The seasoning could not be better with the salt and spice combo; the chive and parsley mayo also add an herbaceous depth of flavor. (Heirloom Tomatoes: A) - Pefectly plated tomatoes with a surprising sunflower seed forward profile given the subtleness of the ingredient; the dish is well balanced and brings out the harmonious flavors of the garden, although I think the bites with flake salt had that even more perfect note. (Hanger Steak: A+) - Beautifully perfected cut of beef with Asian inspiration; the steak is juicily pink with a charred exterior; the carrot ginger puree has a lovely mild and lingering spice, with some additional spice coming from the shishito and the pickled jalapeno.
