The pastries here are so good. I had the brown butter chocolate chip cookie which had a great texture and a nice balance. The coconut guava scone was delicious! It was almost like a cookie. It was thin with soft frosting on top, and a layer of guava in the middle. The only bummer was that they don't offer a warm up of your pastries. The coffee was alright. The only coffee shop open early (before 10am) for coffee and breakfast in Seabrook WA. You order at their order window and they will call your name at the pick up window and you can take them to go or go inside and get yourself a table to sit down. Note it is all self service inside with a water station, cute decor, local goods, and some games too. They had limited breakfast options but plenty of pastries and apparently known for the cruffin (croissant in the shape of a muffin - which my toddler daughter thoroughly enjoyed and reluctantly shared with me) My breakfast sandwich was filling and my husband really enjoyed his everything but bagel baguette sandwich. Vista Bakeshop was so great we had breakfast here every day while we were staying near there. You need to get there early, the lines can be long and they do run out of some of the best items. We had out dog with us so we could not see the interior, but it looked very nice and comfortable. You queue up outside to order. They have many items you can look at in the window, but they have other items on the menu. As far as the drinks, I rotated between the chai latte and the London Fog. The London fog was interesting with Earl Gray tea and vanilla syrup. My wife had the Americano and loved that also. Then I usually had a savory and sweet dish for breakfast. The sandwiches were all good, but think I liked the regular breakfast sandwich the most with really good bacon and bread. I absolutely loved the sweet choices which rotated. The croissants are outstanding--I think the best was an almond (on the one day I could get it). The blueberry muffin was insanely good also. Absolutely worth a visit. read more

I'm not sure what the holdup was, but the 'order here' window operation was so slow. By the time we got our food (jalapeño scone, cruffin, and lox baguette), we were ravenous. I keep coming back for the chocolate & toffee brown butter cookie. The cookie is thin, crispy, yet soft/ chewy in the middle. Due to the brown butter, the sides get thin and crispy. It's so good. I've tried lemon crinkle cookie, it had a great texture to it and has a light lemon flavor. At $3 a cookie. I noticed when I order the chocolate/toffee cookie, they would give 2. Probably cos its thinner compared to the other cookies. You order at the window for some baked goods or coffee to start or end your day. While the homemade bread was tasty, it was a bit hard and a little challenging to eat, which was the only downfall for me. The sandwiches are dry, they take a long time to prepare the simplest item even when they're not busy, and the workers treat you like it's an imposition when you place an order. In a world where so many coffee shops buy frozen, pre-packaged baked goods, Vista Bakeshop bucks the trend and bakes everything from scratch - and it tastes amazing. Over the past week, I tried their ham and cheese croissant, sugared cruffin, chocolate bread pudding, and cinnamon bun, and every single one was scrumptious and fresh-tasting. None were overly sweet, and the puff pastry-style dough was always crispy and flakey (in a good way!). I also got chai tea lattes daily, and they were on point. They don't sweeten them by default, and it allows the natural flavors to shine through. Overall, a great little spot for breakfast treats with friendly, helpful staff. If I had one piece of feedback, it would be for them to get a toaster oven or some way to heat up the pastries; they taste great as-is, but warmed up they would be elevated to the next level. For all the overpriced comments: you're in a planned beach town where everything is expensive and marked up (rentals, food, shops, etc). It's that way at all of these developments. Huge disappointment. So rude, Rude, rude. With great anticipation we drove to Seabrook, Vista Bakeshop. Our goal was to obtain two chocolate croissants. We placed our order and decided to purchase a loaf of bread as well. We paid cash and lady handed us a big brown bag. We headed out for a short drive up to Pacific Beach to check the ocean views and then then on our way home we decided to stop at Copalis Beach store for some produce. I opened the bag to add the tomato I purchased and was surprised to not find the two croissants. I tried calling the bakery, but not enough bars on my phone as this place is kinda remote. So we decided to turn around and make the drive back to the bakery again, only to find out they were sold out of chocolate croissant. They actually sold those croissants twice! And they knew it! The other girl at the window was looking at me and you could tell she was worried because she knew she had sold them twice. A f they knew we didn't get our croissants, couldn't they have set them aside knowing we would eventually come back to get them when we discovered they were missing? They instead they sold them twice! With no explanation and no apology the woman started scrolling on her iPad. I had to ask what she was doing. She was searching for our cash transaction to verify we did pay for the croissant. ‍ I mean, really? Both my husband and myself are senior citizens and found her treatment very rude. She never offered another baked item in exchange. She gave us our cash back and basically walked away from me as fast as she could. No apology, no sympathy, no here's a free cookie and I'm sorry that happened, no apology for our inconvenience. We do like their croissants but..... it will be difficult for us to return for this kind of service ever again. We drove a long way to be treated rudely and without satisfactory resolution or even a simple smile or any empathy. They make the quintessential croissant that's both crispy and soft, with a gazillion layers of buttery goodness. There are tasty variations, like the cruffin, the chocolate croissant, and the savory ham and cheese croissant. My personal favorite is the date and candied bacon croissant. This little place is a gem of Seabrook. It's really the only gem, since there's no other place to get coffee and pastries so early in the morning. It was love at first bite! SETTING- The place is like the rest of Seabrook-- spotless, gorgeous, friendly, and thoutfully designed! FOOD- My family ordered.... -Cinnamon rolls... and had to go back the next day for more. That still wasn't enough. They use croissant dough, and while I can see the lamination (layers) on the outside, the crumb inside is more tender and chewy than a traditional croissant. (I've eaten some in France.) We LOVED the crusty carmelization on the edges, as the flavor was devine and it contrasted beautifully with the soft inside. It didn't feel greasy or overwhelmingly buttery, like many American croissant products. They are pricey at $6 each, plus a buck for a container of cream cheese. -Toffee cookies - tender, with a rich, browned butter flavor, and the right amount of semi-sweet chocolate. Finally a bakery cookie that's not too sweet. They are $3 a piece. -Almond croissant- We didn't find almond flavor except when munching on the almond slivers. They were sliced in half but we didn't taste or see anything inside. We really, REALLY miss the bakery that was here previously!!! Tons of bakery options- all delicious-and a good number of them produced, so they still had a great selection even after 10am. I still dream about their ham and Swiss croissants. So when we heard a new bakery was coming in, we were a bit sad, but optimistic. We visited Vista and they literally had 3 baked goods on display and a lot of empty plates on the shelves. We were there pretty early, but we heard afterwards that they only bake a few items each day. We were there for 3 days and I think we were only able to get a loaf of bread and 1 cookie the entire time we were there. When we returned this year, they had expanded into the shop next door and we were looking forward to a much bigger selection...but quite disappointed to see the sad little display. They definitely need to double up on making the pasties and cruffins! I was lucky to get a cruffin (the last one!) one of the 4 days we we're there. At noon they basically had only had pretzels and plain bread. I understand that more isn't always better, but it's definitely the case here. I saw a few people look at the display case and Just left leave empty-handed afterwards. Plus, the cashier could have been a bit friendlier. I feel so lucky that we were able to experience the previous bakery as much as we did. BUT I just now looked the up -Red Velvet Bakery by the Sea- and apparently they have a shop in Olympia!!!
