They use what is considered the best species of salmon for smoking----King Salmon. In addition, they smoke their salmon with alderwood which many people say is the best smoking wood. Some of the packages had frost inside them, indicating that they were not sealed properly or were old. The fish itself was thin & loaded with pin bones that I removed by hand. There was a fishy smell and no smokiness. There was no brininess. After a single bite, I discarded the entire batch, contacted Alaska Seafood Company and they sent me a second batch which was slightly better than the first; "D" instead of "F" but still unacceptable. Weird color, thin, dry, smelly, bony, no smokiness, no brininess. I ended up junking everything after another single bite. I contacted the company again, this time recommending -- as politely as I could -- that they relearn the smoked salmon process,, but never heard back. (I had a local teacher in mind but they seemed disinterested.) These two batches were the worst smoked salmon -- by far -- that I've ever had.
