I am from out of town and have been visiting almost every morning for three weeks now. I don't even have the words for this place. The staff is above and beyond amazing. As soon as you walk in you can feel how comforting and welcoming the atmosphere is! By the third day of coming here they knew my name and my order perfectly. Having a dairy allergy, I order nut milk in my coffee and could have cried when they brought out the milk they use to show me that it is just about the highest quality possible nut milk you can find!! They also have gluten free options which I greatly appreciate. This establishment truly cares about their customers and is now my new favorite coffee shop. I miss it whenever I'm away! I always order an iced honey cinnamon latte with cashew milk. It's the best iced coffee I've ever had and it is exactly the same every single day!! 10000/10!!! read more

Great once again! The seasonal rose cardamom chai is delicious. Little sweet but the cardamom rose flavors are lovely. The lox bagel is quite tasty as well. Instead of cream cheese these was a pesto dill lemon vinegaret sauce and I really enjoyed the lighter take. Love this area of town for the big library, walking and this coffee shop fits right in the quaint old town feel. The barista greeted me immediately, took my order as soon as I was ready and had my drink and food our quickly. Will absolutely return. Only negative is seeing the eye sore that is the gross establishment called Rudy's right across the street. read more

"Is this my new favorite coffee shop? Should I move to Pueblo?" These were the questions running through my mind on a recent stop here on the way home from a camping trip. My pal has celiac, and needed something gluten-free, so we searched and this came right up. The staff was so friendly and helped us pick a good sandwich for lunch, and then we relaxed on the comfy couches in the gorgeous main room - which was huge! Plenty of space for people to spread out and relax, and the vibes were very good. We chit-chatted with the barista about things to do in the area, then enjoyed our delicious sandwiches. I made a pit stop here on the way to Bent's Fort. I LOVE the look and feel of this place. This is the type of coffee shop I love visiting and spending time in. I ordered a 12 ounce dark coffee. I passed on food. There is a nice display case with various pastries at the ordering area. This hits you immediately when entering the coffee shop. I noticed they had a favorite, bear claws. They also offer other food items from their menu. Coffee was great! Nice and earthy. Staff was friendly and service was good. It didn't take long to get my coffee shortly after I ordered it. I spent some time in this wonderful nook, at the rear of the coffee shop. You ascend a small flight of stairs where there is a nice lounge area with plenty of seating. This is a nice area to socialize with family or friends. Personally, I enjoyed that it was quiet during my visit. The building itself has a nice old school feel to it. I loved the gypsy memorabilia and art work. I would love to spend more time here. When I'm passing through or by Pueblo, I will definitely stop by for a visit. Brilliant job making great use of an older building. If you're passing through or spending time in Pueblo, I recommend checking out Gypsy Java. Especially if you have a gypsy type spirit! read more

Kitchen lady shouldn't have a job. Ordered a vegan burrito and it came out with egg. No big deal, I went up to the lady who made it and asked if she could she could remake it-she cut me off by being very rude saying that If I wanted her to remake it she'd have to charge me for it. I told her that I had ordered a specific order and she sighed like it was a huge deal and raised her voice stating she wouldn't remake it. I don't know who in their right mind wants to deal with someone like that especially early in the morning. Stopped here for brunch when we passed through town. Lox on wheat was the best thing we ordered. They were out of bagels and English's muffins but the croissant buns were a good substitute on the breakfast sandwiches. I was disappointed. Love the atmosphere & maybe the issues are due to this being a holiday weekend, so will give it another try. I ordered the avacado toast, and it was great that they had both bread & gluten free, but it was not toasted at all & the smear of avacado had no salt, pepper or dash of lemon & I didn't see any condiments on the tables. I'm sure they have them somewhere. The water, where you fill your own was empty & they were busy, so was prepared to go without, but they filled it right away. My friend ordered the Breakfast burrito & picked all the potatoes out because they were cold. They have a rustic looking decor. I stopped for a takeout coffee and breakfast. Ordered the gypsy mocha with green chili, the quiche and a lemon poppyseed muffin. I loved the mocha. The green chili in the mocha was a perfect touch of spice. The quiche was decent and quite filling. The pesto sauce with it was absolutely delicious. The muffin was ok. I am not one for a sweet tooth, but it def needed more lemon in it. Overall it's ok. The inside doesn't have much lighting so would recommend sitting outside. read more

Roasted: ended up coming here because my first two choices were closed and this was one of the only places open early on a Sunday morning. Cute coffee shop with good seating and good decor. Really great vibe when you walk in. Super friendly as they greeted us immediately as we walked in the door. Decent sugar free flavors but they were out of sugar free hazelnut this morning sadly. They made our lattes in two go cups even though we sat down for here, they didn't offer for here cups either to us. Instead of bringing our lattes to us when it was pretty quiet in the shop, they yelled out our drinks when they were ready. My latte was ok - it was a bit too hot and absolutely way too much foam - it drank much more like a cappuccino. No latte art either. I don't think this is a coffee shop I'd frequent again. Unroasted: last minute decision on coffee shop because only thing that is open at 7am on a Sunday. Very nicely decorated space with a piano inside and outdoor seating. The staff greeted as we walked in and helped with our questions. Glad they had sugar flavors and the price was reasonable for breve. Unfortunately didn't get a mug and no latte art on To go cup. My latte was all foam to start with, then you get a taste of hint of lavender. I am not a fan of lavender! It just ruins the flavor of the vanilla and beans. Another thing if I notice the yelling of orders that kind of kills the vibe. I feel like I am at a mall food court t waiting on my order. A little more knowledge about various ways to make coffee (aeropress?) would be helpful. And disorganization behind the counter made for a longer wait. Stopped in for a quick breakfast +coffee, overall great portions for the prices on the food. I got an early bird breakfast sandwich with turkey and bacon and it was filling and yummy! I also got an iced chai with espresso and it was okay- a little too watery. My partner got a breakfast burrito which he enjoyed and also liked his mocha. The kitchen is a bit noisy, as it is directly next to the eating area/open. We didn't mind the noise but it's probably not an ideal study spot without headphones! read more
