All in, it came to around $200. The guacamole is a real standout. The camote asado (charred sweet potatoes) is my favorite - great char, well-seasoned. The lemon rice that comes with the fish was also great. One genuinely great thing about this place: everything is gluten-free, which makes it an easy pick whenever family visits since a few of them can't do gluten. That said, I'm personally a big flour-tortilla person, so if that's your preference too, just know this isn't that, but I still really enjoy coming here regardless. He also had a dish of rice and beans to supplement the taco plate. I think I would have that taco plate myself next time though I always have enjoyed the grilled fish tacos I had again this time. The yellow corn tortillas are grilled which gives them extra stability to build your own taco with a bowl full of ingredients. I love that I can use as much or as little of the collection on each tortilla. Note, tonight the cauliflower bites were very, very spicy but not the rest of the slaw. We were told to "sit anywhere," but the only clean tables available were high tops and we wanted a booth, so we waited for the busser, who moved at a pace that honestly felt unbelievable. He seemed to be clearing tables one cup and one plate at a time, walking each item individually back to the kitchen. It was painfully inefficient. It was obvious both he and the girl at the bar saw us standing there waiting for a booth to be cleared, but nobody seemed concerned about it. Eventually the table was finally cleared, but then it sat there dirty for a long time without being wiped down. At that point we just sat anyway, assuming someone would quickly come over and clean it once they saw guests sitting there. In most restaurants, that's standard. Not here. After waiting even longer, I finally asked for a rag so I could wipe the table down myself. The response I got back was rude: "Why don't you just sit at one of the tables that's already clear?" That pretty much sealed it for us. The vibe was off from the second we walked in, and you could feel the lack of care throughout the whole place. At that point we didn't even want to order food because it already felt like the experience was headed downhill. We got up and left. Honestly, I'm glad we did. Service and atmosphere usually reflect what's happening behind the scenes, and I had zero confidence the food experience would've been any different. After leaving, we went to El Centro instead and had a much better experience. I'd recommend choosing that over this place any day of the week. Giving people a good dining experience really isn't that complicated. Sometimes it honestly feels like restaurant staff have never gone out to eat themselves and experienced what good hospitality actually feels like. Unfortunately this place completely missed the mark. We won't be back, and I wouldn't recommend it.

Stopped into the restaurant, which I was excited to try. They have done a very nice job with the inside. It is way more inviting than the outside would suggest. We ordered 2 burritos to go. We sat at the bar while we waited. It was early, so there were not many people in the restaurant. The staff seemed friendly enough, but not engaging. We took our food, in the to go containers. We should have checked them before we left. Neither burrito was smothered in green chile, which we paid an extra $3 for. My son ordered rice and beans - another $3, which were not given to us, either. The food itself was just OK, although the containers were mislabeled. A lot of potatoes in my burrito (not a lot of carne asada), which some people may prefer. My son ordered a carnitas burrito, and was given a mostly bean burrito, again not smothered in green chile. I called to let them know about the errors and the woman apologized and offered to correct it, but we did not have time to go back. Love this truck!!!!!! Best quesadilla I've ever had!! These guys are killing it on the grill and made me the tastiest, crispest and biggest quesadilla ever. I kept it simple with just cheese, requested some veggies and it came loaded with colorful and tasty seasoned vegetables. Couldn't have asked for more! My girlfriend got tacos and inhaled them before I even got to try - an obvious testament to their amazingness. We went for a second time on a Saturday night at Upslope brewery to put the burritos to the test. We were NOT disappointed! The burrito came with rice, beans and salsa which I requested and came complimentary. The pork was spicy and flavorful with a good portion size. The chips and salsa came with standard tortilla chips and two types of salsa. One spicy green and one mild red which they said was homemade. Verde is flat out Colorado's best Mexican food. From their fresh homemade everything ranging from their salsa, guacamole, rice, beans and various meats, Verde is amazingly flavorful. I would highly recommend the shredded beef aka machaca, the carne asada in either a burrito or quesadilla form. They have amazing flour tortillas and their salsa is flavorful and packs a punch. I had a fantastic California burrito at the Verde Food Truck. The Carne Asada was very tasty and flavorful.. However the fresh guacamole made the burrito stand above any burrito I have had for quite some time. Add that to the home made salsa that adds even more flavor and a little kick.
