Usually there isn't even a line when I walk in, but somehow one magically forms right after I order (I don't know what that means, but I respect it). The workers are always so kind, and I really love how beautifully everything is presented it's almost too pretty to eat, almost. And if I'm feeling extra indulgent, I'll add their hand rolls too, because self control is clearly not part of the experience here. Seating was a plenty, so we were not worried about that. Shoyu Ramen: This was alright. The price for Vegas was fair, and the soup had all the fixings I expected in ramen. The noodles were good and the broth was great. I didn't pay attention most to my protein and my vegetables were delicious as well. Overall, an ok meal. Salmon Roll: This was tricky to eat since they wrapped it in plastic and when you remove the plastic, the seaweed follows it. You have to re roll it to get the hand roll. We found a spot upstairs in Fountaine Bleu for a quick lunch before exploring Sin City! Hmm Cold eggplant over a small mound of rice? I'm not entirely sold on this. I'd prefer having both the food warm. The eggplant had a nice flavor, but I was hoping for a bit more rice. I managed to finish it, though! I wrote a glowing review of Bar Ito 2 years ago, and while I still enjoyed the 3 rolls I ate today (6/6/26), I couldn't help but feel the effect of shrinkflation. Yes, the salmon, hamachi, and fatty tuna rolls were still of a nice quality and freshness, but I was still feeling peckish after finishing, and I definitely don't remember feeling that way last time. One positive though, I was asked whether I was eating here or taking my order to go, and when I confirmed I was eating it in the food court, they gave me a tray without all the extra packaging. The packaging was amazing and great at keeping the seaweed nice and crispy but seemed like a waste of paper, so I thought that made sense. The only thing I'd note is that the new "sleeve" that each roll is delivered in seems to be a little different from before in that it allowed more of the seaweed to touch the rice, which detracted a little from the crispiness of the roll exterior. I'd be curious to know if the sleeve is any different for a takeout order, so might try doing takeout next time. read more

Such culinary craftsmanship belongs in an environment that complements its sophistication. The Eggplant and Salmon Don were very pleasingly presented in a bamboo bowls perfectly seasoned. Very high quality sushi in a fast casual atmosphere. Located in the food hall where there's a lot of seats and they're also comfortable, some even have views of the colorful casino. Five rolls will run you $50 and I think that's fair considering the quality, taste, and size. These are definitely on the hefty side. Fish tasted phenomenal and everything just melts in your mouth. My only issue is paying $7 for any beverage whether that's soda or water. That is just crazy and unnecessary. Next time I'm brining my own water bottle. read more

It's located inside the promenade food hall, lots of dining areas if you want to dine in, and it's also available for takeout. We ordered 3 things, the wagyu don, sake don and miso soup. Miso soup: good, warm, savory, hard to go wrong. A bit on the pricier side though in my opinion. Wagyu don: the photos of the Wagyu don were a bit underwhelming so i almost didn't get it. But I'm glad I did. The meat was nice and fatty, as expected of Wagyu. The rice was nicely seasoned and the crunch and freshness of the lettuce does well to offset the heaviness of the rest of the dish. Sake don: the salmon was fresh and I enjoyed the pickled cucumbers. The rice was also nicely seasoned in this dish and went well with the saltiness of the ikura. Portion sizes are a bit small (only 4 slices of salmon in the sake don). But overall, it tastes good and the employee that handed me the food was really pleasant. read more

Superb temaki hand rolls in the food court at the Fontainebleau hotel, where I'm staying this week while in Las Vegas for a conference. I ordered the 3 rolls for $33 meal - and chose the Salmon, Spicy Scallop, and Roast Shiitake. I watched from a respectable distance as the chef made my rolls, and they were then served in an elegant box with a magnetic lid. Opening the box and assembling the three temaki rolls was very enjoyable. I tried the Spicy Scallop first, then the Roast Shiitake, and finally the Salmon. The spicy scallop had a nice kick to it - it didn't need any wasabi and just a bit of soy! After cleansing my palate with some sliced pickled ginger, I tried the Roast Shiitake. This was surprisingly good - it included sweet soy and crispy shallot which gave it flavor and texture and took it to the next level. A little more palate cleansing and I was on to my final roll, the salmon with avocado - both as fresh as can be. I expected to like this and I did, but it didn't surprise me like the shiitake mushroom roll. Will be back for more! read more

This place is located upstairs inside the food court & hence, hubby & I had no high expectations. Price of the handroll was expensive too. However, it was well worth it as we were both blown away with the quality & taste of each handroll. We shared a 5 piece handroll (toro, salmon, spicy scallop, spicy tuna, & yellowtail) & we also had the salmon bowl. Fish quality was top notch & rice to fish ratio in the handroll were perfectly portioned. I loved the crunch & crisp of the seaweed. Every bite including the salmon rice bowl was delicious & satisfying. You could probably pass on the soy sauce & eat the handroll on its own or just put a light dab of soy sauce. I cleaned my palate with ginger in between each hand roll to get the full flavor of each fish. I'm glad we randomly found this place! At each table you can scan the QR code and order from any of the food court locations, and then pick up your order once it's ready. The food was ready promptly after ordering even during a busy time around 515pm on a Friday night. I only spoke to the worker that was calling out the ready orders. She was kind and helpful. I ordered a 3 piece for $33 for my husband, a 5 piece for $50 for myself, and the Wagyu bowl for $22. For the 3 piece he chose hamachi, lobster, and spicy scallop. For the 5 piece I chose hamachi, king salmon, lobster, spicy scallop, and toro. I don't think they had limitations or rules that you could only order one of each flavor, so I think this could be okay to do. I wanted to try as many as I could. For the hand rolls themselves -- 5 stars. They were packed with a lot of meat, and a thin layer of rice. The fish was fresh. The spicy scallop definitely had a spicy kick to it, but was very enjoyable - I love spice. Since the food court is pick up only, they were served in these beautiful green boxes. The 3 piece set and the 5 piece set came in their own boxes. The seaweed in each roll is partially covered with a plastic film so that the seaweed of the hand roll is still fresh when you eat them, since the seaweed could lose the crisp texture once it's exposed to the rice layer. So if you wanted to take the box back to your hotel room or eat the hand rolls elsewhere, you absolutely could and it would be fresh. Inside the box was also chopsticks, a moist towelette, soy sauce, ginger, and wasabi. I can forgive the cost of each hand roll set considering how filled each hand roll was, as well as the thoughtful to-go box. What I was not a fan of is the Wagyu bowl. It was so tiny. The slices of Wagyu meat were sliced into little slivers, in comparison to the picture in the menu. The bowl itself was so tiny, and absolutely not filling by itself for the cost. If you only order the Wagyu bowl you will surely be disappointed. The flavor of the meat was alright, and the rice was good. But not worth the cost at all. Another kicker was the $7 cost for the drink. I ordered a green tea bottle. All of the other drinks available were around the same price. read more

I enjoyed the Toro Roll and King Salmon Roll the most; the Spicy Tuna Roll and Hamachi Roll were also fantastic. The Lobster Roll was my least favorite considering how mayo-forward it was. It completely overpowered the lobster and I barely got any yuzu essence. I would suggest swapping that with the Spicy Scallop or another option. I got the 5 roll combo : spicy tuna, spicy scallop, lobster, hamachi and toro. I've gotten all these rolls at sushi restaurants all over NYC and I've never had such a spicy tuna roll. I was able to eat the spicy scallop, although that was pretty hard. But by the time i got to the spicy tuna i had enough and it didn't taste very fresh. I was getting on a flight so i didn't want to chance it. The toro, hamachi and lobster were all pretty decent. But $50 for 5 basic rolls, not so much. That size smart water was the only one available, nothing smaller. The packaging is nice but incredibly wasteful. You just throw out the whole box. There are other food stalls there, such as Mexican, burgers, and Italian. It's convenient and easy. I went on a Thursday at 7pm because it closes at 8pm and it was very empty. Had to go all the way back to Chez Bon to get hot tea cause the Bagel place closes early! Why not sell hot tea at a Japanese place? Maybe not as authentic after all.
