We walked in here on a whim and that was the best decision we made this morning! We got two Vietnamese coffees (husband had to get another after seeing mine), beef stew and the vegan wontons with bok choy and pumpkin noodles. The noodles were sumptuous and quite unlike I had ever tasted before. The veggie wontons I believe are a family recipe and whoever says vegetarian food can't be good, should eat these wontons. The noodles with a bit of wonton and the bok choy all coated in delicious chili oil was the perfect bite that I'll savor and think about for a long time. The husband's beef stew was beautifully crafted with a depth of flavor and tender pieces of meat and carrots. With that came the best possible baguette to sop up all that wonderful stew. Dustin and Yen (the couple that runs the place) are warm, inviting and enterprising people. Eating here seems like eating in their home where every item is made with the utmost love and attention. They have an expansive and creative drink menu as well which have nonalcoholic options. The menu changes every day which is fun and something to look forward to each visit. Great experience! I saw a photo of the beef stew on yelp and it looked delicious so our family of 4 decided to try it out. So glad we did. The owner couple are the chef, waiter, bartender and everything else. Their passion shows in the service and the quality of the menu. The menu is changed daily so the ingredients are fresh. I was lucky the beef stew was on the menu for the day and it was the better than I had imagined! We also got the seafood soup and there was nothing left at the end. First, where has this restaurant been my whole life? I absolutely love it. It is small bit cozy, open but happy and the owners are salt of the Earth. We have been a few times and the cocktails literally brought us back, with friends, for the food. The artisan cocktails, the selection of hard to find spirits and the ambience are inviting and friendly without being pretentious. Second, the food!!! Omgosh. There is only one chef doing the cooking and she is bringing only her family recipes and heart. You can taste the love. So rare to taste the love these days. I have had a lot on this menu and continue to come back. I am a soup snob and I have to say, the soups are incredibly complex and delicious and warm and lovely. The flavors of Vietnam come through in a way that is approachable and makes you want to come back. Yen is the chef and one of the owners. The wait is worth it. I'm not always persuaded by rave reviews because too often they favor Americanized, dumbed-down versions of meals. Not that I know how Vietnamese food should taste, but I loved eating here so much I'm whole heartedly joining the rave. Yen is a fabulous chef, and Dustin presents her food with real warmth and understanding. VEx is truly an experience in the way dining should be. I tried the shrimp and pork vermicelli with vegetables; the shrimp was deliciously grilled and the vegetables were so fresh they were to me the star of the dish (cilantro, bean sprouts, cucumbers, shiso leaves). The sauces were served on the side so I could add them to suit my taste. The spicy wontons were indeed excellent. I'd happily consume them as a main course, but I'm glad we ordered them as an appetizer. My spouse ate the beef stew with zest. I did steal a taste of the gravy that had just a hint of star anise, enough to convince me that this was an elevated beef stew. Lychee juice went so well with this meal. I'd like to try the liquor sometime but would need advice on what paired with which dish. Or maybe a rice wine? The restaurant is beautifully decorated. Soooooo good!!! I'll preface with "I'm a texture person". The wontons & baby bok choy were delicious, nothing soggy or too crunchy, with the just the right amount of heat. For the Pho, the meatballs had great flavor and consistency, the beef was falling off the bones, and the noodles were perfectly al dente. Just the smell alone when you walk in the door mmm... yummy!
