First visit. Really wanted to love this place because it's close to our house. Executive summary - very hit or miss; some really good menu items and some really not. What better way to try out a place than to get a little of everything? According to the menu, that's exactly what "Big Tex" is. But in reality, you get to order 5 meats and 5 sides. So that's fine; we ordered the 5 most appealing meats and sides. Oddly, drinks had to be ordered and paid for separately, at the bar. Extra hassle. These are the things we would order again: Brisket, pulled pork, elk sausage, cornbread, french fries, and mashed potatoes. Good stuff. The pork belly was new to us. A fun, one-time experiment. The ribs may have been competition-cooked, as opposed to fall-off-the-bone. We prefer the latter. They still weren't bad. The cream corn had good flavor but the corn's texture gave it away as old; it was kind of tough. I'm a mustard potato salad guy, and the potato salad here is the opposite of that, if there is such a thing. The beans were undercooked, plain and simple. That aside, I am not a fan of the way they were seasoned. We tried all 4 barbecue sauces and liked 3 of them - BBQ, Medium, and Hot (which isn't very). BBQ was our favorite. Can you go to White Paper BBQ and get a good meal? Absolutely. But ya gotta order carefully. read more

Finally found the chance to make it over, and very glad I did! Located next to the La Quinta in Loveland, there's a plethora of parking spots available out front. We walked in through the glass doors, through which you could see the HUGE smoker sitting next to the building, and into the restaurant/bar area. It's all order at the counter, so we perused the menu and then placed our orders - mac and cheese topped with brisket for me, pulled pork nachos for my lunch date. They dished everything out in front of us, then we were directed over to a "serve-yourself" sauce bar with a multitude of different barbecue sauce options, plus a variety of FREE pickle options! After piling my platter even higher with spicy pickles, we dug in. The mac and cheese was topped with beans and a generous amount of brisket. The brisket itself was a little dry, but the cheese sauce in the mac helped round it out, as did the barbecue sauce. The nachos came with a cheese sauce as opposed to melted cheese, which made them get soggy pretty quickly, but the meat on top was tender and juicy. Finding a barbecue place with free pickles is a feat in itself! I will definitely be back when I head down to Loveland to give it another try, but might go a different direction with my protein choice in hopes of finding something a little less dried out. read more

This place gets my OMG award! We came to the 5030 for pizza and beer a few weeks ago and saw that the white Paper BBQ was upstairs and knew we had to try it. Today we did, and OMG this place is amazing. Food: we got the sampler for two with Brisket, Pulled Pork and Turkey, a side of Mac and Green Chili Mash. The Brisket had the darkest smoke ring I've ever seen and has an amazing salt pepper rub that is to die for. The Pulled Pork was moist and flavorful and the Turkey was perfect. The Green Chili Mash had a great tang to it. Atmosphere: there are several TV's and great mix of country music playing in the background. Service: we ordered our meats at the counter and served almost immediately. We ordered beer at the bar and they have a great assortment of beers from Berthoud Brewing. Tips: get here early, we could hear they were running out of meats, and check to make sure their open because they are heading to Texas for a competition. Oh and lastly, very affordable, our sampler was $20 and the beers were $6. read more

We were staying at La Quinta and went over and grabbed some food here, funky place with a great vibe! We got the 2 person sampler and brisket/mac and cheese. The mac and cheese with brisket was a generous portion for sure, the brisket was on the dry side but not bad, the ribs tasted ok but was not "falling off the bone" tender, the corn bread, the beans and the coleslaw pretty bland, it was not a bad meal but neither an awesome meal. read more

As always it's my pleasure and honor to find and represent the people and places that go out of there way to serve us. Thus is such a place!! I've driven by this area for the last 4 plus years. Started noticing a brewery and we would always say we need to stop there are check it out, well today I did. The building is awesome, they'd done a great job. The bottom is the brewery the upstairs is the BBQ. First trip you just have to sample the meat!! Although I decided to go off the normal pulled pork route and do brisket, Turkey and jalapeños Elk sausage. As I'm waiting I'm taking a few pictures and sampling the pickles and sauce. The owner says something lime "I hope the review is good". Yeah me too!! My food comes out and as you can see it looks pretty good, a little like competition presentation. I start with the Mac&Cheese, ya see a lot of Texas BBQ places do good bbq but act like the sides are a afterthought. I'm happy to report this guy does them right. Really good Mac, excellent homemade creamed corn. The cornbread was tasty, but cold and it had butter for it, which doesn't work on cold cornbread. The Turkey was very moist and tasted good, but just not a fan of this Turkey. The brisket was a little like competition brisket. If you folder it over your finger it stays together and you see the grains separate without falling apart which is what most people look for. Good smoke ring decent flavor. Not as moist as what I would like personally and I would sure to have a little more bark on it but overall good solid smoked brisket. The hog sausage was definitely the highlight for me nice spice cooked well good flavor not too tough. The other highlight is the Bama sauce really really good. In fact all the sauces were good. They have original which is a little thick and sweet, spicy and extra spicy both are really good, but the bama sauce now that's the real deal. Sit upstairs have a beer enjoy the scenery go downstairs and eat outside have a beer down there great place gray building great service. And the owner runs the place and he cares about what people think. He asked for my opinion and I gave him my honest opinion. And of course opinions are like you know what everybody has one not everybody's preference is the same. I have lived in Texas for 20 years and so far there's a few that's come extremely close but there's no barbecue like Texas barbecue. But more importantly there's no better place than a place that's run by the owner and cares about what people think and might make adjustments accordingly. We tried the Sampler of three meats and two sides. Where do I start...Let's begin with the positive. The smoked meats were good, we tried the sliced brisket, shredded pork and smoked turkey. The ranch beans, and potato salad were our sides with cornbread. The beans were terrible, undercooked and tasted only of beer. The potato salad was also terrible, being undercooked and loaded with cucumbers and celery.(???). With the restaurant attached to a brewery, I should have suspected as much. The cornbread was also heavily cooked in beer, not good, even with the ice cream scoop of butter that we were given. The restaurant was not very clean and the patrons were outnumbered 10:1 by the flies. I would go back to try a take out order of the smoked mats but that's the only reason I would try this place ever again. Sorry about ya. read more

Hands down in the top three best bbq joints I have ever eaten at! The meat is all moist, with good smoke flavor. The sides are all delicious!!! The Sauces were really good (except for the spicy sauce, I'm not a fan of chili powder) Their homemade pickled onions are the best I've ever had, and their pickles are delightful. This is the best BBQ I have had in CO. Not only are they just wonderful people...friendly, funny, and engaging...they are awesome bbq-ers. Where to start? I'll start with the most surprising to me...the bbq turkey breast. Now I like turkey as much as the next guy, maybe more, but I have kinda gotten over turkey because it is so damn hard to get it, or find it, done right. It is more likely that you find it dried out and tasteless. But White Paper makes the BEST smoked Turkey breast EVER. It is moist and flavorful and chock full of Smokey goodness. Seriously...SO GOOD. RIBS - Amazing. Again, moist and tender, large ribs with plenty of meat, almost fall off the bone but not quite (competition style, just how I like them) and flavorful beyond belief. I swear they get more smoke and pork flavor out of ribs than anyone I have ever seen. It's like they merged two smoked pigs into one. Delicious. Brisket - Tender and amazing flavor. I haven't asked but since they are purists with everything else I am betting the brisket is seasoned with just salt and pepper and smoke, cause that's all you taste until the pure beefiness smacks you upside the head. Brisket is a mainstay of bbq and one of the essential tests of quality and like everything else, they nail it. Pulled Pork - another mainstay and like everything else, done to perfection. Seriously, smoke flavor on smoke flavor with a side of smoke flavor. Pulled pork is another thing that can get dried out easily but theirs is moist and flavorful all the way through. And the sides! Green Chile Mashed Potatoes?! Omg...freaking unbelievably delicious!! Get them. All the rest of the sides are amazing, from the Mac and cheese with the big shell pasta, to the honey mustard slaw with s good tang, to the baked beans with meat (more savory, less sweet, like I love them!!). I'm a bit of a barbecue connoisseur and so far, this is the best bbq I've found in Colorado. The fries are made in a dedicated gluten free fryer and are phenomenal. Was staying at the LA Quinta next door. It was convenient for dinner. Really not that great despite its ratings. Hours on Fri/Sat close pretty early. Meat options not very numerous. Sides lacking. French fries out of stock. Our food cold, not great service from the female, was rude and short and not helpful. Good service from the guy in the Hulkmainia t-shirt. One would think they would make an effort for the customers from the Hotel. With our food no bread options. No biscuit,no slice of bread, no cornbread. Nothing. We enjoyed our one and only trip to this place. The good was good. The desserts are very good. My only issue is that they are almost only sold out half way through their day so if you do not get there 1st thing alot of your favorites may not be available. We have went by there 2 other times and kept driving because of this. Being popular is great but not having a firm handle on product inventory is a problem. If you come to a restaurant during their Normal operating hours it is not an unreasonable expectation that what they have on their menu should be available for purchase .... consistently. read more

Our family of 7 went here and decided this place is a keeper! The owner told us about the fresh batch of Chile Verde with pork and chicken he had just made, which was fantastic. I am born and raised in Texas and you know we are particular about our bbq. We also catered a bunch of meat for my husbands grandmothers 95th birthday party and we received so many compliments on the food!
