The spicy carnitas tacos are actually spicy. Major bonus points there... nothing worse than false advertising. I thought the tacos were good... they are gringo tacos with cheese and lettuce on top. Nothing wrong with that but not my top option. We had the cheese quesadillas and I was a little disappointed because I felt like the tortillas were severely dried out. It's such an important element of the dish that you can't afford to mess it up. Another great mobile food truck in the Boulder area. Loves it! The Verde truck is more of a traditional food truck, with the recessed side/vending area. Its loaded with snacks, chips, canned drinks for purchase as well as Mexican food made fresh to order. (Tasty too!) Their prices are great and def the most affordable of all the food trucks I've come across in Boulder. I also love that they usually stay parked in one area for 4+ hours, so you don't miss them. They showed up and provided a very simple menu that was meant for the wedding. Chicken, Beef, Pork, and Veggie tacos that hit the spot and was great! Having eaten Mexican from many food trucks in many places I can easily say that Verde is at the top and number 1 in Boulder! This truck would do well in San Diego on any day. Had: Chips and salsa 2.5 Chicken burrito 6.5 Side of Jalapeno crème 1.5 The chips came with the two salsas, green and a red, both were fresh and semi-spicy. I enjoyed the red a bit more. The chips were nothing special but were fine for street food. The chicken burrito was a generous portion size and consisted of a soft tortilla stuffed with rice, beans, salsa, and a good amount of chicken. The chicken was cooked well and had flavor. The jalapeno crème was a delicious accompaniment. It brings a good deal of spice and flavor to the burrito. The food truck staff were friendly and the food came out fast and hot. Last night was the first night open of the new brick and mortar restaurant on 28th. Had the chicken tacos, mexican street corn and the hot dog sliders. All were great. The pulled chicken was flavored well and I always appreciate house-made corn tortillas! I had high hopes for the B&M version of one of my favorite food trucks. I've eaten there twice and have, so far, been disappointed. Our lunch visit included Guacamole & Chips, Shrimp Ceviche and their Crispy Mexi-pizza thing. It's kind of like an open face quesadilla. First, the chips. I didn't like them because they reminded me all too much of deep fried flour tortillas. Crumbly and bland. I thought they were flour but the staff there told me they were 100% flour. Maybe they were but they sure weren't made from masa. Guac was okay...too much lemon though. Ceviche was bland the the chunks were too big to stay on the chips. Dice that stuff up a bit more kids! The crispy Mexi-pizza thing was the best thing with freshly grilled veggies and shredded chicken. The chx was really good but the chef needs to spice the veggies while they're being grilled. The salsa were good but I would mind if they had one that was a bit hotter. Everyone was super nice and the service was good. Dinner was a bit more chaotic. I'll give them the benefit of the doubt of a new operation and not mark them down yet on their service but they do need to step it up a bit. My friend ordered tacos. $4.00, yikes! That's alot for a street taco. Sure, they were loaded but that just made them hard to pick up and eat. Again, all the meats except the chx was pretty bland. I ordered the asada fajitas with high hopes. They came out on a beautiful sizzling plate. THe veggie were plentiful and expertly grilled to the perfect "al dente" that I love and there was tons of asada that was perfectly cooked. But, and that's a big but, the whole plate was flavorless. It's like they'd never heard of salt. Or pepper. Or chipotle. WTF? There wasn't even any salt on the table. I took most of it home and sauteed it up the next day with some spices. Much better. The tortilla they supplied was a huge flour tort and was folded up in quarters. It was okay when I tore pieces off and folded it around the filling. It reminded me of the giant bread you get at an Ethiopean restaurant. Oh...the margaritas were terrible. Buy a beer instead. I love the ambiance but these guys need to step it up on the food. As a California native, I am SOOOOO offended by Verde's $10 "California" Burrito. It was inedible and after one bite, I ended up throwing it away. It was filled with huge chunks of chewy beef and I think the "salsa" that was in it was some sort of green chile? Super yuck. And where's the french fries?! Last night a group a friends and I decided to try them at the 29th street mall dancing at the mall event. We ordered chips and guac, 3 chicken burritos and 1 bean burrito. Initially we were only unsatisfied with was the flavorless food that was served to us. Soooo bland I'm not even joking. It wasn't for a few hours later when i went home that the effects of their meal truly hit. Lets just say the effects were ... Food poisonings finest. The next day I called my friends and they all went through the same thing later in the evening. I doubt this has been limited to just me and my group of friends. Love their bean and cheese burritos. Pretty basic but good enough to soothe my inner burrito addict. Their hottest salsa isn't very spicy but melds well with the smokey beans. Their guacamole is $2 but absolutely worth it. When I think of mexican food especially in a food truck I think carne asada burrito packed with meat, guacamole, and salsa. I ordered the carne asada burrito and it had rice, beans, some meat. It tastes like a bigger version of a burrito you can get at Taco Bell overpriced. If your looking for the street kind of tacos with true mexican flavor I would not recommend this place. If you're looking to get a Taco Bell fix and the food truck is closer than the nearest Taco Bell then by all means this is the food truck for you. The chicken was well prepared and that was the only tasty part of my meal (I've given them 3 tries). I was really hoping to like the food here...I mean at first sight, a cool lime-green food truck boasting authentic Mexican food, it has to be good right? They had a simple menu with burritos, tacos, and quesadillas so you would think they must have it down to the science. Three things that disappointed me are the food was overpriced, the prices on their menu page online isn't the same as the menu posted on the truck, and the burritos reminded very much of the microwaveable burritos you can get at 7-eleven except Verdes has whole beans vice refried beans that are typical the in microwaveable kind....and at $9 for a "California" burrito...I could of gotten at least 5 burritos at a vending machine and it would taste closely the same. I used to live in San Diego where there were hundreds of Mexican joints to choose from...bottom line is my least desired Mexican place to eat in San Diego is still better than Verde. I gave it two stars because I was very hungry when I went there and it did fill me up. read more

The worst burrito bowl I've had since summer camp as a kid.

I'm from Tucson AZ and was visiting Boulder last week. Decided to try Verde, and it was the best Mexican food I've had in Colorado. The tortillas were freshly made on premises, and that enhanced everything. Our party tried the cheese crisp and Sonoran hot dog sliders for starters; I had a chimichanga for my entree and followed with churros for dessert. The churros weren't on the menu, but my server suggested them. The came with two sauces and were excellent. In fact, all the food was excellent - on a par, if not better than, the food I'm used to in Tucson. Good work Verde! read more

Been coming to this food truck at the CU campus every Tuesday now for a couple months. I look forward to this lunch each Tuesday. My favorite items are the fried cheese tacos and the green chile carnitas burritos. If you have never tried Verde out, you absolutely need to! I read the reviews and figured would invite my family to try a new place; it was good but not everything others make it out to be. I liked their stake as it was juicy and the size of burrito was OK for the price, staff and believe owner were attentive but I'd suggest adding some salsa or something more to burrito. I had the California burrito. I was not looking or expecting authentic but flavorful and delicious which fell short of what I imagined from reading the reviews. I would have to say the worst part of the whole experience was on way out the stare of boulderites whom apparently have either not seen or not too fond of ethnic people. I've always wanted to try the Verde truck - it's eye catching so I imagined the food would be outstanding, or at least palatable. I ordered a burrito bowl with carne asada. It came in a 3x5 red checkered cheap cafeteria type cardboard container, and was unrecognizable as a burrito bowl. The dish was covered with cheap shredded cheese that looked and tasted like the lowest quality shredded cheese that you can find packaged at the grocery store. The lettuce was wilted and slimy. I was starving so I tried to eat it but couldn't actually look at it and had to take some extreme measures to keep both the slimy lettuce and cheap packaged cheese from touching my mouth. The 5 or so pieces of carne asada were favorable but seriously - I payed $10 for five small chunks of carne asada in a cardboard bowl of slime? Definitely not a good experience!! read more

I went Friday at happy hour at sat at the bar. I ordered a happy Margarita w/salt on the rocks and it was tasty for $ 5 a good deal. Then I ordered some nachos, which were also very tasty. I opted to try the $ 5 pitcher of good local craft beer. I would go back again to try some more food. Love that it is close by. read more
