We arrived around 5:30 a.m., and the line was already forming. We found our spot with a view of the pits, where the smoke was already rolling and music was playing in the background. Talk about a Texas morning! Before the 8 a.m. opening, pitmaster and owner Kerry came out and asked everyone to call out their place in line for a raffle. Turns out, we were #89 and #90! After the raffle, we stood for the national anthem, and shortly afterwards, the doors finally opened. While waiting in line, you could shop for merchandise and enjoy complimentary cocktails or Lone Star beer. Just remember to tip! Finally, it was our turn to order, and at 9:44 a.m., we took our first bite of Snow's BBQ. The brisket? Yum! The pork steak? YUM! Everything we tried was good, and we ended up packing the rest to take home. Was the BBQ good? Absolutely. Was the experience worth the early wake-up call and hours in line? It was a fun, uniquely Texan experience, but one I can probably check off my list! Honestly, I made the trip as much out of respect for Tootsie, the legendary female pitmaster, as I did for the BBQ itself. I think if we had some sauce, it would've been better or if they had fatty brisket. 1/2 rack of Ribs These were good, slightly tender with a bite to it. I prefer my ribs to be a bit more tender where it's almost falling off the bone. The broccoli salad was a great contrast to the meats. Overall, a decent BBQ place. Food was a solid 3/5 but service was 5/5.

There was already a small line snaking outside (thankfully covered from the sun and there were some benches to sit on). Before the restaurant opened, they walked around with menus and took drink orders, and even had water outside for everyone. Once it opened, service was quick and efficient, with guests ordering at the counter and either taking it to go or seating themselves with staff preparing peach paper and napkins as place settings. Food: As our first BBQ joint we've visited in Texas, it set a very high bar for us. The standouts/highlights were definitely the pork belly with the nice peach tea glaze that helped cut the richness and sweetness (one piece each is more than enough), the beef rib with chimichurri that brought some parsley and garlic to the pepper bark and bite, the lengua special that was rich and tender at the same time, and the beef brisket burnt ends that were beautifully marbled and smoked. The rest of our platter was not bad, consisting of sausage with a good snap and the pork ribs and brisket which were tender. The scalloped potatoes were also on the heavier side, and we couldn't finish it, but the zucchini salad was a very nice contrast with the acidity to help us cut the richness of the bbq'd meats. This freed things up for me to be able to try everything. I got the drunken turkey, a pork rib, pork belly, jalapeno popper sausage, and then there brisket. I knew there's no way I was going to be able to finish the food so also didn't get to order any of the signs or desserts this time of around. They're already a good maybe 20 or 30 people in line ahead of me when I got there prior to opening. Everyone looked very excited and wanting to try the food. I am curious if they smoke here or in the Houston location and bring it in for the day. What I found interesting was their BBQ sauces. I normally do not us but it did help the brisket. I am giving 4 stars, but really a 3.5 in my opinion.
