Tables were appropriately distanced, and seating was exclusively outdoors when we went, thus reducing any chance of spreading any contaminated air particles. Staff wore masks, and as guests were were instructed to wear masks when getting up AND when talking with staff. As an Ohioan resident, the latter is not implemented, but honestly I wish it was. Restaurant staff need to be protected as well. The server brought us complimentary housemate beverages to begin the evening, an unexpected added bonus (which were deliciously refreshing, if I remember correctly, made from a grapefruit base). All staff was convivial, friendly, and easygoing. The food was next-level. Granted, this is a moderately upscale dining experience, despite the casual, down to earth ambiance that is quintessentially Colorado. The focaccia was fresh and perfectly balanced in that slight give, the crunchy exterior, and soft and oily interior. I'm partial to burrata above a lot of cheese options, especially with focaccia, and this didn't disappoint. The fennel pesto and nasturtium helped to lift the otherwise indulgent starter. The charcuterie board was well plated, offered a wide variety of flavors and textures, leaning on the sharper side of flavors, feeling a little French (as its namesake). The star of the show was the wagyu. With no exaggeration I will proclaim that this was the best cut of meat I have ever consumed. The perimeter had a nice salty crisp to it, the interior was juicy, flavorful, a melt in your mouth, no knife needed experience. I was viscerally taken aback. And each bite was like the first. Paired with the market fresh tomatoes, black garlic aioli, and shallot, the acidity, warmth, umami, and herbaceous boxes were all checked. Simply fantastic. My partner, a more frequent meat eater stated that this was the best meat he had eaten in over a decade. Last but certainly not least, we finished the night with their seasonal vanilla cherry bombe. Aesthetically pleasing Bavarian cream and dacquoise with poached cherries and vanilla cherry sauce. A nice subtle finish to the meal, if a little homogeneous. I would suggest a little citrus acid in the cherry sauce, and maybe some more incorporation of cherries throughout the dish. Overall, one of the best parts of our vacation. I recommend this place to anyone looking for a moderately priced meal. Fans of rich flavor and fine cuisine, without the pretentiousness that sometimes come with fine dining, reserve a table at Blackbelly for dinner.

The beans and hominy were fantastic and quite a surprise! Never had hominy outside of Pozole. Never even considered hominy in any other capacity. Nicely done! We had our tasting at Grant's farm and it was phenomenal. He made a sampling of apps, main courses/sides for us to try based on the direction we were going in (we wanted to do food with a nod/flare to the South). Once we decided we were going with GB, Claire and Grant did a walk through of our house (we had our wedding & reception at our house) and we talked about high level details for the event. From there Claire and I kept in touch and ironed out any last minute details. She and I were on the phone a day or so prior to our wedding because of rain in the forecast - we discussed our "plan B" action plan. I knew that I had nothing to worry about because they would take care of us :) The morning of the team arrived early to help set up tents and rentals, and prep for the day. We pow-wowed when they got there and I gave Claire all my last minute details, map, decorations, etc. and let her and the team run with it. Everything came out even better then I could have asked for- they definitely have a wonderful aesthetic! I remember after our rehearsal I was running around trying to find paper to write "reserved" signs for our parents. Grant saw me nervously opening cabinets to find the paper and said "What do you need? How can I help?" That stuck with me. I told him what was up and how I couldn't find any paper to make the signs. He offered to rip up an extra menu and make the signs for me and put them out. It was so kind and awesome, I felt like they were all going out of their way to make sure everything was handled and I didn't have to do anything on my wedding day. Okay, now for the food: I can't even tell you how many people came up to me and told me it was the best wedding food they had ever had. Everyone was extremely impressed with their food, their service, the layout - everything. I can't say enough great things about GB Culinary, I would highly recommend them to anyone for your next event.

We had a beautiful dessert bar, smoothie bar, and small appetizers at Golden High School's Prom thanks to Bleu Sage. Everyone loved it and talked about it endlessly!! (Especially the raspberry brownies...) They brought all of their own tablecloths, napkins, etc. to the event making it stress-free. Bleu Sage catered my graduation party and the presentation was so beautiful. Everyone was asking who had catered the event because the food was so fresh and unique. It was Hawaiian themed and the pork and wings were absolutely to die for. They also catered my sister's graduation party with a Taco Bar. Bleu Sage's generosity really shined through during Make-A-Wish Week at Golden High School. For years now they have been donating homemade rice krispy treats, cupcakes, cookies, brownies, and other goodies to raise money for children with life-threatening illnesses. Bleu Sage dropped off the donations along with napkins, plates, gloves, and of course cheerful smiles. We would not have been able to reach our goal without them. Bleu Sage catered my cousin's wedding in June. The spread was absolutely BREATHTAKING!!! They had cute taco stands and the presentation was absolutely stunning and so professional. The owners are so professional, considerate, honest, and creative with their food and setup. They genuinely take the time to make sure that everything is perfect every step of the way. So, in addition to getting a delicious breakfast or lunch you can feel good about helping folks move forward in their lives. The Community Table dining area has a very comfortable feel to it. It's spacious, well lit, and the walls are tiled with gleaming white tiles. Dominating the space is a very large table that can seat at least twenty, hence the name. Sitting at a table with others gives you the opportunity to meet and talk with other diners, including workers who eat their lunch just before closing at 1:00. On both my visits I had great conversations with Amy, Debbie, and others. Everyone working there is friendly and fun to talk with. The food is beyond wonderful. I've had a couple of different curries and the spring roll appetizer. Everything was spiced perfectly, and delicious. The portions are more than enough to fill almost any stomach. And get this - the prices are unbelievably cheap! Breakfast is $6, and lunch $8.00! The Community Table staff cooks and delivers food to a number of restaurants and grocery stores in town. The restaurant doesn't seem to have been discovered yet, based on the handful of customers on my two visits. This is a restaurant that everyone should learn about. It is truly fantastic!

A few minutes later I had in my hands and carried to the outdoor tables a delicious burrito stuffed with egg, potatoes, and veggies in a tasty green chile all wrapped within a tortilla. The coffee was hot and fresh. The burrito is great--and a great value even at the usual $6 price. (I just left a good tip, having received an unexpected discount.) Love this place and food. So glad to know it is here.
