It's not a pretentious place. It's as down home as you get. But if you don't like the ribs or sausage here, you're one meal away from discovering that you're a vegetarian. The ribs are the perfect expression of St. Louis style ribs. And their sausage 100% beef and 100% made from scratch right here on site. And it shows. You can't get that texture from a commercial outfit. These guys are obviously not politicians because they don't put their own spin on anything. Their spin is, there is no spin. Everything's done the traditional way. Nothing is "extra" -- not extra salty, smokey, sweet, tangy or spicy -- just extra tasty! I haven't tried their brisket. And I may never try it. Because next time I come back, I'm getting another two meet combo with ribs and sausage! My sides were potatoe salad and coleslaw. They had a number of other options, but in my background, those are the most traditional sides and that's what I was in the mood for. These sides were made with the same principal. Keep it traditional. Don't put a spin on it. But put pride into it, like you were serving it to your pastor at your house on the Fourth of July. The entire meal could have been served up in 1950. But it's good ol' American barbecue. If it ain't broke (and it certainly ain't)... don't "fix" it. Just serve it up and watch 'em come back for more. read more

Billy's feels like my Texas. The people behind the counter are warm and welcoming and so are the other patrons. I came in by myself and was lucky enough to share a table with a stranger. Just average bbq that is overpriced. One of the employees touched their face (eye or nose, can't remember) and grabbed slices of bread afterwards. I ended up tossing the bread and just asking another employee for more. I had been here a few times over dozen years, and it's not as good as when I first had it years ago. The owner is still there and active in day to day operations. I won't be back. There's lots more bbq joints with higher standards. read more

Dive! I'm surprised they have enough electricity to take cards... Billy's is tucked away on a dead end next to the Colorado River. Smokey. Stuffed animals on the wall. Unlikely any chairs at the card tables match... But the brisket is consistently great. Has been for 3 decades. That's all that really matters. Sausage, chicken and ribs are good too. All the sides come in 5 gallon containers from a distributor. Someone alluded to their desserts being 'great.' Billy will stiff you on the flatware, napkins, pickles and onions, sauce and everything else you want to to go with your Q. And why the hell are they closed on Tuesdays? First of all, Billy sits behind the counter and thinks he's too good to greet anyone. My family and I walked into the dump of an establishment immediately glared at like someone just saw a ghost. Unprofessional and disturbing. After Billy assured me his brisket is his favorite item, we recieved the pathetic excuse of what looks to be a mountain of beef mush, "slow" cooked in his grandmas 20 year old crock pot. Highly recommend! The food here is incredible. Not only the best BBQ in Bastrop, some of the best BBQ I've every tried. Better than any from Lockhart for sure. Forget the sauce, pickles, and onions; the brisket and turkey are so good plain. There are nicer restaurants, but Billy's is clean, well lit, and comfortable. We especially liked their St. Louis style ribs and their well known house made sausage. Their serving portions are generous. Prices are good. Brisket is excellent and their ribs. Sides are tasty. It was Christmas Eve and I needed some comfort food and since I have tried all of the mom and pop BBQ joints in Bastrop County, it was time to check out Billy's. Billy's parking spots were taken but the DQ parking places next door were empty so I parked in a DQ spot. When I got out of my vehicle, I could smell in the air that BBQ was sold here. When I entered, I saw Billy sitting at a table in the rear. I went to him, introduced myself and told him that I had heard nothing but songs of praises about his Q and wanted to sample some. I ordered 2lbs of beef brisket and only a pound of pork spare ribs and potato salad. The meats were well smoked, ribs were fsalllin' off the bone and the beef brisket was not dried out. The back of the BBQ has a gag poem written by one of the pitmaster's buddies dedicated to the pitmaster. It tells a tale of the pitmaster dreading his job, waiting till 7 pm when he can go home, screwing up on this, screwing up on that. Believe the poem. The meat here tastes like it was smoked by someone going through the motions, watching the clock until they can go home, screwing up on this, screwing up on that. I didn't finish my plate. The meat was nearly tasteless. If you want good Barbecue and you are near Bastrop - avoid Billy's. Go about six miles west down Highway 71 to a rival barbecue - Benny's. (Just east of Cedar Creek High School). At Benny's you can get magnificent barbecue and eat like a king. Billy's is unsatisfactory stuff. read more
