It feels like a true family restaurant -- warm, authentic, and welcoming -- but with a level of polish most places never achieve. The service? Exceptional. Real smiles. Real hospitality. You're not just another table. You feel seen and taken care of. Now let's talk about the brisket. Unbelievable. I had to ask how they were doing it, and Mark was more than happy to walk me through his process. When brisket is smoked low and slow -- and they smoke theirs for 20 hours -- here's what happens: * The visible fat cap mostly renders down. * The intramuscular fat melts. * Collagen breaks down into gelatin. * The melted fat soaks deep into the meat fibers. So by the time it hits your plate? You don't see fat. You taste rendered fat and gelatin inside the meat. For $14 all-you-can-eat lunch, I kept waiting for the catch. There isn't one. I probably ate close to a pound and a half of brisket myself and still wanted more. Tender, perfectly seasoned, smoky without being overpowering -- the kind of brisket that makes you stop mid-bite and just nod your head because you know you found something special.
