The Tripa needed a little more seasoning but texture was on point with a crispy exterior and soft melt in your mouth interior. The suadero was full of flavor, fatty, chewy, gamey, salty with hints of garlic. The campechano was a combination of delicious flavor with the chorizo shining through with spice and smokiness. On the other hand the beef steak had nice notes from the charr, seasoning and acidity from the lime. The highlight of the day was the alpastor it was probably seasoned, smoky, charred, with hints of spice from the salsas, acidity from the lime and topped off with fresh onion.
