The ribeye was on the thinner side with very little marbling and was pre-packaged on styrofoam, which was unusual I thought (used to butcher paper, maybe just me - not a huge deal just seemed like something a small grocery store would do). This butcher has been on my short list for a while thanks to its recent fame in the Hoagie Gurus Facebook group, where their Old World Italian has become something of a legend. After finally making the trip, I can confidently say it deserves every bit of that buzz. We stopped in on a Saturday around lunchtime and the place had a steady flow of customers. My wife and I ordered the Old World Italian hoagie along with a hot roast beef and gravy grinder that was running as a special. While we waited, the staff was incredibly nice and helpful, and we took some time to browse their butcher case. Everything looked fantastic, and we ended up leaving with several packs of house made sausages that were too interesting to pass up, including a chicken crab cake sausage and a brisket cheddar. After a short wait, our subs were ready and they were both absolute units. Since they have a few two tops for the lunch crowd, we did not even make it to the car before digging in. The Old World Italian was exactly what I hoped for. Piled high with Italian meats and cheeses, sharp provolone, roasted red peppers, and prosciutto, all served on a sturdy yet soft seeded roll. The meats were perfectly layered so every bite was balanced and flavorful. No dead spots, no overwhelming salt bombs, just a beautifully constructed hoagie.
