This place is extremely pretentious. Our waitress wanted to modify our food choices because one of our peers is gluten free. My gluten free friend did not want to eat any other dishes than the broccoli and rice noodles. The waitress continued to be rude and extremely degrading and I will never bring my business here again. Don't let the reviews scare you - this place is a must visit. Very authentic Chinese cuisine - my only regret is we didn't have more people with us so we can try more things. We had the green beans which were so flavorful, the Pork fried rice - huge serving and super good, the tangerine chicken which was crispy and just about the right amount of sweet. We didn't love the fried oyster special, but you know, everything can't be perfect. Be sure to make a reservation. If you can't get one, the outside tables and bar are first come first serve. It was somewhere between okay and pretty good. We got takeout, so I can only opine on the food quality and not the service, although the hosts were quite pleasant. The green beans took the cake and were the best thing we ordered. The biggest disappointment was the Peking duck: there wasn't much of it, the pancakes were dry, and there wasn't enough sauce. My wife absolutely loved the mock eel. I was medium on it, and the other person in our party didn't care for it at all. We ordered six things, and it was $105. So it was slightly expensive. For what this place is - "traditional Chinese food" served in a city/state that is 90% Caucasian - it's pretty solid. I would not come here expecting the same dim sum experience you would find in NYC, the Bay Area, or even Montreal. But it's definitely a big step up from the greasy spoon, massive amounts of sweet and sour pork, cheap sort of Chinese takeout options that are available in Burlington/Vermont (which have their own place in my heart). Make a reservation. We tried to walk in at about 1 on a Saturday and were told the wait was an hour. We made our reservation for lunch the following Saturday. The lunch tasting menu was really yummy, and about $20 per person. We shared: - miso soup with sesame oil - pork with asparagus - yuzu cauliflower - tangerine chicken - mapo tofu - pork and vegetable dumplings - lemon sherbet Again, not your typical dim sum (or even Cantonese/Chinese) fare, but everything was tasty, especially the cauliflower and pork. Flavorful, fresh, and portioned just right for two people to enjoy lunch and have the leftovers as dinner. I used to really love SIngle Pebble in a 4-star kind of way, but recently the saltiness has kind of dampened my enthusiasm for A SIngle Pebble. Nevertheless, it is our extended family's go-to place for any celebration -- birthdays, anniversaries, successful Church Street shopping expedition... Everyone loves, old and young, Asian and Caucasian. I first fell in love with the Mock Eel "small dish" (not an appetizer; it does not necessarily come out first!) ($9.95) -- I have to say, I have never been to another restaurant that does "fake meat" so well. The slightly crispy texture on top with the slight chewines underneath, the full-bodied tastes, the close-to-what-it-isiimitating look -- you would never guess this is shitaki mushroom. "Mock" meat is something of a speciality for them, as there are several items, and most of them are executed well. *But* But recently, it's gotten really salty, totally outweighing the sweetness. And I can only eat so much rice with it. But it is always the first thing we order, and you might wanna try it, too. Their Spicey Three River Soup ($9.95/$13.95) is also one of my favorites. Even though it is actually a Vietnamese soup, it is one of the dishes for which they are well known. And with good reason. I find all coconut-based curry soups delectable, but this one is down right addictive. The sweet nuttiness of the coconut milk is perfectly balanced by pleasant tartness (lemon grass, I'm guessing) and just the right amount of spice. (Suggestion: if you find yourself sick in bed with a horribly sore throat -- like a cheap woolen sock has been set on fire and shoved down your throat -- make your very nice husband go and get some Three River Soup for take-out. It may not cure you, but your throat will thank you.) Vegetarian options abound here -- what with the mock meats and all. The dry-fried green beans ($9.95) are excellent (but the last time, too salty...) and we always order the General Chou's Mock Chicken ($16.95). More good Mock Meat. I also like the lemon sesame shrimp ($19.95)--no fear of being too salty! Nicely sweet but not cloyingly so, it manages to be light and crispy, never greasy. But my current love here is the Garlic Chive Chicken ($9) on the lunch menu. Love this flavor (though it has the potential to be too salty...), and the chicken itself has a nice crispy texture, even though it is not deep fried or battered. However -- and this is one of those big "howevers" that took it from 4 stars down to 3 -- the last time I ordered it, I found not one but TWO shards of bone in my chicken! I almost choked! Now, I can appreciate that they are butchering thier own chicken back there, so it is fresh, etc. etc. But little, sharp chips of bone left in the meat? Just unprofessional. And unromantic, when dining with your very nice husband. They also have a nice range of sake that you cannot find anywhere else. Try the sparkling sake. I don't even like Sake, but this suff is lovely. (Note that I am *not* discussing whether the food here is traditional or fusion or whatever -- I'm not an expert, and frankly, authenticity is not one of my parameters unless the restaurant goes out of its way to sell itself as such. They do serve it as authentic Asian restaurants do -- what ever is ready first comes out first, and everyone is expected to share every dish.) I so want to give Single Pebble 4 stars. I was in Burlington for two nights and the first night we went to the amazing Hen of the Woods. Both of these restaurants were recommended by the same person, so I assumed this would be amazing! So maybe the problem is that my expectations were too high? Regardless, this place didn't live up to expectations or come anywhere close. We ordered a few things: -Double garlic broccoli - this was the highlight of the meal and was delicious -Red oil beef special - this was supposed to be very spicy but as far as I am concerned, it had zero flavor and the mint and sprouts it came with were just huge chunks that added absolutely nothing as far as the flavor is concerned -Sea bass fish special - the fish was actually tasty and flaky, but it was deep fried, so I spent more time picking off the batter than necessary -Broccoli side - this was ok, though not as good as the app -Pad thai with tofu - perfectly fine for pad thai The service was perfectly fine. I will say the ambiance was definitely lacking. It's a fairly quiet place, though pretty full. It just didn't feel inviting or have any sort of identity as far as I could tell. To say that I was disappointed is pretty obvious. It's not even that I've had much better Chinese and Thai food, or that this place is so darn pricey given what you're getting (and really there's never a reason to pay more than $10 for a dish at an asian restaurant unless it's peking duck or something very special)... After our first choice for dinner (Farmhouse Grill) had too long of a line before we had to catch our flight, we hit up A Single Pebble to grab a quick bite. As we got there just after 5 PM, we were able to grab one of the few walk-in tables available, and despite the hostess seeming hesitant about us getting our food in time, we were able to finish with plenty of time to spare. The decor reminds me of an Americanized Chinese restaurant, with perhaps a little more work put in to give it an 'authentic' feel. That said, it did seem to present itself as a bit more of a formal dining experience than the casual experience that I really would have expected. Service-wise, it was pretty straightforward, with our food coming out as ready and getting on the Lazy Susan quickly. The food itself, by my mark, was very average. I'm probably a bit spoiled by having had very good Chinese food in NYC and SF (as well as in China), but this pretty much lined up with my expectation of what heavily Americanized Chinese food would be. The best dish IMO was the asparagus with the black bean sauce, as the veggies were cooked just the right amount, with the sauce giving it some heft without being too overbearing. The noodle soups were okay (if a bit light on noodles, to be honest); the miso noodle soup definitely came off as more Japanese than Chinese, and the cilantro gave it a mint-like finish that was a bit odd. We also had the crispy orange chicken, which would not have been out of place at a Panda Express or any other fast-casual Chinese restaurant. In short - don't expect to have your socks knocked off if you come here for a meal. That said, the pricing is quite reasonable, and the quantity of food is pretty sizable as well - we all left plenty stuffed. It's a little off the main part of downtown Burlington, but it's a solid spot that adds a bit of diversity to the food scene. Authentic, Tasty, Unique. Man, I love this place! I would have never expected to find an authentic gem like this on my business trips up here in Burlington, VT. Here's a quick summary of my experiences with A Single Pebble: The location is on a street off of Church - in all honesty, I was a bit of a skeptic when walking to this restaurant. The roads were dark, the houses a bit shady.. And when we finally walked up to it, I thought, "We must have the wrong place, this looks like someone's house." Well, legit, it did. The restaurant itself is within a quaint house with a glowing atmosphere. The layout is unique, with different dining areas within the first floor of the house. My favorite sitting area however are the tables within the circular room with windows facing the street. The lighting is also great, allowing for not only a romantic setting but also for group dinners as well. However, to the most important points - the service and food. Starting with the service, I personally enjoy the company of the wait staff. They have an incredible memory, listing with detail the daily specials they have for the night and can sometimes spew minutes of information nonstop. They are extremely friendly, fairly efficient, and very professional. However, the food is even better. I am literally obsessed with their Fried Oysters. Dear glory of all that is kind, this lightly breaded and extremely fresh appetizer is a must have if offered! They melt in your mouth, and you have the option between dipping them in a salt and pepper mix (authentic Chinese way of dipping certain fried foods) or a sweet, thick sauce (more tailored to the American taste). Other dishes I was impressed with during my multiple visits include: -Hot and Sour Soup: Predictable, I know, but they do a great job adding lots of substance (seafood, chicken, ect) and the taste is, for lack of better terms, smoky (in a great way!), and not too spicy. -Sichuan Spicy Cucumber: Mmmm! Just the way my momma makes it. This is extremely authentic, and basically an Asian version of pickled cucumbers (totally different from the more common Pickles you'd see at a sandwich shop). Definitely a must try! It has a unique combination of saltiness, sour, and spicy elements that I personally enjoy. -Chicken Dumplings w/ Spicy Sesame Sauce: One of my favorite dumplings, anywhere. The skin is nice, thick and soft, and the meat within is juicy and tender. The sauce however may be what makes this dish stand out - it's unique, flavorful, and is the perfect balance of sweet and spicy! -Red Oil Chicken: Hotttttt! I love spicy dishes, and this one hit the mark! Smothered with chili oil sauce, the chicken was tender and flavorful. Recommended for the spicy adventurers! In summary - I really enjoy this restaurant. However, like any restaurant, there are some hit or miss dishes, but I believe that's really all personal preference. If you haven't tried this place, I greatly encourage you to come by with a couple of friends (especially if you've never tried family style dining before, where you share your dishes in a circular table with a rotating board in the middle). You'll find this to be pricier than your typical Chinese-American restaurant, but for the authenticity and quality, this is definitely worth your money. Highly recommended, and definitely one of my first stops whenever I'm in the area. Oh, and I absolutely love the presentation of the bill at the end - extra points to creativity, something a lot of restaurants (especially Asian ones) seem to overlook! Is it the best I have had? Nope. The worst? Hardly. The place is deceptive - it looks tiny from the outside... and its HUGE. Because they are touted as the best Chinese in town, reserve. Interesting dishes, not all equally well executed. We ordered a dimsum platter with some tasty and interesting items. A super crunchy crab cake was total "umami". My "black cod" in light broth and bean sauce with sauteed spinach, was beyond bland, and unbalancedly spicey. Not my favorite. HOWEVER, their garlic eggplant is FANTASTIC!!! Shredded chicken had what I called an "oriental mole" sauce - chicken was moist and flavorful. The whole fried branzino was awesome. The wine list is a "yawn" factor, but the service is attentive and friendly, food is good and the tables are ready with lazy susans to make sure the entire table shares the feast. read more

Solid establishment for traditional/Americanized Chinese cuisine. My true rating would be a 3.5, their menu is different from most Chinese menus you may see in the US in that they offer small plates in addition to entrees that come with rice. The menu aims for more of a high end experience, their were quite a lot of interesting menu items. I will start with the great which was their char su bao dumplings. These were the best that, I have had, their huge you can tell they were made fresh by hand and the sweet BBQ pork filling was amazing. We really loved the dipping sauce they offer as well. Their roasted BBQ pork, which is served as a small plate was excellent just like you would get in various China towns across this country. We also ordered their tangerine chicken, which is similar to orange chicken, I really enjoyed eating the chicken with the skin from the tangerine. My least favorite was unfortunately the one, I was looking to try the most. It was a seafood stew served with curry broth and fish sauce. The fish was ok and the broth was ok, just lacked that extra depth of flavor, I was looking for. Overall, I took a point off due to the pricing $4 for the char su bao (these were absolutely worth it), $15 for the soup and $22 for the tangerine chicken. At that price point, I was expecting a little more, but overall this is a solid establishment for Chinese cuisine. read more

Holy deliciousness! What a lovely dinner. This place came recommended by a few people, so we were excited to try it. Upon being seated, out waitress brought over water and a bowl of mixed nuts, complete with wasabi peas (this just in: I am not a fan of wasabi peas). Out waitress was patient and accommodating, taking the time to explain the menu and the dining experience. We had a hard time deciding what to try, especially after the specials were read but we made some great choices. To start, we had the sliced bbq hanging pork--smoky, salty and sweet, this was the perfect way to start our evening. Then came the dumpling sampler--3 different kinds of dumplings I couldn't even begin to describe but the creativeness was evident and admirable--and oh yeah, tasty! The entrees then arrived--for me, the Tangerine Peel Chicken--wow, this was my favorite--sweet, tangy, crispy chicken that stayed moist on the inside. I wish I didn't have to share! Tom had the Lemon Sesame Shrimp--the shrimp were huge, crispy and cooked perfectly with a nice, light lemon glaze. The noodles underneath were soft and practically squishy. My girlfriend, her mother and I went to A Single Pebble for dim sum brunch a few weeks back. I had never had the experience of a dim sum brunch (although I've eaten here a few times), so it's tough to compare it to anything. I can say the dishes they served were very good. When the server made her first pass, we took three of the four dishes she brought. What nobody understood was that they would just keep plying us with waive after waive of dishes, each more mouthwatering than the next. We filled up so quickly that we had to pass on some good looking foods. The food was really good and the table service was prompt and friendly. For all the food we had delivered to our table, the price for the Dim Sum was very reasonable. I will say that the hostess is somewhat rude. There was some confusion over whether we needed a reservation or not. When we showed up we were the first there so it was not a big deal. However, the hostess felt the need to make a point about our prior call. It felt like, to me and my party, that she was trying to make me feel guilty about not making a reservation, although we clearly did not need one and that fact was simply not communicated. That was the second time the same hostess has been sort of pleasantly rude to my GF and I about reservations as she was seating us. It is a strange approach for someone to take when they are the first person your customers see. However, in spite of her awkward rudeness, we will return. read more

I wanted to update this. We've now been three times and last night was a little different. My daughter is mostly pescatarian, meaning seafood only though she also eats boneless chicken breast on occasion. We did the chef's tasting again, but for dinner ($36 a person, so much pricier.) First, there was no tea offered this time. It wasn't even on the menu, though we ordered a pot anyway. No soup either, though there were bowls on the table. The big issue I wanted to mention follows. Again, we ordered the vegetarian tasting for our daughter's benefit. About half way through the meal, one dish came out and the waitress mentioned that the stir fried vegetables were tossed with fish sauce. Now, as my daughter will eat seafood, that did not bother her, but if she was a true vegetarian, fish sauce is NOT acceptable in a vegetarian dish. -------------------------------------- We've been waiting for the right opportunity to go to A Single Pebble, but every time we have had nothing else on the agenda, the urge to go to Church Street and deal with the parking rates, and the money for dining out, the restaurant has been full. This time, I made reservations two weeks in advance and had the most amazing meal ever. We did the Chef's Tasting ($16 per person as of 1/1/15) and had an amazing meal. My daughter will eat chicken breast, but that and seafood are the only meats she will eat, so we opted for the vegetarian option. Free jasmine tea was brought to the table, but we also ordered a pot of green tea as it was cold outside with the wind. The jasmine tea is now my favorite tea ever. The meal started with a delicious Miso and Watercress soup. After that, we were served Mock Eel (something I'd seen Alton Brown rave over and I agree with his opinion) and Vegetable Red Oil Dumplings that were not overly spicy at all and became the best dumplings I've had. The next round of dishes included the Double Garlic Broccoli (think cashew broccoli - really well flavored with a touch of smokiness), Deep Fry Green Beans (again fabulous), and my favorite dish of the day and something I figure had to be bad for us, but tasted so good - Buddha's Sesame Beef (made with seitan). The final dish was an eggplant that was braised in a spicy peanut sauce and served on a bed of lettuce, even this dish blew me away. After all that food, some of which we had to bring home because we were out of room, you also get dessert. The waiter invited us to try the tasting menu and said that they could accommodate vegetarians. I am a vegetarian but the 3 friends I was dining with are not so we said we would want a mix of meat and vegetarian dishes. I said that as long as the Buddha beef and the mock eel were in the mix then I would be happy. He said that we could do that. What they actually did was provide a tasting menu that consisted entirely of meat dishes at $40 per person and then put in additional orders mock eel and Buddha beef. I was worried when I saw that the neighboring table's fried rice was a dark brown amalgamation of nothing recognizable, other that that it was rice, but decided to stay positive and soldier forward. We ordered the tasting menu at $40 per person. Initially, things seemed fairly benign; a sesame oil and soy sauce cucumber salad, then fried curried cauliflower, followed by scallops in soy sauce. Nothing amazing, or really Chinese for that matter, but not bad tasting. Here's where it changes. The subsequent round of dishes were so horrid, that I can't even remember them, other than I had to send one back because the sodium content made it completely inedible. Each dish was the same soggy, greasy, soy sauce laden thing, with a different cheap meat. No shrimp, in a light oyster sauce, with bright green bok choy. No light salt and pepper fish, no Chinese broccoli. In fact, there was no green in any dish. The only green I saw was a shredded scallion. The staff was helpful to replace one of the dishes, but we were all getting so grossed out over the grease and brown soy sauce goo on all the food, that we were not able to really enjoy the one non brown dish. Pick and choose your dishes carefully here, and avoid the tasting menu. Best option, go to the local take out. read more

My family has dined on and around Church St during our vacation and the Single Pebble has been an outstanding disappointment. The food reminded me of bad takeout in Houston and the service could easily be compared to a college cafeteria. Our server Gayle suggested the Chef's Tasting Menu with the promise of a unique tasting experience from one table to another. Well the table next to us was told the same lie and both tables received the same courses at the same time. We're visiting from Houston, Texas where there is a strong Asian influence throughout the city. In Houston I've had great Peking duck with buns from a hole-in-the-wall joint in China Town. At single pebble we were served dried chicken with tortillas (the menu called them pancakes) posing as Peking duck. I literally laughed out loud when I saw the store bought tortillas. We had an ENORMOUS family dinner here - literally the most amount of food I've ever ordered in my life. They handled it beautifully. The interior is typical of the American take on Chinese food. We loved the round table set-up with the lazy Susan. It makes sharing so much easier and fun. Everything we had was good. As a vegetarian, I loved my numerous options on every section of the menu. The Buddha "beef" and fake eel stand out as unique, delicious dishes that even the meat lovers enjoyed. The only dish that was lackluster was the steamed veggies. They had zero seasoning on them, which standing out after dishes filled with sauce and flavor. I've been to A Single Pebble many times over the years and have always considered it to be one of the best restaurants in the Burlington area, but unfortunately that's no longer the case. The last few times I've been the food has been average at best and the service lacking. Last weekend my girlfriend and I met another couple for dinner and decided to try their Chefs Choice sampler, which is a variety of dishes. The meat in two of the dishes was gritty, almost as if a powdered ingredient or something didn't get dissolved and felt like we were chewing on sand. The green beans tasted burnt and actually had black char from the grill stuck to them, one of the dishes wasn't even hot and the service was good one minute and terrible the next. Inconsistent, food quality has definitely gone downhill and I doubt I will ever go back. So sad considering they used to be such an amazing restaurant. read more

Been twice. Service is great, and food is very good. They have a lot of vegetarian and vegan options, which is great. I only give it 4/5 simply because of how much salt is in everything. It's very overwhelming. Great experience otherwise. read more

Came here for a friend's birthday, and there was a "cake storage fee." I suppose it makes sense since it's taking up a small corner of their fridge and electricity? The hostess is also horribly discourteous. I love The Single Pebble because its owner is a Taiwanese chef and I love being able to eat authentic-like Taiwanese dishes at this restaurant with a well-curated menu. But the unpleasant manner in which the hostess treats invoking customers is highly distasteful. I hope the owner will be able to be a little more selective in choosing someone who wants to be at the establishment and values customer service. read more

Ordered copper spicy garlic noodles and they were delicious! Just the right spiciness to it. Perfect size to share with 2-4 people. Shrimp fried rice was enough for like 5 people! Nothing out of the ordinary but it was def. very good. Pork dumplings could have been a little more flavorful, the soy sauce did help. Plates are large enough to share. The place is very clean, welcoming, you can make reservations, looks like a house from the outside. Prices are a bit high, they have a taster menu which seems great if you go in HUNGRY, about $40 per person. In our experience , the busboy started cleaning our table as soon as we were done eating, he actually waited next to us to take our final bites so he could clean it (def. made us feel rushed so we can hand him our plate) read more

A Single Pebble gets a single star from me. One word to describe my response to all the favorable reviews - Huh? We went with the chefs tasting menu. Almost every item was breaded and deep fried, including a shrimp dish and small pork chops that looked and tasted like they were cooked in oil that had been used over and over for weeks. Seemed to be a lot of sugar and salt in everything too. The few items that were not deep fried were mediocre at best. Yes, you get a lot of food, but nothing special at all, especially for $38 a head, plus $10 drinks. read more
