Simple, homemade sauces & fall off bone Ribs to die for!! If you want the real deal, this is it. The Mac & Cheese was so good. Beans were beyond good!!! Ribs are some of the best I've personally ever eaten. Dry Rub sauce on side. We had Sweet & Spicey sauces. Both were awesome. Spicey was 'not' where you needed 'milk' after eating LoL-- Just right. Cornbread could be a little better, but not enough to not stop here for sure. So, when you gotta stop to see Mark Twain history, or the kids dressed as Huck Finn & Becky Thatcher, stop here & I assure you, you won't be disappointed!

Driving back to St Joe around lunch time so we decided to stop by this joint and get our fill. Boy, we were all glad we did! The place was busy and we found out why. They serve real awesome bbq!! The brisket was flavorful and tender and the ribs were juicy and fall off the bone! Definitely a must try if you are in Hannibal, Mo.

Needed to get out of the house after the winter storm so planned a short trip to Hannibal to explore. Chose this restaurant because of yelp and so glad we did. Cute, small place that has a simple but satisfying menu. Hubby ordered the brisket plate w beans and Mac and cheese. I had the special which was pork nachos. The beans had a slightly different taste, almost brown sugar or molasses, not sure. We forgot to ask. My husband loved them and everything on his plate. Brisket had an awesome char where you want a char and tenderness everywhere else. His only complaint.... He wanted more. The nachos were a large, shareable portion. The cheese was above your average queso and the pork was plentiful and delicious. Service was great too. We both agreed to eat here again. Limited hours and seating can be tight but worth it!

Walked by this and looked good so checked Yelp reviews and we doubled back! So glad we did! Small but adequate seating. Lot of takeout riders. Had the special pulled pork/brisket nachos. So good! They sold out shortly after! The 2 employees were hustling and got everyone served in the full house!

Good food. Fastest service in the world! Great music and great location in the heart of old waterfront Hannibal. Yum.

The BEST BBQ I've had in some time! I had a brisket sandwich and they did NOT skimp on the amount of brisket like some places do. It was moist and very flavorful! And not too fatty. Hubby got a smoked turkey sandwich and it was excellent too. The sauces were AWESOME. My preferred ones were the Tangy Mustard and the Sweet and Spicy (though it could've been more spicy for my taste buds). For my side, I tried the green beans and was VERY pleasantly surprised. I found NO bacon in them, but they had plenty of flavor, a peppery flavor that was delicious. Out of all the places I checked out in Hannibal this weekend, this one was at the top of my favorite list!

Brisket, Ribs, Pulled Pork, Mac&Cheese, Cole Slaw, Baked Beans!

Visiting from Kansas City I was eager to eat some good quality BBQ. Wayne's blew my expectations out of the water. I ordered the Brisket Platter and added a side of ribs, Baked Beans, and Cole Slaw. The brisket was so tender I was able to cut it with a plastic fork and had a Smoked rub crust that trapped all the juices. The ribs were fall off the bone and the pulled pork that my wife had ordered was delicious. I enjoyed all of the sides as well. If I go back I'm definitely getting the potato salad and Mac&Cheese again. The Mac&Cheese was so gooey and cheesy, it was probably bad for my arteries but screw it it was worth every bite! It was a warm August day so the potato salad and cole slaw were nice and refreshing that complemented the hot, salty, savoriness of the smoked meats. The price was reasonable and at first I thought the portions were kind of small, but once I started eating I was like "dang this is a ton of meat". I left totally satisfied and am happy I didn't let my eyes order the entire menu. Even though Hannibal is a good 3.5 hrs away I would gladly make that trip just to grab some Wayne's BBQ and that's saying something coming from the BBQ capital of the world Kansas City, Missouri.

Wayne BBQ Brisket Plate with optional sides

A nice little cafe style eatery on historic Main Street in downtown Hannibal, featuring some of the best barbeque offered locally. Order at the counter below the large chalkboard menu which lists the various sides and options. Fountain soft drinks and tea are available. We had the brisket plates, which come with two sides. We were a few minutes before noon, and the baked potatoes were not yet ready, so we opted for other sides. About flavors: The coleslaw was above average with a surprising variety of tasty ingredients and a delicate mayonnaise-based dressing that allowed the veggie flavors to come through. The potato salad was another delight, with a mayonnaise dressing crafted to accentuate, rather than cover up, flavors of the finely chopped ingredients. The baked beans were flavored with brown sugar that hit just the right notes without being overly sweet. We are spoiled by years of Texas BBQ, and rarely find a place in the midwest that does it to our satisfaction. But, Wayne's brisket was moist and perfectly juicy, with a pallet pleasing hickory smoke bark that is so flavorful you may just choose not to sauce it. About the sauce: Wayne's offers two sauces; one is a deli-style brown mustard & vinegar yellow sauce, which, if I were a mustard sauce fan, I would have to say is deliciously robust without being overpowering. The tomato based sauce is also wonderfully flavorful with that sweetness that defines the yumminess of these sauces. Here again, though, we found that Wayne's sauce has all the flavors without being too sweet. In fact, although we enjoyed the delicate sweetness, we couldn't detect the brown sugar flavor that is usually so forward in these type sauces. Very well done! The dining room was comfortable and clean when we arrived a few minutes before lunch hour, but soon was standing room only, and, in fact we saw some folks leave when they realized the seating was full. Others got their meals to go. Prices are slightly above average in our experience, but, they have gone way beyond the norm in including more tasty ingredients in their side dishes, which is reflected in their operating costs. A very nice dining experience, and I would give them 5 stars, except, as I said, I'm from Texas.

Our waitress, Phoebe, was AMAZING! You should absolutely ask for her if you dine here. She was on point and super kind, efficient and fast. We enjoyed the generous dinner salad which came as part of my wife's fried shrimp dinner, which she LOVED! The salad was HUGE! 4 oz of dressing too. I always have to ask for extra. Not here. If you DO need extra, it's 4 MORE ounces for 59¢, which is a bargain. I can't imagine using 8 oz of dressing, but you do you. ;) The Fiddlestik that came with the salad was delicious! I LOVED it! My wife thought the bread was under cooked, but I like doughy bread (and cookies). My chicken fried steak was simply outstanding! I don't think it was hand breaded, but I don't care. The taste was there and it was everything. The mashed potatoes and gravy may be the best I've EVER had! They were spectacular! Fiddlestiks has it going ON in the kitchen!! WOW! I love that they have salt and pepper shakers on the table PLUS a black pepper grinder on every table! Fresh ground black pepper is a staple in our house and we loved it here. We were full as ticks with no room for dessert. Maybe next time, if we skip the salad, but I want that salad again!
