Pan-fried Red Cargo Rice-roll w/ Shrimp (脆網紅米腸) is their signature dim sum. It's bouncy shrimps wrapped with a deep-fried, crunch layer and a slice of silly red sheet. This combination of different textures is interesting. If you're bored of having traditional Shrimp Rice Roll (蝦腸), this will be a good alternative! Location wise, it'll be quite inconvenient for patrons who come by MTR. It's an about 20 minute walking distance from Kowloon Bay MTR Station to the restaurant. To avoid the walk, you can take free shuttles that run between Telford Mall and MegaBox Mall. MegaBox Mall is right opposite to Chung's Cuisine where you can check it out before/after the meal.

Chuk Yuen is a well established Seafood Restaurant this is close to my home in Hong Kong, situated at the Tram Terminus in Happy Valley, it is a very convenient location for locals and visitors alike! Being a seafood restaurant, they have their very own fish tanks at the front of the restaurant for foodies to pick their own! As you can see from my photos, all the seafood was prepared really well, my personal favourite is their Salt & Pepper Mantis Prawns topped with Fried Garlic! Since the Mantis Prawns are all freshly picked from their own fish tank, they cannot be more fresh! The meat of the prawns were all done just right and not dry, as it can be if it is just slightly over cooked, this requires experience & skill from the Chef. Of course, all other dishes are also outstanding, in fact, we came back the next morning to try their dim sum, which were also done very well! I tried to look up the items we ordered on the online menu, but for some reason I failed to identify anything because all the extensive names and big words sounded similar and the dishes seemed to blend into each other--so please bear with my unofficial food names and descriptions in this review. 1) I think the most unique item was the layered pudding with fish filet: not only is it award-winning, I also saw it featured on TV! The presentation of the aesthetic layers in the simple glass cup is ravishingly beautiful, and the TV program talked about how the chef uses a special technique to construct the layers. However I found the actual taste to be just alright; rather, I was primarily impressed by the fish filet. You know how when you get pork belly in your ramen, it's tiny but explosively delicious? That's what the fish filet was like--despite its modest size (and appearance) of a chicken nugget, it was melt-in-your-mouth savory heaven. Lastly is the mini asparagus garnish, which I didn't care too much for as it is primarily for looks, but I found myself amused because I don't think I've ever such chibi / ちび asparagus. 2) There was another award-winning fine-dining-esque item with another type of pudding and a piece of chicken. Although this one had no pretty layers, the chicken was equally mind-blowing. 3) We also got the specialty dim sum sampler. Again, the main specialty was presentation because the actual food ranged from okay to great. The 蝦餃 / shrimp dumpling was quite tasty with a delightfully thin dumpling skin and sat in an adorable mini dim sum steamer. The taro puff with fried taro nest was good too, with an interesting fluffy fried coating on the taro puff. However it was rather filling and the taro nest was too crunchy (let's hope that the crunching was much louder in my head than in reality). The last chicken thing was mainly for presentation; it was good but nothing earth-shattering; plus, I found it strange to eat a dessert shaped like a chicken because it seemed like it would be more fitting savory than sweet. 4) Lastly, we got two additional dim sums: the quality was good and I liked how they adhered to flavor profiles of traditional dim sum though some of the presentation and ingredients were novel. The ambiance is nothing all-out and completely out of the ordinary, but it was nice and comfortable. Food-wise I think Shang Palace may have an edge on culinary prowess, but Yue does not disappoint and it certainly seems to have an expertise in presentation.

(Most dim sum places in the US leave the black mushrooms out of the recipe because the good ones are expensive). The dumplings were smooth and tender, and without a trace of chemical tenderizers commonly used by most dim sum restaurants. This is as good as it gets! Other staples were also amazing. Har gows were fresh, crispy and juicy. The rice noodles were so perfectly thin that they were translucent. Bean curb wraps were super yummy. Beef balls were on point, moist and flavorful, and sans the taste of tenderizer. The XLB's were good but unimpressive, but that's probably because we just had those at Wu Kong the day before. Every item was freshly steamed and served piping hot - so fresh and so hot that the steam messed up my camera lens and I had to wait for the steam to dissipate before taking my pictures. (Note: While carts are still a gimmick in parts of the US, it has been pretty much extinct in HK and many parts of Asia for decades). Other than dim sums, we also ordered a BBQ pork and roasted pork plate, which was delicious, and light on soy sauces and artificial flavorings. The delicate Chinese almond pig lung soup was absolutely refreshing and nutritious (yes, it was made with real pig lungs, which were separated from the broth and served separately in a dish). This was one of the higher-end restaurants and it was definitely quite expensive, depending on what you order. Including the above expensive items and about 16 - 18 dishes of dim sums, the bill for a lunch for 4 came to HK$1,200 (approximately US$150). It's worth every single penny. A solid 4.5 stars dim sum experience by Hong Kong's standard. Rounding it down to 4 stars due to the rather slow and unenthusiastic service. At this price range, top-notch service is expected.

Service obviously left something to be desired but at least they didn't yell the order (to the kitchen) or being overly loud (quite civilized relatively speaking). We had to frequently flag down various waiters to get served, to place our order, to ask for napkins and so on. Food again was good. See photos. Relatively fast in the speed of serving. Their kitchen closes at 1:30 pm so as soon as we sat down we had to rush our order. Toilet is not in the restaurant but outside in the hallway, tucked away and unsightly. Dirty.
