    Boyfriend's favorite: Binulo

I surprised my boyfriend on his birthday by bringing him to Gallery VASK last 2014. My boyfriend and I love food - he was a chef while I just love good food and service. We received a very warm welcome from Janine who was thoughtful enough to call me earlier to ask about allergies. As soon as we were seated, a foreigner staff (whose name I completely forgot) proceeded to explain the Lakbay menu and how Chef Chele came up with it. He was very amiable and engaging - explaining with gusto the story behind every dish as it was served. Every dish was excellently done. My favorite was the Beer Urchin, while my boyfriend couldn't stop raving about the Binulo. That Beer Urchin is by far the best sea urchin dish I have ever tasted and the Binulo was simple yet mind-blowing. The staff was also kind enough to tour us in their show kitchen and show how each dish was made. Every dish was meticulously and lovingly done! The birthday boy thoroughly enjoyed the surprise so much that he raved about it to his family, friends, and former culinary colleagues for months! Months!! We even celebrated our anniversary in VASK tapas and enjoyed it too! Thank you to the wonderful staff of Gallery VASK and VASK for their excellent food and service. My boyfriend and I wholeheartedly believe that you deserve to be one of Asia's 50 Best Restaurants. I am sure that one day you'll get that #1 spot! We will visit again soon! This time we will try the Alamat menu and bring some friends!

    It's an art gallery too!

It's been a while since the restaurant Vask opened in Manila and I only got to try it a month ago. I've always been skeptical when restaurants like these open because I always have high expectations for them and I'm scared I'll just get let down. First of all, the restaurant is a beauty on its own, very well designed and their art work all over was great! The outside deck was a cherry on top since I love outdoor dining areas! My mom and I started our dinner with a cocktail here then headed inside, definitely a treat for us! The menu was very impressive with a lot to choose from. We ordered a few appetizers and the pork for the main course (we were a party of 4). The food turned out pretty good, it wasn't a disappointment but it was a little hyped up. I'd give more points to the experience and the ambiance than the actual food (it wasn't bad though!). I wouldn't mind coming back here, I can see why it's a special occasion place for many people I know!

I've celebrated two anniversaries at VASK's Gallery, and will probably spend a third one there this year. I took my parents to their Dining Room for Christmas dinner, and have had drinks with friends at the Deck. I recommended my friend take some very important clients to the Curve, and they had an awesome time. I love VASK - its four concepts and its entirety. I am blown away by its vision and execution in Manila, and believe it will play a part in our gastronomic scene's unfolding. The Gallery is truly something special. This is the 20-seater room that is, naturally, a gallery of art and also the head chef Chele Gonzalez's cuisine. (He's spent time in the kitchens of El Bulli, Arzak, and Mugaritz - all Michelin-star restaurants in Spain.) It was here that I experienced the Beer Urchin - uni, beer foam, orange essences, and powderized foie gras - and wanted more. I also had a recreated isaw, made of potato and shrimp that tasted just like the real thing. The degustation menus usually come in 10, 12, or 14-dish set options, and while they don't come cheap, they are definitely worth it. At the Dining Room, I must order the Wagyu carpaccio with Parmesan ice cream or my night isn't complete. It's absolutely awesome and surprising, but not too out of this world. For traditionalists, the bacalao and boquerones will not disappoint. I tend to go on the adventurous side and also always get the foie gras on mango toast when I'm dining with first-timers. Love food with playful textures? Get the grilled barramundi with pork ragout! Other than that, check out the fork and spoon see saw at the Deck and give it a go after a couple of signature cocktails. I usually get the Bilbao, a Jack and Pepsi concoction. At the Curve, they have indulgent choices of oysters, foie gras, and caviar on their menu because it's fashioned as the champagne lounge of the VASK concept. One time they were passing around "cherry tomatoes," and it was the best cherry tomato I ever had in my life, because it turned out to be made of foie gras. Oh em gee. I honestly judge people who don't get why VASK is great.

Vask's Gallery - in a hands-down, No-I-didn't-stutter, I-never-say-this-about-anywhere voice - is my favorite restaurant in the city. It is the source of almost all of the culinary surprises I've experienced since moving to the Philippines. They provide the type of moments that make you look at a well-known cuisine with fresh eyes or appreciate an ingredient for an entirely new reason. I still remember the first time I had their sous-vide chicken. I've studied sous-vide (thank you, Thomas Keller.) I've had the imitators who turn the technique into a gimmick. With the first bite, I knew this was a special place that nailed the technique with an authentic curiosity. I was immediately excited for the effect this restaurant would have on the Manila-restaurant landscape. For your next intimate special occasion, go to the Gallery. They don't just provide a setting for your celebration. They are an active participant that adds meaning and defines memories when you look back on your special day.

VASK is one of those places that I would go to every night if only it wouldn't bankrupt me. But that isn't to say that the price isn't worth it. If you are in the mood to have a party in your mouth, then this is the place to go. Walking in, the ambiance is already set thanks to the modern furniture, the tasteful art, and the great mood lighting. The great thing about VASK is it's a great place for both the dinner and the drinks that come afterwards. Have your dinner in the indoor dining area, then head on outside to the outdoor patio so you can enjoy some of their unique cocktails and the great view. You won't even realize how much time has passed just sitting there, enjoying the drinks, the company, and the view.

I absolutely love tapas! This is what I enjoyed most about traveling around Spain. Small, bite sized samples of food, making them light and easy to eat. I love it when meals turn into culinary journeys as you taste each ingredient as flavors mix together. In my opinion, although Vask serves beautifully presented food, the value for money is not quite worth it. The tasting menus are good, but nothing blew me away. I have to give them credit as the presentation of their food is always top notch. I ordered the Huevos con Txistorra which was a 62° sous vide egg, chistorra chorizo, breadcrumbs, mushrooms, topped with truffle oil. After reading and ordering it from the menu, I was almost drooling. However, after trying it, I was largely disappointed. Don't get me wrong, everything was pretty good, but I have had better food in tapas places both here in Manila and in Spain.

She loved it so much that she brought the family there for Sunday bonding. I found the place to be homey and cozy. It looked like a bricked house and once you've settled in a table, you'd feel like you're really in Spain. The music and ambiance really suite the whole theme. And don't get me started with the food! We ordered different things for the family to try and I must say that the food was good! We ordered the Paella Valenciana which is the flavor/variant we all know of. We also ordered the Caldo Gallego which was a hearty soup composed of beef, chicken, beans, vegetables and Spanish chorizo. We had the Salpicao, Croquetas and Bacalao ala Vizcaina (cod in tomato sauce). All of those dishes were really good! To end the meal, we ordered Sangria and partnered it with Bandeja de Jamon, Chorizo Y Quezo which was a platter of cold cuts, hams and cheese. The restaurant definitely captured the taste of Spain. I found it to be a great place to be with a big group or even just a one on one intimate dinner. The vibe for me was great. My overall experience in Calderon was pleasant! I would recommend Spanish cuisine lovers to drop by and try the food!

Honestly though we weren't expecting that much since it was only a neighborhood joint and we suspected would not offer Spanish dishes quite as authentic and fresh as those we've had in more expensive restaurants, but boy were we wrong. Calderon is fantastic. Their flavors was bold and their dishes though made with simple ingredients really pack a punch. The place is cozy and warm, the décor classic and earthy. The food offered is classic Spanish and we ordered salpicao, paella, gambas, and croquettas, all staple Spanish food. I was blown away by how tasty and great everything was. The tapas options are killer. I could honestly go home with a pot filled with their salpicao and just gorge on that and rice for a week. The ultimate test (at least for my mom) was their paella and it did not disappoint it was flavorful, salty, packed with meat and veggies. Calderon is certainly a must-try!

Usually, I go here after a long day and just sit at the bar. I order my beer, watch a bit of TV then head home. Simple. No noisy gossip, no blaring dance music... just a big ass beer and basketball on the TV. The food is pretty decent. It's just a bit heavy for me if I'm here alone. I recommend the Spam Chips! Love those! The sausages are good too. But, seriously, you're here for the beer and you can't go wrong with a draft beer. They have flavored beers for the girls. If you're looking for something sweet to drink, I recommend the Caramel Beer. They have promos for every day of the week. For example, they have Girl's Night Out Wednesdays. Ladies get Buy 1, Take 1 on all cocktails and wine. On Thirsty Thursdays, my personal fave, all their available foreign beers are only Php100. NICE! If you're feeling the oldie bug and want a chill night, this is THE place to go! Who knows, maybe you'll see me sitting by the bar when you visit. ;)

Perhaps not the widest selection, ever, but pretty good for a bar that I can walk to. But, being somewhat of a buffalo wings connoisseur, I couldn't help but give theirs a try. I wasn't expecting much, but I was pleasantly surprised at how much I liked their recipe! I like my wings a little sour, and this hit the spot perfectly. Maybe a bit too spicy for my taste (although, I'm not complaining), but it is great for a quick buffalo wings fix. Look for Rachel -- she's the server who is stationed by the door. At least during the evenings. She'll take care of you.
