Well today was indeed next time; I wish it was life changing kind of amazing but what I got was just okay. Like all BBQ legends the best places are started by people with passion for BBQ in a small trailer with a dream. Marshalls Comeback BBQ is in a tiny trailer just off the road, the people there seem quite nice and greeted me with a smile. I asked what was good and the lady told me the ribs, so I asked for a half a rack of ribs, and a baked potato with just sour cream, butter and cheese. What I got smelled nice in the car but when I got home to open the box the big heavy box was a potato, and the light almost empty feeling box was the half rack of ribs. Total cost was $21, in today's day and age of McDdonalds meals coasting $12 I didn't baulk at the price at all. That said opening the box to find what's really 3 ribs, and a huge potatoe swimming in BBQ sauce I couldn't help but be a little bummed. Turns out I actual kinda liked the baked potato but that's only when compared to the ribs. With a Texas Monthly top 50 restaurant only 40 min from home in Belton I have become spoiled with what I think is amazing BBQ. The ribs are a few levels below what I am willing to pay for, so sadly I don't think I will be in the biggest of hurry's to go back to Marshall's Comeback BBQ, I hope and pray I just caught them on a bad day. 2.5 stars is my review, and that cause they were really nice, and I ended up kind of liking the baked potato that was made wrong.

Hence the amount of time it takes to get it right. This place is run by some of the nicest people I have ever met. There is nothing pretentious about this place (which makes me really happy) and the servings are hefty... and the price is right. I ordered a plate that came with one meat, two sides (potato salad and cole slaw) and a bottled sweet tea for $16.24 before tip. Oh! Obligatory white bread - two slices.. not just one. The ribs were great. Not necessarily fall off the bone... but nicely cooked with great smokey flavor. Potato salad was very close to some of the German potato salad I have had overseas. (But with the name, I can see why). Cole slaw was also good - not too vinegary and not too sweet. This is a really great value. Now, this spot is in between two bars. It has a walk up window and a nice area to eat outside next to it. They do take card and not just cash. There appears to be a port-a-potty for usage. But if you're "thirsty thirsty" for a nice ice cold adult beverage, I recommend you go to the bar to the left with the Marine Corps flag flying and not to the right with all the biker parking. And all the staff seemed very polite ......seems to be very supportive of the military! as for the not so good.....certainly not worth the drive out....the sides were a hit or miss.... Potato salad tasted like it was out of a container, Mac and cheese was a little bland and watery...pinto beans had absolutely no flavor and had large red kidney beans mixed in...the smoked chicken, sausage and rib had little flavor.... Definitely needed the sauce to give it any flavor.... The thing that bothered me most about this place was what I observed with another family who had what looked to be a 3 year old who was completely passed Out in his mothers arms .... She asked to sit in one of the many open booths presumably so she could allow her son to lay next to her and rest his head on her lap while he slept.....She was told she could not sit in any of those booths because it was not that servers turn to get a table....
