Forbidden Bacon

WWCD? He would stop everything and immediately go order the Forbidden Bacon!! Heavenly Grilled Cheese with Ham and Applewood Bacon with Apple Butter and a Honey Drizzle. Search this place out and find your grilled cheese SALVATION!!

The Pope in the front!

Delicious, unique grilled cheese sandwiches! WWCD came to our apartment for a community event. I was so excited to try it b/c who doesn't love a good grilled cheese? Service was super friendly despite how busy they were! I ordered the Pope, tomato soup, and a smores whoopie pie. Sadly, they ran out of tomato soup, but the sandwich & whoopie pie were so tasty! I'll have to try this spot again to get their soup!

So good! I got Forsaken Bacon, hubs got Go Fig Yourself and kiddo got Baby Cheesus. All were great!

Go Fig Yourself

I would follow this food truck through the desert for forty years. The Go Fig Yourself is the greatest sandwich I have ever eaten. The flavors all mix perfectly to create something rich, luxurious, and absolutely divine. Because of the fig jam and the caramelized onions, it's sweet, so it's more of a dessert, but that just means you get to order a second sandwich to eat as your entree! I love to start with The Vatican without pepperoni because I'm a vegetarian, but I'm sure it's delicious with pepperoni for you meat-eaters! It's like if pizza and a sandwich had a baby! The tomato bisque is creamy, flavorful, and comes with big, garlicky croutons. I can't think of a more perfect meal than a couple of grilled cheese sandwiches and a good tomato bisque! I have found the best food truck in Colorado, and its name is What Would Cheesus Do! Hallelujah!

Cheeses was watching you serve this? wish we could say that rye for the Ruben, but really, it's just burnt...

Sad experience. Paid $18 for a Reuben that's burnt beyond belief. This was a to go order and didn't see the condition until we got home. Clearly the person serving it knew the condition. So much for doing the right thing...

The Pope HOUSE MADE PESTO, TURKEY, SLICED TOMATOES, MOZZARELLA & BALSAMIC REDUCTION DRIZZLE

Full of flavor. The gooiest cheese. Perfectly toasted bread. Ever changing menu. All words to describe the goodness that is this food truck! At Finn's manor, I had the pleasure of sampling a new menu item - The Pope - which featured turkey, homemade pesto, sliced tomatoes, mozzarella and balsamic reduction drizzle! TO DIE FOR. I'm a sucker for all things balsamic, and this truck serves it up in a variety of ways! The truck is found all over Denver (check out their website or instagram for deets!) , and never disappoints! i can't wait to try more! :) Oh, and the cutest little half truck is parked at Finn's - lit up and ready to serve up the best grilled cheese yet!

Holy guacamole with turkey added!

I had the chance to try out yet another one of Denver's many food trucks this past weekend at the Bloody Mary Festival and I was not disappointed. I mean how could you be disappointed with a gourmet grilled cheese concoction and a bloody mary?! They have some really creatively named menu items including the Baby Cheesus, Church Bellas, and The Vatican. Puns galore which is totally my style! I tried the Holy Guacamole with turkey added (per the suggestion on the sign). It was super tasty. Cheddar, bacon, guacamole, tomato, plus turkey?! Yeah that's a winning combo if I ever heard it. Only bummer was that I think they were just a bit overwhelmed by the amount of people at this fest. I probably waited 30 minutes total (from time in line to getting my order). I didn't mind the wait that much, but several other people made snarky comments about it. I look forward to checking them out again outside of a fest, to get a better taste of how awesome they really are!

Amazing cheese sandwiches. The Go Fig Yourself had Brie, Fig Jam, Granny Smith Apples and caramelized onions. So good.

The "Church Bellas" and "Messy Jess" are unreal. This is my favorite food truck in Denver. (Plus one of the friendliest.)

Underwhelming... Food was okay but a bit pricey for what you get. Not much cheese and very little meat.

The borscht is the star: deep, rich flavor, tender grass-fed beef, and a generous portion served with sour cream, fresh garlic cloves, and a warm bread roll on the side. That's exactly how it should be done. The okroshka is just as good: cold, refreshing, perfectly balanced, and you can choose kvass or kefir. Portions are big enough that a bowl alone feels like a full meal. These two soups are my always-order dishes, no question. The vareniki are honestly super amazing too. Eleven soft potato dumplings with sour cream, comforting and filling. Prices are very fair for the portion size, and you can tell everything is made with care. The hospitality is warm and welcoming, the dining room is cozy with matryoshka dolls, a beautiful samovar, and classic Russian paintings on the walls, and the restrooms are clean, which says a lot about a place. Don't skip the dessert case either; the macarons and peach cookies look incredible. If you miss authentic Russian-style food or just want to try something new, this is the place. Open Tuesday through Sunday, 12 to 8, closed Mondays. Five stars, and I'll definitely be back soon for another bowl!

First visit to this location. And I hadn't had Capriotti's in a looooong time. They have FRIES now! Woohoo! They're FLAT. Which is interesting. Capriotti's doesn't have gluten-free bread. The nice lady said that they're working on it. She offered me a choice of a cup or lettuce. I decided on the cup. And ordered fries because no carbs from bread. Win-win! She also gave me a small discount, because I wasn't getting bread. That was so nice! I decided to try the Impossible cheesesteak. Oooh. It needed more cheese, but I got mushrooms, onions, and sweet peppers. It was served in a cup. I have to admit, that was pretty funny. I doused everything with Cholula. Yum!!! I ordered a medium, and couldn't finish it. I have gluten-free baguettes and wraps at home, so that's why I got a medium instead of a small. Did finish all the fries. While they aren't my favorite, they were good. I really prefer greasy, crispy crinkle fries. But these weren't dry. Just lacked real flavor. It's a nice, clean space, much like Highlands Ranch. It's right next to Carrera's, near Pinterest. I hope that they do add a gluten-free option soon! Eating a cheesesteak from a cup just wasn't the same, lol.

My only complaint is the price! They are very expensive sandwiches. Some are worth the price, others not so much. The last time I went there I ordered 4 sandwiches and as I left with what I thought was all my food, they called to inform me they forgot a sandwich. I was annoyed and headed back and upon arriving, which mind you I arrived 10 minutes after they called me they just started making it, so I had to wait even longer. They offered no partial refund or any compensation for my wasted time or gas. Very unprofessional!! These sandwiches are good, but they get soggy right away!! You legit better be prepared to eat the second the give it to you, even then it still is usually soggy. I'm sure I might be back, but for now I have a sour taste in my mouth especially after the high price tag and for what I got.
