Wow!! I had one of the best cinnamon roll desserts from Bastion Bakery. The bakery is located at the Grand Central Market. I ended up picking up a few desserts after visiting Eggslut inside the market. Luckily the bakery was opened early when we had visited on a Monday morning around 8:00 A.M! There were plenty of freshly baked desserts such as the following Croissants like butter flavored, Nutella, Almond, and other items like muffins, donuts, ham and cheese croissant, baguettes, sourdough, bagels and more! There are some drinks here too like coffees, espressos, lattes, hot chocolate, tea and a lot of other drinks to choose from! We ended up getting the croissant cinnamon roll which had a lot of cream glaze on top with the cinnamon sugar! It was soo good! I would come back here again just for that dessert! We also had a chance to try out the Chorizo Hand Pie which was scrumptious too! This was one of the best bakeries that we visited during our 3 day downtown LA stay! Short story- the coffee here taste terrible and their syrups are equally bad. Overly sweet syrups, and bitterly pulled espresso shots. Long story - I went to get a latte because my regular place closed down. Order a latte. The card reader wasn't working and then they reset it. When they did, the customer side of the screen wasn't working. So I couldn't see a tip screen and I told them. So they said oh well. So I left. Later noticed they added a tip themselves, as there was no way I could have. Also, would have been nice if the people working there were pleasant to speak to, instead of inconvenienced for having to *check notes* make coffee drinks at a cafe that they work at. read more

They serve baked goods along the likes of trending spiral croissants, breads, danishes, gluten-free donuts, and hot/cold coffee. I was perfunctorily greeted by a female staff. I had a Cold Brew w/ 1/2. And it was just simply decent albeit a bit too milky in appearance. I made adjusted to its sweetness (Splenda) on my own. Prices seem fair. Staff was competent and nice. Was craving something sweet after having lunch and walked by this spot at the market. Their chocolate chip walnut cookie caught my eye and I immediately needed to try it. The cookie had the perfect texture--nice and crispy exterior and soft and gooey in the middle. Not overly sweet and a good amount of walnut pieces inside topped with a sprinkle of sea salt. A good croissant is supposed to be flaky on the outside and fluffy inside with some layering. Most of all, the croissant should taste buttery. I was very disappointed by the pistachio croissant I bought from Bastion. The croissant either used the wrong flour or wasn't given enough time for the dough to rise. In any case, I feel like the pistachio croissant from Bastion tasted more like a flat, dry American white bread disguised as a croissant than an authentic croissant. It looks like the croissant is a plain croissant made to taste more like bread, then cut in half and spread with a thin layer of pistachio spread (see the photo). read more

Located directly next to an Agua Fresca stand and next egg slut, Sebastian is a wonderful find directly off the Broadway entrance to GCM. The seating at the market is always shared. Every single time I visit the Grand Central Market this is one of the first stands I see and I have been wanting to stop here since forever! No decaf found here! But that's okay, you can get a nice iced chai matcha drink called Pirates Chai- really unique and tasty. The pastries are sweet and large too. Not the best I've found in LA but a filling option when you find yourself in this ginormous food hall in need of a morning munch or a mid-afternoon pick me up! The Kouign Aman would be my choice for pastry over the guava croissant (verrrry sweet - similar feel to a Cuban pastelito you would get in Miami!) and the round pistachio pastry (subtle, but not much of the creamy center filling). I was so excited to not only try the viral circular croissant because they're so pretty and fun, but also to have the vibrant pistachio in both color and flavor. Such a cute lil bakery inside of Grand Central Market! I was surprised with all the pastry options. I tried the pistachio BK bun, and it was so yummy! I loved the pistachio cream filling and the texture that the actual pistachio pieces provided. It was the perfect amount of sweetness and surprisingly easy/not messy to eat. This is a newish place in the Grand Central Market, located by Eggslut and its baked goods competitor, Fat and Flour. They have an attractive display case and sells pastries, danish, croissants both sweet and savory as well as breads (bolillos and baguettes). I got the kouign-amann ($6.50), stone fruit crostata ($6.50) and raspberry danish ($7.50). All were quite good but on the pricey side. I would rate Republique's offerings higher, and I think slightly less costly with more variety. I'd like to try the French pastries and baguette in the future. read more

1) Food: My 2nd time at Bastion. Don't quite remember the first experience but remember it being not bad. This time I feel like the experience/quality slightly dropped? I noticed the pricing is on the higher end. Sure 6.75 for a crossiant and $12 for a focaccia tomato (small-medium pie size) is nowhere the highest in LA area but it's not average pricing (other bakeries have it at $3-5 for crossiants). I got the guava crossiant and appreciate the uniqueness + nod to perhaps Porto's guava cheese pastry as this one has guava jam in the middle and cheese on the end. But I would feel the price would be more justified if it tasted higher quality and fresh. The guava jam tasted more artificial/color-dyed than fresh/fruity (almost like what you would get in a typical jam donut). I went around 3:30 pm on a Sunday so understand it is later in the day, but the crossiant really did not hold its freshness by that time. It was dry and stale tasting. By 3:30pm there was barely anything left, I got the last crossiant. 2) Service: the other aspect that probably didn't leave a great impression was this time, there were 2 staff members but instead of greeting me after I arrived or even while I stood there for a while (I was the only customer and understand they maybe were trying to just give me time to decide, but still a greeting/acknowledgment would have been welcome), they just kept chatting amongst themselves. Even when I was ready to order, they just asked me is that all and rang me up, no greeting or anything. The first time I went a few years ago, it was just one young guy and he was quite friendly. 3) The parking can be quite atrocious as it's DTLA and in the Grand Central Market, busy area of DTLA. Thankfullly on a Sunday, there is a lot of yellow (loading zone) which is ok to park Sundays (and especially for quick stops). read more

Inside the Grand Central Market (right next to Egg Slut) is a lovely display of French baked goods and pastries. They have croissants and croissant rolls (labeled "buns") in a variety of flavors. I tried the pistachio bun. It has pistachio custard and a bit of pistachio paste inside--just wonderful for pistachio lovers. Also picked up a Kouign-amann that had a shatteringly crispy caramel jacket surrounding buttery laminated dough. They also sell whole loaves of bread that I will have to try another time. Two words: Pistachio crossaint. This was the standout among our bakery picks and it was sooooo yummy for all my pistachio enthusiasts out there. I am sucker for a pastry, especially, especially, as once a month pick-me-up. Fortunate to have enjoyed Carlos Enriquez's Pastries during his time at Superba Food + Bread it is great news that the Chef took over Clark Street's old space at Grand Central Market, all his goods from Bakers Kneaded now available in one space under the label Bastion. Known for "organic Whole Grain Breads and Pastries made with California sourced and grown ingredients," Carlos' upbringing as the son of Southern California bakers followed by stints in Las Vegas and LA, guests can opt for sweet or savory across everything from Polenta Loaf to Viennoiseries. Priced on par to the rest of Los Angeles' artisans, $6.50 Croissants and $9 BK Buns surely raising some eyebrows, suffice it to say Bastion's Kouign Amann rivals any found outside San Francisco stateside while a simple Chocolate Chip Cookie showed off excellent texture from crisp rim to soft interior. Less sold on the Apple Pie-filled Pastry, its flavors pleasant but the lamination compromised, Enriquez's Croissants continue the high standard previously witnessed in El Segundo whether filled with ground Almonds or Cream and Pistachios. read more

Whoever this dude was working there today, Sat, April 26th at 5pm was rude af. I waited there for at least a minute, maybe even 2 .He did half a turn, saw me, didn't say hello, or I'll be right w you, nothing. BASTION BAKERY is located inside Downtown LA's Grand Central Market and it is in good company. The line to order is pretty short. the "front" is a tiny bit chaotic because it is crowded because the line for Eggslut winds in front of this bakery... and people still need to walk through to get to the other stalls. Because of this tiny bit of disorder, some people might accidentally (or not) cut in front of you and the workers won't be able to help you because it is hard to see. Ordered the following and they were all very good.
