This place was our saving grace during the blackout that happened on Wednesday night on the island. The delivery situation is not like what you'd expect in LA. So you have to prepare to order about 3 hours in advance. We found ordering around 1:30pm was the perfect time to get food delivered before everything closed. We've learned that the whole island goes to sleep around 9pm but for delivery it is sooner than that. Our 1:30pm order gave us the perfect delivery time for a sound dinner delivery experience and in this case the black out situation that nobody anticipated. Well we waited too late to get a restaurant reservation so we decided to hit some food trucks and we are glad we did. We had the grilled fish tacos and Baja style fish tacos(fried) and a side of chips and salsa. The tacos came on doubled white corn tortillas loaded with cabbage, fish and sauce. The food is ok.. but certainly nothing to write home about. We got steak tacos, Al pastor tacos, a beef burrito and a chicken burrito. The steak might be microwaved.... Seriously. It's that bad. The Al pastor was midsy. The burritos were ok. The quality of the food does not match the price. Not even close. The service was fast and there are picnic tables to sit at while you wait or to dine in if you choose. If I could give Baja Chalupa more than five stars, I absolutely would! This food truck is a hidden gem in Old Town Koloa, and it completely changed my view on food trucks. Our group ordered a veggie burrito, a grilled fish burrito, and two shrimp burritos--each one was flavorful, fresh, and hot! The homemade chips and guacamole were next-level delicious; honestly, some of the best guac I've ever had. The young man (Brenden I think) and woman running the truck tonight made our experience even better. They were so friendly, engaging, and provided outstanding customer service. Our food came out quickly, and everything was spot-on, which is saying a lot because my past food truck experiences elsewhere have been disappointing (order mix-ups, long waits, or being out of the item I wanted most). Baja Chalupa has me rethinking my entire opinion of food trucks! It seems like Hawaiian food trucks are a whole different caliber, offering incredible service and mouthwatering food. They have the best California burrito there, i've been craving it since the first time i tried theirs so i went back today. All three times i've been there there's only one guy working, cooking, taking phone/in person orders, and running the register. he's a sweet older gentleman & i told him how great the Cali burrito was & he had such a kind smile. Getting the lay of the land with food trucks in Koloa I noticed a sign on the Baja Chalupa's truck "the best fish tacos on the island". Of course I had to try them. I can't say they were the best on the island, but the fish tacos were one of the best I have had. Pretty simple with fish and shredded cabbage with a creama but gosh was it good. It was a big piece of fish in the taco which was very tasty. We ate there twice during our stay on the island. They show only 2 taco meals on their menu but my wife only wanted 1 taco and they were able to easily accomodate her request. We asked what type of fish was in the taco, they told us it was marlin. The only critique I would have is that I would have liked it a bit more spicy. But I took care of that the second time we ate there when I noticed the small salsa bar at the window. Got some of the red salsa to go with our tacos. A word of caution, the red salsa was very spicy, but mixed with the crema it hit the spot for me. read more

Best fish tacos on the island? Came here Tuesday at 545pm to the trio of food trucks: Monster sushi, Craving thai and Chalupas. Been here several times before, but first time that Chalupas been open. Order and pay in advance. Cash only. Took 20 minutes for my order to be ready. And I had to go up to the counter to inquire after the person after me got her order. The $12.95 blackened fish tacos came with two tacos each with two layers of corn tortillas. Someone mentioned that the fish tacos were huge. The tacos were huge but the fish fillet inside them was maybe 1.5 ounces. The fish fillet was buried under a mountain of shredded raw cabbage, which made up 75% of the taco. By comparison Rubios tacos has three ounce fish fillets. The blackened fish tacos were on the bland side, a bit dried out, and what flavor they did have overwhelmed by the spicy orange aioli sauce. Would order the regular fish tacos next time. The $12.95 carne asada came with two double sided fried pork tacos. Pork was cut into strips and spread out, covering up the modest portion size. Came with raw chopped onions and a large helping of guacamole, which was a deal maker. Could not taste the pineapple in the pork taco. Would I come again? Yes, but only if I didn't get soaked by a 5 minute tropical downpour with 20 mph winds drenching me, outdoor tables and chairs, rain umbrellas not withstanding. read more

Lucky little find for my husband as I was wanting sushi and there happened to be 3 food trucks lined up. He did fish tacos and they were literally out of this world. The rice, tortilla, hot sauce, and flaky fish paired so perfectly together. However for 15 dollars a plate and only for two mini tacos, I don't know if I could say it's truly worth it. I had the fried fish tacos with rice and beans. The portion of fish they give you is huge! Probably double what I've gotten elsewhere, and I eat a lot of fish tacos. This can be a good and bad thing. The fish was good. A little dry, but good. I loved the sauce on there, but the problem I had was I felt like I was just eating fish and not much else. I wish they would have divided it up into 3-4 tacos so you can taste more of the sauces with it. I wanted something else with it too. Some of my favorite places have had the option of adding raw onions or mango. So overall they were good but not great. My sister had the veggie burrito and loved it. read more

While I can't speak for everything on the menu here, I can say to avoid the shrimp or beer battered tacos. The shrimp didn't seem fresh and the beer battered fish was soggy. We also ordered the chicken tostadas and we found hair in it. Disappointed since all the other food trucks around were amazing. Avoid this place, there are much better options. read more

Had someone tell us these were the best fish tacos on the island. They are the first ones we've tried, but I sure hope these are not the best. They were good, but not great. The toppings they put on the taco, and the sauce, are very good. But the fish was pretty average. Also had an order of chips n salsa, and a side of rice. Nothing stood out here either. His family moved from Baja CA and you can taste that history in the flavors of his food. Super friendly service, We tried the fish tacos and loved them from the first bite. A nice piece of fish in each double tortilla, crispy fresh shredded cabbage and a pair of sauces or cremas. Hot sauce was available but not needed for our tastes. I didn't even get my request out of my mouth before I was answered with complete rudeness. I wanted a bean and cheese burrito with green sauce. He said he wouldn't make kids food for an adult. When I mentioned that they didn't have a b and c burrito on the other menu, he said he'd make me one. I asked again for green salsa. There isn't any in my burrito and they don't know how to wrap a burrito. As a Mexican myself, that's one of the first things you learn as a kid: how to properly wrap a burrito. When you're in the customer service industry, you shouldn't be mean when someone asks you for a fork either. Beans are flavorless. read more

Mine were ok but spicier hot than I thought they'd be and had too many raw onions on them, left me tasting raw onions after I finished. My wife's tacos came with barely braised vegetables, peppers, onions, and cabbage. We took hers back to the condo and sautéed the vegetables and then the tacos were good. Oh wow, this is the best Mexican we've had on the island hands-down. We have been coming to Kauai for years, and I had not found Mexican food here that I liked until trying Chalupa's. I got the fish tacos made with ono. The tacos were huge and the ono was SO FRESH! Better tasting ono than some of the fancier restaurants here. My husband got the seafood burrito and it was fantastic. They seasoned everything perfectly. Prices are really reasonable, too. Make sure to stop at this food truck when you're on Kauai!
