I tried to be understanding regarding this being their first opening to public (outside of their soft opening). BUT after a 2 hour and 22-minute wait to get food, the owners need to reevaluate their business strategy. I took one star off for the poor service, and each food item. Regarding the service, I am frustrated that this weekend was advertising as a Grand Opening with Giveaways, etc. Tallow's staff were completely unprepared for the line. Additionally, once they were aware the wait was over 40 minutes after eventually getting to order, you should advise individuals on the wait time for them to make an informed decision on waiting. Also, when providing samples of your food, make sure the samples are good. The fries were incredibly cold, and the owner's wife dropped a non-alcoholic beer then handed it to me. You don't dropped beverages then hand them to customers. Similar to the service, the food was not thoroughly thought out or properly cooked. Starting with the chips and guac, Tallow's chips were not cooked properly or for long enough because the chips were chewy not crispy. Also, chips need to rest after being fried to dry and prevent sogginess. The chips were really oily, and you could tell that the chefs did allow the chips rest. Moving to the food, I ordered the barbacoa tacos and the chicken green goddess salad. The tacos literally split in half from the wetness of the barbacoa --- This makes no sense because (1) I saw them make the tacos in front of me and (2) I waited 2 hours and 22 minutes for fresh food. Owners, the tacos need either 2 tortillas or the tortillas need to be grilled longer to give them a harder structure. The flavors were good but the tacos dissolving into a lump should not be sold as "Tacos." It is offensive to taco lover everywhere. The salad was not much better: the chicken was incredible cold, hearts of lettuce were served, add more dressing, and -- For the Love of God - cut the grilled onions on your salads (see attached photo).
