Solid Texas-style barbeque and nearby the base! Wide menu and variety of meats. Awesome daily specials. Beer available. We've gone to Bare Bones several times for dinner and have not been disappointed. Had the two meat plate one time and (when not as hungry) the loaded baked potato on the other. My favorites so far are the pork ribs and the moist brisket. Military discount so that always brings a smile! Had a slice of their chocolate cream pie that satisfied my sweet tooth. Someplace to repeat and recommend to anyone in and around Gatesville/North Fort Hood! read more

First stop in a non chain BBQ place in Texas. Authentic, rustic interior. Inside temp, not too hot, not too cold. Service and wait staff 5 plus stars Reminder: My 3 star rating is average. Forgot everything is bigger in Texas. Ordered a three meat combo plate. Pork ribs - 4 star Lean brisket - 3 star, I would try the Moist brisket next time. Turkey - the big winner! 5 star*****, moist, flavorful. Will have again for sure! Other input from the table: Pulled pork - 4 star, sweet and yummy. Chopped BBQ - 4 star, would prefer it on a sandwich next time *white bread was available for all of us. Sides: Corn on the cob - 2.5 stars, a little over done for me, most restaurants over cook corn for my liking and we were there 30 min before close. French fries - 4 star, thin cut seasoned great! Will have again. Mac and cheese - one person at table loved it, one said it was ok. It is on the saucy side like an Alfredo. Desserts - Pecan cobbler - 3 star, was good, probably would have been better warm with ice cream, but we had to take it to go. They offered to send ice cream home with us but we had stops on the way home. They have a drive thru, you can buy meat by the pound, they offer a military discount and deliver to North Fort Hood. Overall 4 star**** If your in the area or you have to travel a little I definitely recommend. read more

We were checking the towns around for some BBQ and most were either closed down or were not open for dinner - on a Saturday night of all things. I found Bare Bones BBQ in here and it had good reviews. It was twice as far as the other towns but we wanted BBQ. Glad we came here. The atmosphere is great - like a good ol' Texas BBQ joint. Everyone was happy with their meals - brisket, ribs, and sausage. I got the juicy brisket. It has some fat on it. My dad got the lean which is trimmed. Mine was good but if you don't like a little fat you'd better go with the lean. Jalapeño sausage was good - a little spicy. They also have mild. Save room for dessert if you can - or get it to go. The pecan cobbler is really good. Also had peach cobbler. We met some soldiers from Alabama national guard. They said Bare Bones was one of the few BBQ places that serves beer - so that's where they came. Lol Overall a really good BBQ joint. We will come back. read more

Great service here friendly service from Savanna! Ice cold beer mug, awesome okra , French fries the best, Sausage varieties were all great. Mom and sis loved the chicken fried with the gravy. One star less because the brisket was a bit dry. read more

$13.00 for a pulled pork SANDWICH, cole slaw and pinto beans!!! For lunch?....$15 after tip!! I'm on a per diem, but the pulled pork was..meh...and dumped on a store bought bun. Slaw was...meh...and lacking anything that made it special. Beans.... if these didn't come from a can, the cook needs to be retrained. Service was pleasant and atentive, but that cannot make up for passion less, overpriced BBQ. Not excited to be dragged back to this place. read more

The worst part about this place is that they are closed on Monday. The days they are open you can't go wrong by ordering from them. They deliver and they deliver a great Brisket on a Burger. It's a team favorite and is a must for each trip to the area. read more

Even though I read the reviews I was surprised at how good this place is! We have been to several BBQ joints, most of which have been chains. This is the first BBQ place that was actually worth the price!! The food is excellent! We had the meat platter which gives you the choice of one, two or three different types meat with your choice of two sides. We each had the three meat platter and we both chose pulled pork, moist brisket and ribs. Our sides were French fries and potato salad. The pulled pork had so much flavor and the brisket was actually moist, which seems to be very hard for other places to get right, and the ribs were cooked perfectly! The potato salad was homemade and so were the fries. How can you go wrong with that!! The interior is super cool! It was a mix of country and Americana, very down home!! If you get the chance to come here you totally should!! You won't be disappointed!! read more

Prices have gone up like everywhere else but the BBQ has remained consistently good. Brisket has a nice smoke ring, sufficient bark and melts in your mouth. The jalapeño sausage is the best in town. Try the macaroni and cheese, it's delicious! read more

The hill county of Texas has some great barbecue, this place is not one of them. This is the worst barbecue I have ever had. I ordered 2 rib baskets one with fries and Mac and cheese, the other with fries and green beans. I got no fries at all. The ribs had no smoke flavor, were extremely tough and were so salty they were inedible. My wife's Mac was horrible. The green beans were ok. I literally threw the food away. Do yourself a favor and go to Mac Donald's. read more

3.5. Your quality option in the Gatesville area. Sausage (crispy outside and flavorful inside - we had the mild variety and I can recommend that) and turkey (great smoked flavor) are the standouts. Moist brisket is also good. Pulled pork and ribs are perfectly fine, but nothing special. Fried green beans wore worthy; the other green beans were less so. Cole slaw was uninspired. read more

I love this place. The brisket is amazing! Really nice staff that goes out of their way to answer questions and help you choose if you're not sure what to order. Plenty of space between tables and the atmosphere is awesome! read more

I know it's a BBQ joint, but any "cook" should know how to cook a cheeseburger. First bite was good, everything after that was just-cooked beef and at least a tablespoon of salt. I couldn't finish it. I think the extra salt was meant for the fries that I ordered but did not receive. We shall write it off as COVID related miscommunication. Better luck next time. Their door says they close at 9pm on Saturdays. Facebook says their already closed. read more

Excellent food and service was great. Best BBQ I have had in a while. Super tender chopped beef, excellent fries and corn on the cob.

Food is great but main reason for the 5 stars is the customer service I experienced. I came on a day where at least 25 members of military from Fort Hood came for lunch and owner gave them their meals for free as a thank you for their service. What an amazing gesture by the owner. So proud that I live in a community that shows that kind of support for our soldiers. read more

Excellent ribs and sausage. Fast and courteous service. Well stop again when passing through.

Got the brisket meat plate. Meat was bland with no bark. Had to drown it in their bbq sauce just to get some taste. Coleslaw was dry and bland as well. Okra was at least good. Probably wont be back again. Really disappointed cause i see it every day when i go to work. read more

Food is good but has to be the slowest drive thru in town. If someone is at the window when you get there you might as well turn around unless you like long waits. read more

Bare Bone BBQ is a family ran business. They have great customer service, and you're welcomed right as you walk in the door. It has a nice homey charm to it, if you decide to dine in. They have a drive thru, if you're on the go, as well. The food was great. The prices were good for the amount of food you get. The meat was fresh and moist. I got a 3 meat combo with sausage, ribs and moist brisket. The ribs fell right off the bone. The Mac n cheese was okay, but not the best. The green beans were good; I think they were canned though lol. I would absolutely recommend this place if you're looking for good BBQ! read more

I really had heard good things and really wanted to like it. The BBQ smelled really good in the bag but now after trying to eat, it was possibly the worst barbecue I have ever had in my life. The 4 of us agreed. I have eaten BBQ at some of the best places in Texas. This did not even come close. The only thing palatable was the beans. The brisket was so salty I couldn't even eat it. The pork ribs stuck to the bone and were chewy, not something that you want because falling off the bone ribs is the standard. I ordered a family pack, an extra side and an extra half-pound of brisket and an extra half-pound of ribs, so needless to say I spent $70 and had to throw everything away. Gallon of tea, pickles and onions were missing. What is it about Gatesville area that has no one working for them that can cook? Probably payscale. I love good food. Every place I get food from, dine in or carry out here something is always wrong. This is not a Karen exaggeration. I am not rich and 70 bux is hard to part with when you have to discard the entire order. Missing items, cold or undercooked food seems to be the way people here just accept is okay. All I can say is WOW. The grocery store will be my go to. Hello HEB Curbside. read more

Went here for dinner with some of my military buddies after returning from a nine month deployment. I ordered the 2 meat combo with beans and potato salad. Had ribs and brisket. Some of the best ribs ever. Very tender and juicy. No wonder why my buddies were craving this place! read more

Bare Bones BBQ - 2 meat combo. Ribs and brisket. - Barbeque Near Me - Gatesville, Texas

This is what happens when you leave kids in charge of running your restaurant. We went at 5:00 and there was no management or anyone over the age of 25 in sight. We ordered a LEAN brisket sandwich and french fries. We sat at a table that had dirty dishes left from a previous customer. The person who brought our food just dropped it off and didn't even attempt to bus or clean the table. Someone EVENTUALLY took the dirty dishes away The french fries on top were warm, but the ones underneath were stone cold. We told the waitress about the cold fries and she said she would notify the kitchen. She came back and said their response was "SORRY ABOUT THAT", and she walked away. The LEAN brisket we ordered was FATTY, and the edge of the bun was so dry and hard, it was CRUNCHY. These senior citizens will NEVER be back. read more

I really wanted to love this place. The reviews were great, but my experience was not so great. First, the menu on the wall gives absolutely no info about the dishes, and the staff taking our orders had no idea about the menu. I asked what came on the chicken sandwich, and the description was in no way accurate. Same with the appetizer sampler - wrong description so we did not get what we thought we ordered. Additionally, the appetizer came a few minutes after the entree, and it was not good (we didn't eat the majority of it). My husband ordered brisket (chewy) and sausage (fine) with sweet potato fries (thin and crispy and yummy). Overall, it was ok. Nothing bad, but we didn't eat the majority of the food, and we won't return. read more

I ordered nearly $100 of sausage and Turkey for a family get together on Saturday and the sausage had an off taste like it was going bad. No one finished their sausage and commented on the taste. (The turkey was good) I called Bare Bones to ask about it and was told the manager would get back to me. Today is Thursday! This is the second less than satisfying experience with this restaurant so I won't be back. Very expensive dog food. KF read more

I won't say this is the best 'cue I've ever had, but it is damn good. The pulled pork is tender and delicious with only a little bit of smoke. While the moist brisket is (obviously) juicier than the lean, the lean is still plenty soft and tender. While I'm not a fan of barbecue chicken, it is not too bad and would probably be considered excellent by those who are. Their sausages are also top quality and worth the cost. While no one should ever go to a barbecue joint for sides, theirs are pretty good. It's also nice that there are a variety of sauces styles to choose from. If you're in the area, I would highly recommend you take the time to stop in and grab a plate. read more

Good, but not my favorite by far. I've had BBQ all across Texas and can usually find something unique at each one location across the state for unique tastes while traveling. Can't say this one will make my "have to stop" while going by list. Folks were very nice, but not my favorite BBQ. read more

Don't get me wrong the food is great but the service sucks. Every time I order they deliver something completely different from what I paid for. Today I ordered 1/2 pound of pulled pork and didn't get it. Friends didn't get their corn or ribs. Like I get it if this was a one time occasion but this has happened 3 times now. We paid a great good penny for this food so it would have been nice to actually get it. It's a shame. read more

The staff is welcoming and very hospitable. I ordered the moist brisket, pork ribs, mac n cheese, and fries. Everything was seasoned very well and tasted amazing. The meat on the ribs fell right off the bones. The mac n cheese was light but very flavorful. I would definitely recommend this restaurant to anyone who is looking for great BBQ in Texas. read more

The food and customer service were good. I had the beef brisket sliders with green beans and potato salad. It was my grannas potato salad, but it was good. I give them that. The green beans weren't that great but overall pretty darn tasting meal. read more

The waitstaff is great and very personable. I have eaten here once and had carryout a few times but am not impressed with the food. Brisket tastes like it has been cooked in an electrical fire and the chopped sandwich tastes like it came from a grocery store premade bucket.
