So I thought perhaps, at long last, the espresso situation had been resolved. Reader, it had not. I ordered a Cortado to stay. "Would you like that in a mug for here or a paper cup?" An encouraging start. I then positioned myself beside the espresso machine like a wildlife documentarian returning to observe a rare but persistent behavioral phenomenon. The barista dosed the portafilter, then tamped the coffee while holding the portafilter in midair, applying what appeared to be approximately the amount of pressure required to test whether an avocado is ripe. He locked it into the machine and pressed start. Brown liquid immediately exploded from the spouts with absolutely no delay whatsoever. The shot was over in roughly four seconds. For those unfamiliar with espresso, this is generally considered suboptimal. The resulting Cortado tasted primarily of hot milk and faintly burnt coffee sadness. After two and a half confirmation sips, I quietly left the remainder on the counter and departed. At this point I no longer review Ross's espresso. I monitor it.
