In the past, I have described eating cilantro as biting down on a piece of tinfoil, a sensation that says "run for your life!" overtime my reaction to cilantro has mellowed, and I don't really understand why. But? I ate every bit of that house sauce. I'm so glad I tried it, and tried it with the eggs, Benedict, because it added a perfect level acidity to cut through that richness, and really elevated the dish.
