We are always on the lookout for tasty bbq. Unfortunately, our visit to Big Muddy BBQ was underwhelming. Hubby ordered brisket (like he dies everywhere), and while he said the meat had a good flavor, it was just too tough. For his sides, he ordered baked beans and potato salad, and said they were both OK. I ordered their pork tips with brisket green beans & baked sweet potato. Lets just say the meat was cooked WAY beyond recognition. It was super tough to chew. The "brisket" green beans was just canned green beans with a couple of burnt brisket pieces. The sweet potato was good (a little small) and the best part of the meal was the sweet cinnamon butter for the sweet roll. Sadly, as much as we love our barbecue... we would not come back here. read more

Located within a gas station along a busy highway (61) the location is convenient, especially for travelers. The owner was working tonight and he was bubbly and friendly, he made the experience personal. The space is old but clean with booths for seating. They can sell out, so watch the menu board for items that might not be available. We ordered the pulled pork nachos and 1/3 rack of ribs. The ribs were good as well as the pulled pork. I would probably come back and give it a higher score for the meat alone. The nachos were tortilla chips, with canned cheese, sour cream, and my nemesis- baked beans. I am not a fan and didn't realize they were on the nachos. If there were no baked beans and a better cheese option, I would have easily given the meal a 4. Lesson learned for next time. It hurts me to have to give a BBQ joint 2 stars. It hurts me to give THIS BBQ joint 2 stars. A year or two ago, it would have been 4-5 stars. This review is for the location on Hgwy 61. I went about a month ago, and I went 30 minutes before they closed. There was a man standing outside smoking. I walked into the restaurant, and from outside the man started knocking on the window motioning me to come outside. I walked outside and he advised me they were closed. He wasn't necessarily rude, but he wasn't polite either. I asked if they changed their hours. He just confirmed they were closed and kept smoking. I didn't rush to the reviews then, because I've always enjoyed this place. I went back this week on my lunch hour. They only had one employee working, and he was very professional and kind, but he was taking and making orders. I watched 3 different people walk in, wait to order, and leave because they weren't being helped. My order took 30 minutes from the time I arrived to the time I received my food. The brisket was a complete let down. It was flavorless and pale. The brisket green beans didn't have a shred of brisket in them. The candied yams were cold, gritty, and inedible. Very Disappointed! We come to town once a year and for the past 4 years we look forward to eating here. In fact sometimes twice over the long weekend. This time will probably be the last. Ordered the full rack of ribs to go and went to our Air BnB for a quiet meal after driving for 2 days straight. The ribs were so dried out half of them were inedible and got thrown in the trash. It is located adjacent to a gas station, therefore in terms of BBQ hole in the walls, it should be great. The only problem is, it wasn't. I ate here early evening in mid April and got the Snackin' Basket - 2 ribs, pulled pork, tips, and a slice of brisket. All of it was very dry and needed sauce in order to eat. I hate adding sauce to BBQ. It should stand on its on. Unfortunately, it tasted as though it had been cooked earlier and was under a warmer or heated up in a microwave. The best thing I had here was the brisket green beans. If I had just gotten a big cup of those I would probably give it 3.5 stars. The service was slow, but very nice and friendly. Friendly staff!! This doesn't look like much from the outside, but it's clean and welcoming. They share restrooms with the adjoining gas station, but I'd have to say these were some of the cleanest gas station restrooms we've seen. We had the brisket sandwich with 2 sides. We both thought the brisket was really good and we liked the potato salad. The baked beans were good, but we would probably try a different side next time. It's true: this place really does have the finest pulled pork in Missouri. We were passing through Hannibal and rather than go to the touristy spots closer to old town, we stopped at Big Muddy BBQ. Man, are we glad we did! The pulled pork sandwich is easily a half pound of perfectly barbecued pork. The sandwich comes with a choice of two sides. Food was excellent! I had the 1/2 rack of ribs, brisket green beans, and baked sweet potato with brown sugar butter. My husband had the brisket sandwich with potato salad and the coleslaw. We shared the plates so we could taste everything. Both of the meats were juicy, tender, and well seasoned. All the sides were flavorful and well portioned. Service was swift and friendly. Well, we have passed this place over the last few years and finally stopped to eat. We really appreciated the large parking area in the back, because we had a big truck. I decided on the brisket sandwich, candy yams and green beans and my wife got the smoked chicken, potato salad and baked sweet potato. The young man working the counter was very informative and professional. Ok, here is where it takes a bad turn. We got ice and I could help but notice that water was running everywhere from the fountain machine. Looking closer at the fountain machine, the ice machine was beyond dirty! Black slimy mold was all over inside of the door! No ice for us! We prayed over the soda and took a chances just drinking the soda, without ice! We received our food and were SO DISAPPOINTED! Wait let me give some good points. The brisket portion was nice and the bbq sauce was good, but that was it. The chicken was burnt and not good at all! The candy yams were dry and lacking any type of flavor, the beans were not seasoned, the mashed potatoes, I mean potato salad was just not potato salad and the baked sweet potato was dry and the size of a small dehydrated lemon! We are not going to just destroy this place in our comments for two reasons. One, we own a restaurant and two this place has a lot of potential! Please take more pride in your establishment and do some serious cleaning! Please take more pride in the food and its quality that you serve! You only have ONE chance to impress people! Big Muddy is a local chain of three restaurants and we went to the location that's sharing a space with a gas station. It has simple booths and local charm. We ordered the Nacho pulled pork - enough as lunch for two. My teen son liked it so much we came back the next day, too. I also ordered the sampler smoked pork platter which was well-prepared and tasty, though I would have preferred a sauce baked in a bit more than just offered on the table. It seems to be a family run place where one person runs the whole show, handling rush periods very professionally with service and charm. The two cousins who worked there on separate days sure have us sold to come back for more of those nachos! read more

Stopped in at this restaurant on my way through Hannibal today and got the beef brisket sandwich meal for lunch. I have traveled all over the Midwest and have sampled many different restaurants and I have to say Big Muddy BBQ is now in my top three favorite BBQ restaurants I have eaten at. The staff was very friendly and it is easy to see that their main focus is on quality food and excellent customer service! I was pretty jazzed to try Big Muddy BBQ. We'd covered a lot of ground on a road trip and were in the mood to try some regional BBQ. Reviews were solid. The location is good, walking distance from the square where you'll spend most of your time if you're a tourist in the area. The smell was phenomenal when we walked in the door. Service is simple--guy at the counter takes your order and serves it up super quickly to your table. He was friendly and fast. I opted for the brisket though there was a lot I wanted to try. I chose potato salad and baked beans as my sides. The baked beans were great, the potato salad good. The brisket had good flavor but was tremendously fatty and greasy. The only BBQ sauce option was a sole sauce on the table that was super sweet, I was hoping for a little heat. My wife had the pulled pork, and while it was also fatty it wasn't quite as fatty as mine. She enjoyed it and her candied yams. Prices are fair. When we were going through this area on a road trip we stopped here on a Sunday. We ordered the pork nachos and they were nothing but a basket of SLOP. A basket of soggy chips you have to dig to get to, pork and beans, and a processed can of cheese and sour cream drenched all over the pork so you couldn't even taste the pork. We love pork nachos and these were the worst we've ever had. We should not have deviated from our usual stop up the highway for BBQ. Didn't appreciate not having heat either. So, I'm from Texas. You have to factor that into my review of BBQ, but, I try to give good information that helps you decide whether to stop in. Big Muddy BBQ recently moved from their original location on Broadway in downtown Hannibal, to the Ayerco station at 304 US HWY 61 South at the junction of MM. They occupy the diner portion of the building which also houses a convenience store. Their seating area includes booths and tables. You order just inside the front door, where the chalkboard displays their offerings. You help yourself to soft drinks and tea from the adjacent bar, and the food is brought promptly to your table on convenient trays. (In Texas you usually have to eat off butcher paper, so the trays were noticeably a nice touch.) I saw in previous reviews that the Snackin Basket was a hit with first timers, so I opted for it with two sides, potato salad and Cole slaw. The homemade Cole slaw is very lightly seasoned which really makes the cabbage flavor the star of the dish. The mustard-based potato salad was quite tasty, although just a tad too sweet for my palate. But, then, that's just me. The brisket was eye catching, with a deep, dark, bark that promised tons of flavor. But, it didn't deliver. In fact, the smoke was so light there wasn't that dark pink smoke ring under the bark. But, then, keep in mind that in Texas they BBQ with mesquite or live oak, both of which are very strong flavors, while hickory is much more delicate. So, I may be over critical on that. The brisket was moist, but the texture was not fall-off-the-bone tender. It was reminiscent of pot roast, where the meat comes off in chunks, rather than strings. Again, this could be a preference thing. The BBQ sauces are very respectable additions. The sweeter of the two has very prominent sweet-sour notes, probably from apple cider vinegar and brown sugar, while the "hot" sauce version has the nearly the same flavor with just a hint of heat on the back of the tongue . . . not too spicy. The dry rub on the pork ribs was so good I didn't even try any sauce on them! The flavors, while subtle, just dance on the tongue, letting the flavor of the pork come through. It was just a delight! And, the same flavoring is used on the rib tips and pulled pork. Cumin, honey, vinegar, salt, pepper, paprika . . . and, is that a hint of cinnamon? All in all, a decent BBQ meal that I will have again. And, I heard other diners mention that the smoked chicken was "to die for," and the candied yams were so good they ordered more to take home. Big Muddy BBQ is definitely worth the stop. read more

Big Muddy resides on the corner of a dilapidated block of abandoned buildings in downtown Hannibal about a mile off the Interstate. The only sign of life on a dreary late Sunday afternoon in December was the aroma of a barbecue smoker sending out its invitation to come inside this empty restaurant. Once inside; a small but maintained BBQ joint with a walk-up counter and about 8 tables offered a respite from the long dreary drive home back to Kansas City where bbq is religion and legal tender. The Snackin basket with 4 meats and 2 sides was a good deal at $15. It easily could have served 2 normal adults. Two Ribs, pulled pork, brisket and rib tips, beans and slaw. The pulled pork with some house bbq sauce and the crispy tips were my standouts. Ribs and brisket were adequate, as were the 2 sides. In retrospect, I wished I had ordered the candied yams. My wife and my buddy both had the chicken dinner and gave it 2 thumbs up. For a small town bbq joint, Big Muddy holds its own. Hopefully it can breath life and nourishment into the neighborhood just as it did for us 3 road weary travelers. read more

Stopped in Hannibal on our road trip and were looking for a place to grab lunch. What a delight to stumble into Big Muddy BBQ, we decided to share the Snackin Basket, with a little bit of everything seemed like a great choice. Boy oh boy was it good, the ribs had a dry rub on them that left a delectable crust, and the brisket was so good that Mom ate it all before realizing that I hadn't even had a chance to try it. So silly mom aside the lovely people at Big Muddy helped me get some brisket that I was able to keep all to myself. Paired all of this with some potato salad and some coleslaw, which complimented the pulled pork. The atmosphere is very much the, come on in and make yourself comfortable and don't worry if you have BBQ sauce on your face because everyone else will to. The art work on the walls had my interest piqued, so I was delighted to be able to talk to the owner. He told me about the Russian artist Nick Kosciuk, who makes some very powerful paintings, He was able to share some knowledge on the building and how he got the chandeliers from Argentina. Such a wonderful place to stop, and it will be come a regular stop on our adventures in tasting. read more

The food inside more than overrides the lack of curb appeal. Pulled pork was as good as I've ever had! The pork ribs were the absolute BEST I've ever had. This place may be small but it is mighty! We were greeted by a friendly hostess, very pleasant! I ordered brisket and My husband ordered ribs. Both were so tender they were falling apart although I only tasted a small bite of his ribs it was delicious but the brisket was almost melt in your mouth delicious. Coleslaw was just sweet enough to be very good without a lot of mayonnaise to ruin the cabbage. The green beans were delicious with chunks of meat in the beans.
