We always love starting with the Papa a la Huancaina, and our daughter absolutely loves the Tallarín Saltado, which is a delicious steak and noodle dish. I had the Lomo Saltado this time, and it did not disappoint. Everything is always so flavorful and comforting. I tried the Maracuya Cocktail and it was perfection The service and ambiance is top-notch every time we come, which makes the experience even better. So it's not fair, I know, but I also won't knowingly just give away 5 stars when I've had so much better. True to Peruvian food is the various potatoes used in the dishes. Also a must get is the quinoa pancake. So subtly flavored and wonderful texture. Served fresh and hot off the skillet/griddle. The Lomo Saltado sadly can't compare to what we had locally. It's like this: if you want similar kind of beef, you can get a filet style stir fry at any Chinese restaurants. If you crave fries, you can get in any American food joints. There's nothing special holding these ingredients together. Service is exactly what you would expect from a family owned business: warm, friendly and down to earth. You can see how much pride they have based on just the decor and it is very nostalgic.

Also, they have a sizable outdoor bar outside, which is an interesting element. I would highly recommend getting outside and grabbing a drink or dinner there. Portions: The sides are sizable. We definitely underestimated how large the sides were going to be as a group. We should have gotten half of the sides because they were so plentiful. The main entree portions are pretty standard. So, be aware and ask more questions before ordering appetizers and sides. Half-Chicken: The half chicken was great. Tender, easy to cut, and had a unique flavoring. I would recommend it. It came with a salad which was light and airy. Nothing special or sizable. The meal is built around the chicken and is 90-93% chicken. The coolest part of the presentation is the skillet it comes out on. The skillet is sad inside a sizeable block of wood which gives the meal a substantial "cool" factor. Pro Tip: Make a reservation on Open Table. This place can get busy, so be sure to take the time to make a reservation. Pro Tip: The staff is very nice and accommodating. We had the standard 10-person party that 10 minutes before show time became a 4-person party because people flaked. They were very nice and understanding and sat the four who showed up on time at their table with no hassle. So they are very professional.

Reservations are a must and the vibe was intimate with low ceilings and dim lighting. Spacing between tables was generous and the noise level was low enough for conversations. It appears that we are in store for a nice evening. We elected to try the tapas dishes and share as we get a better variety and chance to sample many different selections. We started with the croquetas de jamon. The croquetas were light, airy and uncious with a hint of the jamon. The betabel tostada was the blue ribbon winner tonight. The pickled beets were finely chopped, great homemade beet and masa tostada, black bean puree, chili oil, dill, chive, lemon, jalapenos, pepitas and queso fresco. The flavor profile was nailed. My only concern was trying to cut the tostada into four pieces was impossible and caused us to destroy the masterpiece. The combination though was perfect. The sweet plantains were equally flavorful and a must try. The grilled short rib with sweet potato puree, demi glace, crispy Peruvian potatoes, aji amarillo and a cilantro gel was delicious, but the short rib was microscopic. Our final selection was the camerones in garlic, lemon, lobster butter, oregano, smoked paprika and chive oil. The shrimp were overcooked and extremely rubbery, while we fought for the sauce with grilled bread. Besame was our favorite dining experience in Steamboat Spring. The seating and ambiance coupled with the food made the evening extra special. To Besame, great job overall.

This visit, we ordered the Watermelon Gazpacho (GF), Beef Short Rib Anticucho (GF), and Ensalada de Manzana y Manchego (GF). The Beef Short Rib Anticucho was the star of the meal, at least for me, I honestly wanted more because it was so good! The salad was also delicious and, while definitely more apple-heavy than greens, they were happy to accommodate my request for extra greens. My only criticism is that the menu doesn't mention the compressed watermelon in the gazpacho is infused with sangria. As someone who no longer drinks alcohol, I could definitely taste it and wish that had been disclosed on the menu. Overall, Besame remains one of my favorite spots in Steamboat. Consistently great food, great service, and always a solid dining experience.
