Couple these trends with the current pandemic and no wonder beef demand is way up. I come from generations of cattle ranchers and have an affinity for the art and science of raising good beef. The trend is for some producers to provide meat directly to the consumer. There is a trend to meet the demand this way but,you have to be cautious. My neighbors are friends with this farmer and were sent samples to try in regard to the delivery system and quality of meat. I was given samples by them and did not purchase. But, I was more than happy to accept some steaks and ground beef from them in return for my opinion. I received the meat frozen solid. It looked good and I placed in my freezer. Over the last few weeks I have removed and cooked each piece. The first was a t bone steak. It was cut crooked so as to not be a uniform thickness. Not a big problem but...My main concern was the texture. After cooking the steak, it didn't plump up as I expected and was a little mushy. I made Texas Chili out of the ground beef and was very happy with the way it cooked,little grease and had good flavor. I gave several servings away and got positive feedback on the taste and enjoyment. The final cut was a blade steak. You don't see this cut at the grocery store which is too bad. It's look and texture is similar to a strip but, more flavor. I was really happy with the almost prime grade marbling appearance and powerful flavor. Overall I have to give them credit for providing beef direct. There is a lot of the country where it's hard during this crisis to get out and get good meat These guys send it to your front door!

With large dead animal heads on the wall. There were 2 deer, a doe and a buck. An elk. A bighorn sheep. A Longhorn bovine. And an exotic nilgai. If that doesn't say this is where people like to hunt, while we were viewing the eclipse, we encountered a couple who stopped on the way to their hunting lease. An extra star for the service. The people were nice and helpful. We were kind of demanding and they met all our requests promptly and pleasantly. The food. The steaks had a strong, strange taste. The best I could figure was it was liquid smoke. You're not fooling anyone into thinking you're cooking over a mesquite fire by marinating your steaks in liquid smoke. At least you're not fooling me. Perfectly cooked steaks rendered nearly inedible by the overwhelming, weird flavor. My tablemate's liver was so undercooked it was bloody. I don't think liver is supposed to be served rare. The salad was really good. Other sides were meh. The green beans were canned. French fries looked like they originated frozen out of a bag. The potato skin appetizer was good. The broccoli fresh but mushy - or possibly frozen as well? The cheesecake was good but they served it upside down with the crust on top? The wines were average - drinkable, but I think the wine at Olive Garden is better? I wanted to go to the Mexican restaurant but got overruled by the two guys. I'll hold that I may be wrong about the mesquite, but I did not see or smell any sign of a wood/charcoal fire.

When you walk in, there's a clear line leading up to the register, with menus posted along the way and a large menu board up front, which makes ordering pretty easy. They offer a wide variety of options. The day we went, they had a chopped beef sandwich combo with a drink and a side for around $10, which felt like a solid deal. For my sides, I tried the mashed potatoes, potato salad, creamed corn, and okra. The okra was a standout--fresh, crispy, and really well done. The potato salad was also very good and worth getting. The creamed corn was something I hadn't had before--it included bacon and had a really unique flavor. It might not be for everyone, but I personally couldn't stop eating it, so I'd definitely recommend giving it a try. As for the chopped beef sandwich, it wasn't my favorite. It was a bit dry, even after adding extra barbecue sauce, and I didn't find it especially flavorful. That said, others in my group actually thought it leaned on the sweeter side, so your experience may vary. One thing that really stood out was the service. The staff was super friendly, patient, and happy to answer questions and help with recommendations. Overall, I'd say it's worth stopping by if you're in the area. If you're up for comparing, there's another barbecue spot a few miles down the road--Choke Canyon--that I've also enjoyed, especially for their sandwiches. Makes for a fun side-by-side if you're a BBQ fan.

We were a party of 15 Guests and were there for a gathering of monthly Birthday celebrations of four Corpus Christi area Friends! We were greeted with a smile and seated promptly as an area was reserved for our party of 15. Our Waitress was "Ashley"! She was Very nice, smiled often, was very patient and extremely efficient in wrangling everyone's order. Ashley had a great attitude and was super in every aspect of her job and with everything she did. As with anything in life, her ability to effectively communicate with her Customers was Stellar. She had minor assistance from other servers and for the most part she handled our party by herself and continued to provide service to other large parties in the same room. WOW! She took our orders in a calm and effective manner and remembered all the tiny details that any table could impose on "Wait" Staff. Her poise, superb ability to communicate effectively and a Wonderful attitude made our stay a memorable one. Mistakes NONE! Complaints; some steaks had gristle on them. Really! That was a very minor issue and all agreed that it did not curb our appetite or spoil our celebration. I ordered the Filet mignon, medium rare with steamed broccoli and a baked potato. This was really good, well seasoned and perfectly cooked. My husband ordered the Ribeye and that was very disappointing. It was overcooked and no seasoning. He sent it back and they returned one that was a tiny bit better but not as well seasoned as my Filet Mignon. Thank goodness he had a Caesar salad so that filled him up a little. Our friends had the steak and shrimp and said that was pretty good especially price wise. After everything our server was okay, he did leave us hanging towards the end, ordered a dessert from a different server. Overall it wasn't a terrible experience, we will most likely return.
