Pastries are arranged beautifully under cloches in the display case, but I could spot the premade, ready-to-bake spinach feta bistro (https://www.chefswarehouse.com/products/QZ119984/) or ham and cheese croissant (https://www.chefswarehouse.com/products/99971/) from a mile away. The avocado spread on the preassembled breakfast sandwiches is definitely the pulp from the 3lb bag from Chef's Warehouse too. I know that taste! All of that said, they had a few items in the case that I'm sure weren't from one of these big vendors. Which was great to see. My (yes, unsolicited!) advice would be to pare down the menu. Offer just a bit less so you can focus on the quality. Try and tap into some local producers if you can! That's one of the best things about the Hudson Valley... how much all the purveyors and markets and cafes support each other. It's clear too how much they care about the community. They're dog friendly inside. No WiFi to encourage people to chat with one another. Fine. I really want to see this place continue to thrive, it's just a bit of a bummer that a significant part of the menu including things that really should be fresh, aren't.

The fella that greeted us upon entering was nice and helpful in guiding our selections. The bagels were fresh and as good as any NYC bagel I have ever eaten. My family and I couldn't have been happier with our visit. The only downside was the limited amount of indoor seating available, but that's not a complaint--rather, just something to know if you're planning of stopping in for a bagel. If the weather is cold, the outdoor seating isn't likely an option. I highly recommend Hudson Bagels! If I ever make it back to Hudson, I'll visit this shop again! :-)

When I asked about another item, he looked annoyed and said it should be written there. I pointed out that these looked like the lunch menu, and that's when his attitude changed. He wasn't necessarily rude, but he definitely wasn't as welcoming or hospitable as he could've been--especially at 8:30 in the morning.

The bread, airy and light, beautifully happy yeast just bounding with lift, defying the constraints of olive oil which left my fingers gloriously glistening. I haven't had a focaccia as happy as that in a minute. Super thin radish, bright pickled shallot and fresh watercress all gave a nice vibrant touch. Ben's cream cheese couldn't possibly be creamier. And the delicate, silky, fresh, luxurious salmon... What a dream. So balanced. I filled my arms with goods- iberico salami, Aleppo chili oil, Blackstrap coffee beans, local chocolates, and an adorable Talbott & Arding puzzle.
