Food- Tucked inside the classic Hotel Santa Fe is Amaya, a restaurant that offers a taste of authentic Southwest cuisine. I would highly recommend sticking to the Southwest options, as these are where the kitchen truly shines. Having grown up in the region, I can attest to the authenticity of dishes like the green chili enchilada and the huevos rancheros, which they absolutely nail. For a great start to your meal, we ordered the chips, salsa, and guacamole trio. We also ordered the chicharrones separately, but they were not seasoned as described on the menu. While the food is a highlight, the bar could use some improvement. The drink prices are amazing, but the drinks themselves aren't mixed very well. My Old-Fashioned was served in a copper tin cup (better suited for a mule), and in another instance, a bartender put a spilled olive from my martini, which had fallen on the bar mat, back into the drink. Ambiance - The ambiance at Amaya is a breath of fresh air. It features open seating with an airy, light, and refreshing feel. The combination of skylights and open doors creates a very well-lit and inviting space that perfectly complements a sunny Santa Fe day. It's a comfortable and relaxing environment to enjoy a meal. Service - The wait staff is very friendly and attentive, adding to the pleasant dining experience. They were quick to seat us and made sure we were taken care of throughout our meal. While there was a minor hiccup with the bartender's service, the wait staff's professionalism and attentiveness were stellar.

    Empty restaurant.

Took over 30 minutes for my entree to come out when the restaurant was completely empty. Ordered a cup of corn chowder and scallops for my entree. Soup was glorified milk and corn. Came out with visible unmelted shredded cheese still in. Scallops came with pork belly and both were severely overcooked to the point where both scallops and pork belly were hard and I was unable to cut through it. Sat there clearly not touching my food for over 15 min and no one came to check on me. I had to look over to the kitchen where the servers were very loudly chatting and took a couple minutes before they noticed me staring and came by. Server was unhelpful and didnt seem to care. The actual dish had so much potential. It would've been a 5 star dish of the proteins were not disgustingly overcooked. Can't recommend this place.

PThe food here is exceptionally good. My salmon was cooked to perfection. The service was stellar. Lady was a sweet heart. The ambiance is fabulous with native art all through out the Hotel. I loved the wooden flute music at dinner. I could feel the stress roll off my shoulders. We stopped by the bar in the afternoon for beer and a nosh. Misty was great. I tried some butter squash soup . . . Delicious.

While staying at Hotel Santa Fe, arriving later in the evening we defaulted to dinner here. Nothing terribly wrong with the food, but nothing terribly right, actually wrong for The prices, , definitely no reason to dine more than once or if you just need sustenance while staying at the property. Buffalo Green chili burger- flavorless and under cooked Chicken pot pie- ya mama makes better Crème brûlée- over baked, pulling from the edges, curdled and weeping - we sent back

AMAYA is absolutely a gem. We dinned here for two days as we were snow bound on the week of November 9, 24. We are frequent visitors to Santa Fe and the menu options, execution, presentation and cuisine are remarkable!! The service in spite of reduced staff due to the weather was incredibly on point. The dinning room is spacious and the scenery was incredibly beautiful, winter wonderland!!

The restaurant was dimly lit, with large whiskey barrels tastefully scattered throughout the space. The ambiance felt dressy casual with a touch of farmhouse charm, complemented by a curated country music playlist serenading us throughout the evening. Since we had mentioned when making our reservation that we were celebrating our anniversary, both the hostess and our waiter greeted us with a warm "Happy Anniversary" and surprised us with two complimentary glasses of champagne. It was a very thoughtful touch and set the evening off to a great start. For drinks, I ordered the Buffalo Trace whiskey flight, while my wife chose a shrub, which is a sweet fruity cocktail with a hint of vinegar (like apple cider vinegar or kombucha). We both thoroughly enjoyed our drinks. To start, we ordered the corn chowder with bone marrow, which was such a unique and incredibly delicious experience for both of us. You scrape the bone marrow directly into the soup, adding richness to both the flavor and texture, which were already excellent. For our entree, we shared the ribeye steak with duck fat fingerling potatoes, and it was more than enough food for the two of us. The steak was cooked to perfection and, surprisingly, had very little fat. The duck fat potatoes were soft, flavorful, and the perfect complement to the meal. For dessert, we ordered the Kentucky butter cake and...oh my...the salted bourbon caramel was absolutely amazing!

The chili was excellent came with a large side of rice and beans, lettuce, pico sour cream guacamole was absolutely delicious. Same as the salad I replaced the blue cheese with goat cheese and it was excellent. The dressing was so good and the fruit fresh. The margarita, perfect not too sweet not artificial tasting at all. Now, the tamale oh my goodness I've never had such a moist tamale maybe the best tamale I've ever had. The pupusa was delicious and they didn't skimp on the cabbage salad. I expected something different with the beef stew. It was much thinner and Brosier than I expected, but it had an absolutely delicious flavor and plenty of meat. The cheeseburger was very tasty. The grilled salmon tacos were good but served with flavorless beans and bland rice. Not a place we'd refuse to visit again, but definitely not one we're eager to return to either.

This was an EXCEPTIONAL dining experience!…read more Service exemplary. I sat at the bar and got to watch the kitchen cook and they were true craftsmen and professionals. I started with what I thought was going to be a plain Caesar salad, but when it arrived, it was served like a sushi or lettuce wrap. It was very creative and tasty! It made it much more fun to eat than the average salad. It was rich and topped with anchovies, like a true Caesar salad. I then had the peppercorn Elk tenderloin. I asked it be served as the chef recommended, which is medium rare. I am sometimes wary of medium rare, but this tenderloin was DIVINE! It was so moist and bursting with flavor. I loved it. The cocktails were creative and just as enjoyable as the meal. Other options for dinner apps include: cornbread, ahi crudo, mussels, and bison carpaccio. Mains: scallops, pan roasted Branzino, toasted masa gnocchi, grilled Maine lobster tails, duck leg confit, and a pecan coffee rubbed prime flat iron. I'm sure all of them would be amazing. Reservations recommended. Please note that the rooftop bar does not take reservations and is not on the same system as the restaurant. Can't recommend this restaurant enough.

It's a perfect place for a group of friends who are drinking and laughing, and in general having a good time. If I was by myself, I would have given the place 5 stars, but the food was not a hit with everyone in our group. Starting with what was good, the cornbread was delicious. The Tuna Crudo, Caesar Salad and Branzino, which is what I ordered were all delicious and I would order again. The Mac n' Cheese was so decadent, and one of the best sides I have ever had. The not so great - the lobster was a bit overcooked and over done shellfish is never good, and the masa gnocchi was a bit dense and dry. This is a place where knowing what to order off the menu is key as not all dishes were spectacular. As a result of this dinner, our friend in Santa Fe has crossed it off the list for another large party dinner she is coordinating. However, I would happily return.
