Now first off, don't get me wrong, buying in bulk or sacrificing the quality of some ingredients to large suppliers like this is definitely a reality when running a restaurant. Even moreso in this day and age when ingredient prices are exorbitant. That said, it needs to be reflected in the price point. Pastries are arranged beautifully under cloches in the display case, but I could spot the premade, ready-to-bake spinach feta bistro (https://www.chefswarehouse.com/products/QZ119984/) or ham and cheese croissant (https://www.chefswarehouse.com/products/99971/) from a mile away. The avocado spread on the preassembled breakfast sandwiches is definitely the pulp from the 3lb bag from Chef's Warehouse too. I know that taste! All of that said, they had a few items in the case that I'm sure weren't from one of these big vendors. Which was great to see. My (yes, unsolicited!) advice would be to pare down the menu. Offer just a bit less so you can focus on the quality. Try and tap into some local producers if you can! That's one of the best things about the Hudson Valley... how much all the purveyors and markets and cafes support each other. It's clear too how much they care about the community. They're dog friendly inside. No WiFi to encourage people to chat with one another. Fine. I really want to see this place continue to thrive, it's just a bit of a bummer that a significant part of the menu including things that really should be fresh, aren't.

It was crumbly and slightly gritty, as corn pastries tend to be. It wasn't too sweet. Although I'm glad I tried it, the cookie pales in comparison to the cruller, which was deliciously sweet, with crisp edges and a soft, custardy interior. The sandwich was great, as well. The eggs were fluffy, the bun soft, the bacon thick and crisp. It was good! If you're visiting Hudson, make this your first stop!

You can get the whole chicken, half or quarter. For me, quarter was more than enough. If you get a quarter chicken, you get two sides. If you get half a chicken, then you get three sides. For sides, they offer crispy fingerling potatoes, cole slaw, market salad and butter rice. Their Cole slaw is amazing with that poppyseed dressing. And salad had a variety of greens and crunchy toppings with a light dressing. Also! The plate comes with two sauces - spicy chili oil (mild) and yogurt dip. It was all SO FREAKING GOOD. I'm a dipper so bring on the sauce! The drink offering is also abundant. Lots of craft sodas, botanical drinks, coffees and a full bar in the back. Ghia hit the spot for me. It's not cheap but for this quality of food it's more than worth it. For the vibe..it's a confused vibe. You order at the counter and sit down with a number to wait for your food. The decor is eclectic which I thought was fun. But the music.. it went from country to weird edm dance music. I think Kittys can gain a lot from a curated playlist. Sitting there I felt curious and excited to be immersed more but it wasn't giving.

Food-wise, we got the Spicy Greens + Eggs and the Boo Boo Breakfast Biscuit. Sorry, I didn't take a photo of the Spicy Greens + Eggs and only remembered to snap a pic of the Boo Boo after I had already deconstructed it a bit. The food was good, but the biscuit stood out the most since it tasted fresh and homemade. Even though the place had a nice, chill vibe, I couldn't give it a higher rating because the service could've used some work. You walk up to the counter and see the menu written on the walls, but the breakfast items didn't have any descriptions. When we asked what was in one item, the worker looked at us and said everything was written in the handheld menu cards in front of us. So we picked up the menus--only to notice that nothing matched. When I asked about another item, he looked annoyed and said it should be written there. I pointed out that these looked like the lunch menu, and that's when his attitude changed. He wasn't necessarily rude, but he definitely wasn't as welcoming or hospitable as he could've been--especially at 8:30 in the morning.

But it's the cool scene at nights and special events for those who travel that lane, generally non-CC residents observing bumkinhood from the lofty perch that is Brooklyn.

Talbott & Arding was chosen as our first stop on our girls' getaway journey. Tucked in the Hudson Valley, just an hour from the Berkshires, it was a sweetly energetic beginning to our day. We each chose a sandwich from the counter. My smoked salmon on focaccia was a delight. The bread, airy and light, beautifully happy yeast just bounding with lift, defying the constraints of olive oil which left my fingers gloriously glistening. I haven't had a focaccia as happy as that in a minute. Super thin radish, bright pickled shallot and fresh watercress all gave a nice vibrant touch. Ben's cream cheese couldn't possibly be creamier. And the delicate, silky, fresh, luxurious salmon... What a dream. So balanced. I filled my arms with goods- iberico salami, Aleppo chili oil, Blackstrap coffee beans, local chocolates, and an adorable Talbott & Arding puzzle. I'm sure I could have easily convinced myself to buy just about everything I laid my eyes upon. The cheese counter was an absolute work of art. It's clear that Talbott & Arding is a willing servant to the gifts of the surrounding earth and people. The homage it pays is palpable. Our stop at Talbott & Arding set the tone for an intentional, peaceful, vibrant, cozy, delicious, connected trip. I'll be back immediately.

Love the cheese and charcuterie, and they now carry Mel the Bakery bread for a one-stop A++ food shop in Hudson! Great for lunch in-house, or grab and go prepared sandwiches, foccacia pizza, salads galore! Good local food producers represented in refrigerator and freezer cases. With that and the prepared food case, it's so convenient and delicious to pick up a few items to complete a nutritious home meal. Oh and they are connected to and big boosters of Slow Food Hudson Valley. Feel good about where a large chunk o' your discretionary spending goes!
