The line outside was already pretty long when we arrived. Most of the people on line were walk-ins. Not sure how many got in as Bird Pizza is very popular. The restaurant is small but they have a full service bar. If you are alone you could sit at the bar and eat. The Kale Caesar was huge and amazing and the pizza was excellent. The pizza, the restaurant, and the staff were amazing! We went for the first time at the beginning of March and I've been thinking about it ever since. The kale Caesar salad is to die for, the great white pizza was amazing, and definitely try their wine and cocktails! Third or fourth time here and it has yet to disappoint. At this point it's a staple. We had reservations on a Friday night which was the right call -- it was busy but never overwhelming, and the low lighting and music kept the atmosphere exactly where it should be. Always a vibe in there. Our server Imoni was attentive and personable throughout. We both went with the Grolleau for wine -- not too dry, very easy to drink, good choice for a pizza night. Started with the famous kale Caesar salad. They were generous with the portion today and it came out warm, which was a little unexpected but not unwelcome. Personal tip -- if you have leftovers, that salad is even better the next day after sitting in the fridge overnight. Trust me on that. For the pizza we ordered the Grandad, no sausage, with hot honey. I asked for the hot honey on the side but it came on the pizza directly. Went to Bird Pizzeria after seeing all the hype online. I wasn't going to wait however long it takes to get a reservation, so I decided to go early as a walk-in. I got a little confused with the hours and arrived at 4:30, realizing the dine-in restaurant doesn't open until 5:30 (only the To-Go opens at 4). I waited in the car and got in line first at 5:15. Once they opened 15 minutes later, the host seated us almost immediately. It's a small spot but has a very 'date night' vibe. We ordered the Kale Caesar, of course. For something so simple, it was definitely one of the best salads I've ever had. Our server was delightful and very kind. The pizza was definitely an 8.2, just like Dave Portnoy gave it. Go to the window, scan the QR code to order a pizza online, wait about an hour (go walk to optimist or Rosie's Wine Garden), but it's worth it. And it finally works out where my husband and I were out early and ended up there right as it opened. They now allow walk-ins however if you eat inside the restaurant you cannot make many changes to the food menu. If you would like to order custom pizzas you have to do so outside at the window. They do have outdoor seating with umbrellas for customers. The service was great I do believe my waitresses name was toffee. We arrived, and the hostess and staff were all so nice, took our name, and then only waited about 15-20 mins before we got seated. I read the FAQ sheet on the website before arriving, so I knew to get there early and that parties can't be larger than 3 to be seated without a reservation. She was really really nice and she shared a little about how the business got started and how they expanded to having a dining room. I ordered a whiskey sour that was really good and the Grandad pizza! Listen the drink delivered a nice punch and the pizza was full of flavor in every bite. The toppings were generous and just flavorful. The pizza definitely lived up to all of the hype that I've seen. The restaurant is what I'd consider a small intimate setting. Update. 12/12 So while back in charlotte I decided to give them another shot. This time I went with a white pizza. White sauce base, mushrooms, pork blend sausage. I ordered from the QR code at the window and. Nine else was outside. I was there at 4pm When they open and it took about 25 mins to get the pizza. Which personally felt like a rather long time. Anyway I get the pizza and immediately open it to get the best possible experience from a fresh pie. Just like last time the dough and crust are solid. The pizza again is very VERY under seasoned. Which is strange how the manage to make all the ingredients so bland and add zero seasoning. I had to again go to the window and ask for a side of salt to try and wake the pizza up and make it halfway decent. Out of 2 adults and 2 kids we didn't even eat half the pie.
