This is a gluten free review. Vinovium was a total surprise find! It's in town in Johnson City, a nice property with indoor and outdoor seating. We stopped in for lunch, and our server was great - when I told her I have gluten allergy, she said no problem and showed me all of the menu items they could make to accommodate. (Which was most of it.) We had sandwiches - I had the veggie monster. It was SO good! Everything on the menu comes with wine pairing suggestions too. read more

First time to visit at their new location in Johnson City. We enjoyed their sangria. The Mezza Board was a feast for the senses; the Juliette feta dip was rich and flavorful and the hummus tasted freshly made. My wife loved the citrus marinated olives. Good service without the pretentiousness of a winery tasting room. read more

A gem in downtown Johnson City! We stopped by their new location and were impressed from start to finish. The hours are convenient, the space is welcoming, and the food is exceptional. Don't miss the Morty D -- served on thin, flaky focaccia, it's one of the best sandwiches we've had in the Hill Country. We also tried the Cab Franc, which was smooth, well-balanced, and a perfect pairing for a relaxed afternoon. The staff, including the owner, made us feel right at home. Friendly, passionate, and clearly committed to creating something special. This spot is a must-visit for anyone looking for a truly local wine and food experience in the Hill Country. read more

Let me start by saying that we stumbled upon this place. We were on our way out of town and decided to stop for lunch. What a happy happenstance! We ordered a Greek salad and a Morty sandwich. We were so surprised we could order delicious wine along with our food. As a bonus, we met the owner, Daniel, who was not only kind but extremely knowledgeable of all things wine. What a warm, hospitable place! The food was delicious and the portions were so generous we couldn't finish our lunch. Needless to say we will be coming by every time we are even remotely close. It is delicious and definitely worth the drive. I only wish we had a place like this close to us. Truly, this place is amazing. You would be foolish to pass it up. It is a great place to have happy hour too! read more

Okay, let's get into it! Location- right off of 290 between Hye and Johnson City. I loved this location. They have an amazing patio area. It's really beautiful a great place. The inside is just as nice. They had some great trees forbus to park under for shade. Service- I came with a group on a wine tour they offered us gumbo that they had available. They were fairly nice as well. Packing / products- Taste- this was a bonus stop on our tour so I didn't have an opportunity to taste any wine but those with me really enjoyed the wines. Overall- This is definitely on my list for a revisit. This place was so chill and my speed. A great place to rent out for an event honestly! read more

Super friendly server and great location. This is a fun winery that advertises a lot of events and offers "wine cocktails" which my wife really enjoyed. It is keg wine so it comes out of spouts on the wall and they fill a bottle for you if you buy one. This was different and I don't know enough about wine to know if it helps or not. I really liked the laid back feel. This doesn't have the pho-Tuscan Vegas facade that some of the bigger places have put up, but it is a fun lil hill country spot with a good sized deck, small indoor area and lots of shade to play corn hole or let kids run around. The wine was good - we shared a tasting which is what we usually do before buying a glass - each was a good sized pour and I thought they were going to charge us for two but good sized pour is just how they roll. Plan to return for sure! read more

Cozy winery tucked away. Dog friendly even though I didn't get to meet the resident winery dog. I got the cocktail sampler for $18 and it was a great deal. You practically get 4 drinks. My favorite is probably the white cattywampus (sangria) and my bf enjoyed the margarita. Their wine is unique here because they have them in steel canisters and tap it that way. I know I'm probably describing this wrong, so more reason to check it out! read more

This was an unplanned, spontaneous stop on my most recent visit to the Texas/290 Wine Trail. I was not disappointed. I've seen this place from the roadway for many years, but I thought it was more of a party place because it advertised how late they stay open. They may be a party place, but I was still impressed. While there, my friend and I were the only patrons. We had a nice visit with the server (who was the owner, maybe?). He was super nice and knowledgeable. We wound up eating lunch there and buying a few bottles. It's a different sort of place for sure, but our experience was nice. They also have resident dogs and cats that we got to hang with. Vinovium is a real standout amongst the growing list of wineries and tasting rooms along 290. My wife and I have visited many of them since buying a house in the area over a year ago. What I love about Vinovium are all the great events they put on. From lounge takeovers, where winemakers give tastings of their wine, to stand-up comedy, to Trivia nights. The owner and staff are all super welcoming and so knowledgeable about wine. They've got a large selection of rotating wines on tap and you can get a bottle filled there to take home that can be brought back to reduce on waste, which is another plus in my book. We'd only visited a couple times before we were sold on joining their membership club. And since then we've enjoyed hanging out and feeling like we're part of the family. Trivia night was such a blast. And it's on the same night as their Prime rib dinner which was out of this world - check out my pictures. For a change of pace from your ordinary winery/wine bar, I highly recommend a visit. There's really no other place like this around here. read more

I highly recommend this place to anyone looking for something good and a bit different in Texas wine country. They have some amazing wine...on tap! Do not pass up the Columbia Valley Gewürztraminer--it's refreshing and delicious in all the right ways. They also have wine cocktails. No liquor. Just wine. And they are fantastic! I suggest the El Niño, it's similar to a Dark & Stormy. The Old fashioned one is good too. Did I mention they were open late?!?! On a final note, I have to say that the bartender Tori is amazing! She ran a busy Saturday night on Easter weekend like it was nothing and took fantastic care of our group (all service industry veterans). Not worth the stop. We came as part of a wine tour and this was our worst stop. They were rude to my friends who paid for drinks and bottles of wine (separate from what was offered with the tour) and would not allow them to sit with us because we came as part of the tour and the table was for "paying guests". Additionally food was withheld from our group, but they explained it was because they could make $15 a plate off of other guests. It was just a bit tacky to explain it that way and made us uncomfortable. On a more positive note, I thought a couple of wines were good, but given the competition in the area and the blatant price gouging, I would take my business elsewhere. read more

History

Established in 2012.

Established in 2012, Vinovium has always been about bringing people together over great wine. We received our state and federal wine permits in March 2013 and in March 2016, we found our home in Johnson City, purchasing 30 acres along Highway 290, where we built and opened The Lounge over July 4th weekend that same year. In 2024, we embraced a new chapter, moving to downtown Johnson City and evolving into Your Neighborhood Winery—a place where locals and visitors alike can experience approachable, high-quality wines in a relaxed setting. While our location has changed, our commitment to community, collaboration, and the spirit of Texas wine remains the same. Whether you’re stopping by for a tasting, picking up a bottle, or simply unwinding with friends, we’re here to make wine an easy, enjoyable part of your day. We walked into Proof of Cooper to look at the menu, we were greeted by lovely smells of cooking coming from the kitchen. This was the place for us. We ordered an Old Fashion and a Peach Fashioned. My Old Fashion was perfect! Great balance of whisky and sweetness. My wife really enjoyed her Peach fashioned. The menu has a lot of variety, Texas favorites for sure. It was hard to choose. We were told they did their BBQ out back, this restaurant does not look like your typical BBQ place. The bar is home town but the dining room is Hunting club rustic. To order, I had the smoked turkey club on Texas toast with green beans, my wife had the BBQ sample plate with Mac and cheese & pit master beans. Her meat choices were brisket, pulled pork and spare ribs. My sandwich was great! The bread was toasted just right, the turkey has a nice smoky flavor with ham and bacon. Loved the green beans. Then I stole some of the pit master beans off my wife's plate. Oh some dam good. And so was the Mac and cheese. Brisket and pulled pork were tender, flavorful and just right, on par with some of the best bbq places I have eaten at here in Texas. Spare ribs were too firm for my wife but I enjoyed them. The staff was wonderful. Very helpful, nice and fun to work with. This is a family owned restaurant and the staff that we met were all born and raised here. We look forward to coming back to Johnson City and visiting Proof of Cooper again. If just to try the delicious looking desserts we had no room for, see our photos.

Let me first say I wish this establishment well, and hope they have success in their endeavors…read more I was in centex to visit daughter, and suggested a bbq tour of the small towns west of Aus. We arrived at P&C mid afternoon on a Monday. We were touring this and other towns, so only ordered the pulled pork sandwich, side of mac n cheese and side of mashed potatoes w gravy between the two of us. And some extra bbq sauce on the side. The pulled pork sandw comes premade with what looks to be homemade pickles, smoked pulled pork, coleslaw, & bbq sauce. The presentation is fairly impressive. Unfortunately, the taste did not measure up. We had bites of the sandwich as a whole, and also tasted the individual ingred by themself to get a feel for what contributed to the overall. The pulled pork was hit/miss. Some of it was generously smoked & that smokiness came through. Other bites of it the smoked flavor was not prominent. Mac n Cheese - solid. By far the best thing we tried. Super cheesy, flavorful. Nice work! Coleslaw - substandard. I'd say the C range. Pickles on the sandwich - they were thicker and appeared homemade. They didn't seem like they had been left to sit long enough on the shelf for the pickling to soak in. In appearance they were still very close to cucumbers instead of pickled cucumbers. Flavor wise they didn't taste like cukes, but nor did they add a dill-ish or sweet pickle flavor of substance. (Can see the pickles in attached pic, can see the color and texture doesn't look significantly pickled.) Sauce - extremely little flavor. The consistency was not watery, but you had to close your eyes and concentrate to taste what little flavor there was - as though it was watered down immensely. Sauce gets a D. Mashed potatoes & gravy. They served the gravy on the side. The potatoes themselves were good - a little buttery and therefore enjoyable. The consistency of the gravy was mealy - was unexpected, and odd. Lacked the common flavor of a hearty gravy begun with a roux of flour and meat drippings. (Zoom in on attached photo, you can see the mealy and almost-grainy texture of the gravy.) Overall we weren't impressed. The mac n cheese being the best thing is not what you expect at a bbq place. Like I said, we wish the establishment well. But we wouldn't come back when in Johnson City. Final note, the hostess/server was genuinely warm and friendly. She was wearing multiple hats, running around, but was pleasant and engaging.

The bartender who served us our wines acted a little off put to have been bothered. She gave me a very brief but trying explanation of their wine selection. Two small pours of wine: $34. My mom went with the daily special: Sour Cream Chicken Enchiladas. I went with a two meat plate with chicken and turkey. Green beans and potato salad on the side. The food came out quickly and it was hot. My mom's enchiladas were stuffed full of chicken and looked good. She liked them enough. My plate was just ok. The turkey and chicken weren't bad - juicy and tasty enough. The green beans and potato salad weren't bad. Tasted like something you would get at a church barbecue. The fixings area was okay - stocked with pickles, jalapeños, and weirdly cut chunks of onion. The menu is very extensive, but lacks explanations of the uncommon offerings. There isn't any more menu guidance on the website, either. What comes on the nachos? What comes on the combo sandwiches or flatbreads? I guess you can ask but that could drag out the ordering process on a busy day. All in all, not bad. Not wowing, but not bad.

The spacious patio and lovely views overlooking the vineyard make it an especially relaxing place to spend an afternoon. I came for the summer tasting event and I'm so glad I did! It's about a little under a hour's drive from Austin for me, but I had a free Sunday and the drive was really enjoyable, so it was definitely worth it especially since the wine was pretty good. For the tasting, the Cab Franc was the standout for me and I even ended up buying a bottle to take home. Honestly though, pretty much all of the reds were enjoyable. My server was friendly and attentive and even let me try a few wines that weren't included in my tasting, which I really appreciated. I also had the chance to meet one of the owners Daniel, who was incredibly friendly and introduced me to the in-house chef who makes the oven-fired pizzas. Seriously, don't skip the pizzas! They're still working on bringing the winery to its full potential, but based on my experience, I'll definitely be back the next time I'm in the Hill Country area.

Great hospitality and vibes all around, but not my favorite wines.

THE BLACK AND WHITE: The wife and I came here after our pickup party at another winery. The winery name is based off of the owners two children. For a tasting, it was a selection of four wines and then a full glass that you can revisit. The winery is also in the motion of building out a brewery so I can expect this spot to be bumping in the next couple of months. The ambiance was nice inside and they had these cool tables that made sand artwork. For the tasting, we got sangiovese, tempranillo, cabernet sauvignon and a pinot gris. We revisited the tempranillo. Delicious wines and we got to see the production facility for our last pour. THE FINAL BAMBOO: Overall a tasting here set us back around $38. Great ambiance and vibes and if you're in the area, definitely give this place a try.
