Tucked away behind the Tapped beer bar, The Dingle is a haven for anyone who might want a quiet, welcoming spot to chill out with a whiskey taster or cocktail (or two...or several) after the work day ends. The interior has a warm, comfortable feel to it, and the staff are welcoming and extremely knowledgeable about their inventory, so don't be shy asking them for recommendations. Thanks to a combination of covid and Google (wrongly) listing them as permanently closed, business has gone way down from where it used to be a couple years ago, but I can't emphasize enough that The Dingle is still very much alive, and I'd HIGHLY recommend dropping by during opening hours (which I think are just Thurs/Fri/Sat afternoons right now).

How it works: walk downstairs (look for the neon sign that says "sshhh!") and GENTLY press the pig head on your left at the bottom to open the secret door. Our server was a gem and helped us navigate the extensive craft cocktail menu-I LOVED THE "breakfast of champions " and my wife enjoyed the noonin which was a bit of a riff on a margarita. We started with the creamy burratta with grilled pears and bread-heavenly and so fresh. For mains I got the pasta with beef and onions(yum!), but the standout was the braised short ribs with creamy mashed potatoes-amazing! -and at €30 a fantastic value. In fact everything was very reasonably priced and cocktails were only €15 each. Out entire bill was just €120-at least 50% less than a comparable meal at a quality restaurant in the US. Ordered the fish and chips, which were crisp on the outside with a flavorful batter, and tender fish on the inside. It also came with a nice little pea salad, with mushy peas and whole peas together with the greens. I definitely need to make this! Also got the Irish Cottage Pie and it was very tasty - rich in flavor but lighter than I expected, in a good way. Shared a pint of Guiness (just missed splitting the G - lol) and finished with an Irish coffee, which hit the spot. (After drinking LOTS of them over the month we spent in Ireland, it's still the best pint I had.) The bar/room is very small, and there were only 5 or 6 seats around the bar. I didn't feel rushed at all and after the tour there's a tasting and if you'd like to continue the party you can make your way to the bar just before the gift shop.

The tasting was fun. Tho I think I had tried all but one or two of the offerings. The PX I bought back home when it was on sale at Costco. Surprisingly, it was cheaper there then here. We had the last time slot that Mon, so there wasn't much time to do anything else afterwards. We walked thru the shop and left. So if you want to explore, I'd suggest going earlier since they closed shortly after our tasting was over. Our second visit was for purchasing and trying an irish coffee. The hubs went to buy the items while a friend and I grabbed some coffees. I'm not into sweetness in my coffee at all, so I asked them to make it without any syrup/sugar. It was nice. I got the sweatshirt as a momento. It is on the longer side (I'm 5'8"), so keep that in mind if you are shorter than me. My one complaint is that the tour groups are very large, which makes the experience feel a bit impersonal. You're essentially moving from room to room with the group, rather than having a more intimate tour. That said, I really enjoyed getting to taste some of the other whiskeys they produce that we don't typically see here in the U.S. Overall, it was a fun experience and definitely worth visiting if you're a whiskey fan.
