As an executive chef, I do not hand out five stars easily. Toast Coffee + Kitchen in Bay Shore did…read morenot just earn them; it seduced them out of me.
From the moment you walk in, the room is fresh, sexy, and full of life--vintage circus art, a carousel mural, Houdini on the wall, warm wood, red leather, and energy that makes an ordinary brunch feel like a little celebration. It is beautiful without trying too hard, playful without becoming a theme-park trick.
Then the food arrives, and the kitchen proves it can cook.
My Plain Jane omelet was golden, tender, and properly set--not browned, not rubbery, just silky eggs with respect for technique. The cheddar grits were creamy, rich, and comforting, with scallions adding the right bright pop. The buttermilk biscuit was tall, flaky, and honest, served with gravy that tasted like someone in the kitchen actually cares about seasoning and texture.
The cheddar bacon smash burger was pure pleasure: a glossy bun, melted cheese, crisp edges, and a generous mountain of sweet-potato fries with maple dip. It was juicy, craveable, and frankly a little bit sexy. The cinnamon-bun short stack stole the table--soft pancakes layered with warm spice, crumble, glaze, and sweetness balanced enough to keep you going back for another bite.
The hostess set the tone before we sat down: her vibe was off-the-chart cool, and she was singing and dancing while taking us to our table. Our waitress, Genesis, was very knowledgeable, reliable, and honest--super helpful from the first recommendation to the coffee refill, making us feel cared for throughout.
This is not just breakfast. This is a jam of a place--fresh, yummy, joyful, and cooked with heart. Chefs notice details, and Toast nails them: flavor, texture, temperature, presentation, and soul. Bay Shore has a treasure. Would I bring another chef here? Happily. Would I bring my wife again? Already planning it. Would I drive across Long Island on a bright morning for this? I totally recommend this place without hesitation because it is worth the drive from Brooklyn or Connecticut. I will absolutely return, hungry.
