Starbucks but still good.

I was disappointed. Love the atmosphere & maybe the issues are due to this being a holiday weekend, so will give it another try. I ordered the avacado toast, and it was great that they had both bread & gluten free, but it was not toasted at all & the smear of avacado had no salt, pepper or dash of lemon & I didn't see any condiments on the tables. I'm sure they have them somewhere. The water, where you fill your own was empty & they were busy, so was prepared to go without, but they filled it right away. My friend ordered the Breakfast burrito & picked all the potatoes out because they were cold. The menu looks great, the staff was busy yet still very nice, the building has so much character & I'm hoping the non-toasted toast & cold potatoes was just a one-off.

The best little coffee place off I-25 with a river nearby and cute small town ambiance in the neighborhood. Awesome menu of coffee and eats with vegan options. So charming, service is so friendly, the pastries are bakes in house and so beautiful! Thank you to the crew at Gypsy Javas!

They have a rustic looking decor. I stopped for a takeout coffee and breakfast. Ordered the gypsy mocha with green chili, the quiche and a lemon poppyseed muffin. I loved the mocha. The green chili in the mocha was a perfect touch of spice. The quiche was decent and quite filling. The pesto sauce with it was absolutely delicious. The muffin was ok. I am not one for a sweet tooth, but it def needed more lemon in it. Overall it's ok. The inside doesn't have much lighting so would recommend sitting outside.

The food looked great, reviews were positive, so I decided to give it a try. Wow, what a find! It's a nice, clean little place with plenty of parking this afternoon, and it appeared to be in the "old town" portion of Pueblo, which I hadn't been to, and was a nice change. I was greeted by Alicia, who had a great attitude, and gave us the breakdown on the different choices for our lunch/early dinner. We ordered the wings, jumbo shrimp (which really were jumbo), tater tots, and a two piece combo. Alicia went the extra mile to provide us with each sauce to sample, as she was excited for us to try them all. The chicken was juicy, cooked just right, and delicious! The shrimp were huge and tasty, and the tartar sauce and cocktail sauce that they came with were perfect. Our favorite sauces were the ranch, dill ranch, buffalo, hot honey, and the habanero. Great food, at a great price, and each serving was just right. One of the great places I hope to re-visit soon. Highly recommend!

My only regret is living so far away. I hope to be back.

Pueblo, CO - The Secret Gem Revealed…read more Hands down, the hidden treasure of Pueblo sits quietly on the west side of town -- Reservoir Brewing. I strolled in after a long day of convention chatter downtown, feeling like a city-slicker cowboy wandering into an old ghost town. I pulled up a seat at the bar, surrounded by locals swapping stories and laughs. Behind the bar was the owner himself, ready to give me the lowdown on the beers. He suggested their Revolution beer but warned me it didn't come out quite like usual. so they added mango. Being the adventurous type, I said, "Why not?" First sip... home run! Easily my favorite of the night. One beer turned into a few, and before I knew it, I was closing the place down, talking with locals and the owner like we'd known each other for years. It was so good I came back the very next day to finish the beer list and check out the food. And let me tell you; Lord have mercy..... the food matched the beer in greatness. Perfect beer food. I started with the spicy habanero cheese curds (fiery but addictive) and then went in for the kill: The Rachel Fully Loaded with turkey, pastrami, and bacon on marbled rye, with chips on the side. That sandwich didn't stand a chance. Every crumb vanished. Naturally, I enjoyed a flight and stocked up with a couple of growlers to go. (Flip Flamingo Rule #1: Always keep empty growlers in the car, just in case.) The owners also mentioned they're moving to a bigger location closer to the reservoir, hopefully in September. You'd better believe I'll be back for round two at the new spot. If you want the best all-around brewery in Pueblo --Beer Food Vibes , this is it. Drop in, order a pint, and tell 'em Flip sent ya!
