I just... didn't. I've been following them on Facebook for a while, and I finally timed things so that I was free from meetings and could drive over to their location to grab lunch that day (sidenote: I was also at my intermittent fasting window... which meant I was READY to get some tasty food!). I found the My Eva truck at the location noted on their Facebook page for that day, approached the truck, checked out the menu, and ordered a couple different items to sample: a chicken quesadilla, nachos with pork, and 3 al pastor tacos (not the combo, just the tacos). While it felt like service was slow, I'm actually not deducting stars for that. I had read on their Facebook page that they were understaffed and asking for patience, so I expected some delays. Also, a member of the team had asked what car I was in when I ordered and offered to bring the food to my car so that I didn't have to wait in the rain. Wanting to support (somewhat) local, I also provided a 25% tip on my order... which, having now tried the food, feels overly generous. Sadly, I've just never tasted any Mexican food that was so... lacking in flavor. The chicken quesadilla was more oily on the outside than anything (I only ate 3 bites), the pork on the nachos was super fatty/rubbery (couldn't finish the nachos), and there was very little *to* my al pastor tacos (why not throw some *actual* pineapple in there? Or provide different options for salsa... as opposed to watered down hot salsa, etc... and also, flour tortillas that didn't seem stale? That would help). Everything just missed the mark. So disappointing. Maybe something's gone awry due to the staffing issues? I have no idea. I just know that if my food today is indicative of anything, then I won't be back. While I appreciate the pleasant service, there are a lot of other restaurants out there that can offer both pleasant service + quality food. In my experience, My Eva isn't one of them... so I won't be returning. I hope other folks have better lunch with food from this truck than I did. :-/

The pork was pulled style with an Asian profile of flavors. There was also some German bologna, which I don't think was really necessary but oh well. The sandwich was topped with a broccoli slaw mix, cucumbers, cilantro and sriracha. Yum! Everything was very fresh and flavorful. The only downside was the sandwich was kind of hard to eat because the roll was chewy. Just be prepared to get sriracha all over your face! The sandwich also came with a side of either baked beans or Mac salad. I tried the Mac salad and it was very good with fresh herbs and sweet pickle. On a side note, I had this sandwich as takeout so I haven't seen the shop itself. I don't know what gear they have, but I don't think they smoke the pork, so don't go here expecting a more authentic BBQ. That being said, I can't wait to try more!

For a small metro area largely unknown even elsewhere in it's own state, the Greater Binghamton…read morearea aka the Triple Cities (a historic nickname which referred to Binghamton and it's neighboring former cities turned villages of Johnson City and Endicott) punches wildly above it's weight with it's highly unique hyper-regional cuisine. Among the waves of immigrants brought to the area during it's numerous boom cycles, first as the world shoe-making capitol and later and the original home of IBM and other massive corporations, were Italians who developed among other dishes, the culinary pride of the region, the Spiedie. Skewered cubes of various meats, supposedly originally lamb but now more likely chicken and pork are marinated in a deliciously herbaceous, acidic and garlic heavy blend and spit cooked to perfection, and served in wonderfully crusty sub bread, it's served at bars, diners, pizzerias and elsewhere grilled up in backyard barbecues with store bought marinades at area groceries, and is so beloved it serves as the centerpiece of a annual "Spiedie-fest" food festival and competition. This decades old Endicott takeout institution with a few picnic tables outside and a glorious vintage mid-century sign is widely considered one of the Spiedie GOATS, and is an excellent spot to get a taste of the dish with an extra helping of local flavor. I sampled two of the smaller 6 inch subs one each of pork chicken. Both were marinaded to perfection and accompanied by some of the most perfectly crusty fresh made hero bread I can ever remember having which perfectly absorbed the gloriously flavorful marinade. Oddly enough and consistent with all my previous Spiedie experiences, somehow shockingly it was the chicken which was by far the juicier of the two proteins, while the pork was just the slightest bit on the dry side, although both were extremely tasty. I don't know if this has to due with the respective cuts of pork and chicken that are used for the Spiedies or some alchemy caused by the reaction between the chicken and the marinade, but I am hard pressed to think of another dish where the chicken would be the more juicy of the meats on offer. This curious fact was reinforced by the chicken being slightly more expensive than the pork option. Both were still astonishingly under 6 dollars each, reinforcing the reverse sticker shock you often encounter when seeing the low prices on menus when eating in the area. The merciful pricing continues across the menu, which offers a wide variety of non-spiedie options like Beef and Ham BBQ and Kielbasa subs, burgers and dogs, potato and macaroni salads and much more. I also grabbed a side of gloriously greasy fried pierogis along with my spiedies for $4.55, of which I was only able to enjoy one of due to how stuffed I was from the subs, before packing it up for a snack later. End result; massively delicious, supremely filling meal + leftovers and local anthropology study in one for $16 total.
