Wow! Enjoyed our anniversary dinner here -- left with full bellies and no regrets! Started with the bone marrow appetizer and a Caesar salad. Fantastic! I had the Gulf Red Snapper for my entree and my husband ordered the surf and turf special (wagyu in mushroom sauce with lobster tail). We had the brussel sprouts and lobster Mac and cheese as our shared sides. Also fantastic! So much lobster in the Mac and cheese! The snapper was topped with lump crabmeat which was not mentioned on the menu description (an added bonus)! Between our appetizers and dinner, we were served fresh homemade bread. For dessert, we ordered the crème brûlée -- the sugar topping was a little chewy but still so flavorful and creamy. They also gave us a small tiramisu for our anniversary dessert. Service was great. Celebrating my husband's birthday with his annual "birthday steak". We happened to be staying in Galveston Texas and had been waiting for an opportunity to try this place. The food: steaks were tender, mac and cheese was creamy and delicious and the brussel sprouts with squash was tasty. And the bread pudding was very good. The staff is very friendly and attentive. The thing to pay attention to is the synchronized service. Drinks are poured simultaneously for all guests at the table. Plates are placed before all guests simultaneously. This happens with two or ten! The decor is fancy, upscale. The lighting is low and dining feels private, as the tables are spaced well apart. You can't hear other conversations. Got to have another experience at Vargas this past weekend and I was not as wow'd as I was the first time. Things seemed to be lacking flavor. The stand outs of the night were the friend lobster deviled eggs and of course the crab cake which is still the best crab cake I've had in Texas. For my main I got the redfish with the lobster cream sauce pasta and it was just so bland. All the sauce tasted like was butter and oil. And the fish was fresh for sure but I wish it was blackened. The sides we got were pretty good. My family is a big fan of the steak fries and onion but I wasn't really a fan. There just seemed to be a lack of seasoning this night on everything. The creamed spinach and Brussels sprouts were good. I got a Manhattan as my cocktail which was nice and we split a bottle Of wine. They gave my parents a tiramisu cake to celebrate their anniversary and We got a creme brûlée to go and it was a nice treat to end the night read more

Ok, Aundre was AMAZING! He guided our meal, cocktails and more from beginning to end, absolutely superb! We had three adults and wanted to share, we had salad, lobster bisque, a filet and the redfish. We thought we were just getting an extra plate and we would settle it, we were presented with this beautiful lazy susan, so nice. Every single item was delicious. The pasta accompanying the red fish was delicious, the Sophia Mac and Cheese, creamy and perfect. Lump crab, medium rare filet. We could not have had a more delicious meal. Knowledgeable staff and they present the food and drinks at the same time and with a little pizazz. Tried the fried green tomatoes with lump crab meat this time. Great shareable app. I also switched up my normal filet with the bone in pork chop. So tender and well seasoned. It's one of the few entrees that comes with sides. Most are a la carte. I finally had a special occasion and an opportunity to dine at Vargas. And what a special treat it was! Talk about feeling pampered and taken care of! We had a total party of 6. Our server, Peter, was outstanding! When they come to bring out appetizer's or the main course, each person's food is delivered at the same time - choreographed! How fun is that!?! Vargas Cut & Catch provides their patrons with a dining experience so memorable that it has been a month since my last visit, and I am still raving about it. I have also found myself comparing every steakhouse I have visited in the last month to Vargas, but no one comes even close to beating it. From the way that the waiter unfolds the napkin for you to place on your lap, to the synchronized dining service style (and synchronized cocktail pouring), to the delicious steak and sides, it was all spectacular. Also, Marko was beyond attentive and personable - it was a pleasure to have a waiter like him, it truly enhanced our dining experience. The service is top-notch and the best on the island. I almost licked my bowl of lobster bisque it was so delicious and better than anything I've had on the East Coast. We were celebrating our anniversary and the staff went out of their way to make it special for us. The service needs a major upgrade. I've never been treated so terribly by such an expensive restaurant, nor have I been so mistreated by a restaurant that is less expensive. The service was absolutely unacceptable. For the price of the items here, I expected top tier service. That is not at all what I received. Soon after our table of 8 was seated, 4 of the 8 water glasses were filled. 10-15 minutes later, the rest of the water glasses were filled, except for mine. Why? I have no idea. Then, someone at the table ordered wine. I asked for water. Another 5-10 minutes passed, and the wine was presented to the table. I still did not have water (or anything to drink) and a friend requested water for me (this is the second ask). The wine was served, my boyfriend asked for my water to be filled (this is the 3rd ask at this point). 5 minutes or so later; I FINALLY got my FIRST glass of water for the evening. Then, bread was brought to the table...only one basket, which was not enough for each person at the table to have one piece. 6 out of 8 people were able to indulge, but because it was placed on the opposite side of the table from us, my boyfriend and I did not get any, as there was no more from the one single basket that the table was given. The waiter did not return until the appetizers were served, so there was no chance to ask for another bread basket. At one point, I left the table for the restroom. Upon my return, a staff member picked up my napkin. I assumed he would place it on my lap, as they had done upon arrival. Nope. Instead, he took it and never brought one back. I then had to request a new one. Other people left the table throughout the night and their napkins were neatly folded by the staff and left waiting for their return, as expected, so I don't know why mine was taken away and not replaced. 3 of the 4 couples ordered appetizers. We all ran out of the crackers that accompanied and were necessary to properly enjoy the app, so they brought a new bowl of crackers to the table. But guess what! They again only brought enough for one side of the table and placed them on the opposite side, so we got none. Overall, I was extremely disappointed with the service and I've honestly had better steak (and most certainly better service) at less expensive restaurants. Very disappointing experience. If you're expecting to get what you pay for, I do NOT recommend this restaurant. I'm not sure how they are so highly rated. I could not wait for dinner to be over so that I could leave. We will likely never return. read more

Went here on a March vacation. It's a very nice place. Be sure to bring your dress clothes. They have a dress code and there were some very nicely dressed people so you will want to match. The service was very good. It was fun to watch the waiters parade to a table with all of the entrees or drinks at once. I had the Chilean sea bass special. It was amazing. The sea bass was cooked perfectly, slightly crisp on the edges and buttery yum in the middle. It was on a bed of mashed potatoes and had a great sauce on the top that was a bit lemony like a light hollandaise sauce. There was a lot of crab on the top. I typically dont like crab, but this was high quality and did not detract from the meal. The green beans were good. There were also a few grape tomatoes on the side that had an interesting sauce in them, perhaps a marinara. It was the perfect meal! My daughter had the filet. It was cooked perfectly and was tender. The only negative was the seasoning was a bit mild. I like a little more seasoning. The lobster Mac was yummy with large chunks of lobster. The lobster was very chewy though. The baked potato was huge. I've ordered potatoes from places like this before and they are usually half the size. However, there was so much cheese in the potato, it was hard to find potato. Overall, I would definitely get the fish at this place before the steak. However it was all good. My only negative here was that they Nickel and Dimed you. I don't expect that when paying these prices already. My daughter got a Shirley temple (sprite with a little grenadine) and they charged her for a refill. I've never been charged for a refill of a Shirley temple anywhere. We also asked for extra sour cream and they charged $1.50 for it. Poor for Vargas. read more

From start to finish, the service, food and ambiance were excellent. We reserved the Chef's Table which was an extra treat for my husband's birthday. The assistant GM, Anthony, was very accommodating, even when I changed the time of our reservation the day of! From the Chef's table you get a front row seat to the staff's preparation for synchronized serving - fun to watch! Our waiter, Aundre, gave us the best service throughout the night. We ordered Oysters Rockefeller, Caeser salad, Lobster bisque (AMAZING! perfect flavor and not too heavy), Tenderloin Filet with blue cheese fondue (to die for), Red Snapper (very yummy), and chocolate cake. Along with the tenderloin, they served a few small cherry tomatoes as garnish - I wouldn't normally comment on tomatoes, but OMG they were marinated in something and so delicious. We closed out Galveston Restaurant Week(s) with our first visit to Vargas Cut & Catch. A great experience and we would definitely return. Excellent service and nice relaxed pace of dining. My martini, 21XX I think it was called, had X-rated (a liquor I had never heard of and was almost afraid to Google on my work phone- haha), Malibu pineapple, mango and passion fruit. Super delicious. Our server Alexandra went into great detail on all the expensive specials and I almost felt bad telling her we wanted the restaurant week menu after she spent all that time explaining the specials. The Caesar salad was one of the best I have had. Creamy dressing, lettuce chopped up well, a good amount of shaved parmesan, and homemade croutons. My husband's lobster bisque was wonderful as well. Salmon was cooked perfectly but was a little underseasoned. If there had been salt on the table I would have added some. The lemon dill cream sauce was perfect. Potatoes were delicious with plenty of butter. The lemon tart for dessert was underwhelming. The crust was so hard it was difficult to cut and a piece actually flew into my lap. Reminded me of the fancy restaurant scene with the escargot in Pretty Woman. The lemon curd filling was a little overly tart also. The tables next to us had some amazing looking desserts and I was having a little dessert envy. Definitely want to try a few of the other options in future. Vargas Cut & Catch is one of my favorite places to eat in Galveston and is a must visit anytime I am in the area. My wife and I visited recently and had a wonderful experience. We started our meal with a Snow Crab Martini. Fresh, cool and meaty tender crab claws and giant shrimp were served with creamy crisp coleslaw, diced avocado and crisp plantain chips. Next we had a second appetizer, Black Sesame Ahi Tuna. The tuna was cool, fresh, topped with crisp sesame seeds and paired with a creamy sauce. I cannot visit Vargas without ordering the Lobster Bisque which is the best I have ever had. Fresh tender lumps of lobster meat swim in a flavorful, briny, lightly sweet and creamy broth. For my entrée I ordered the Gulf Red Snapper (even though it was very difficult to not order the steak). The fish was tender, meaty, seasoned, nicely seared, topped with fresh tender lump crab and sat on a bed of light creamy pasta. Finally for dessert I had the Cheesecake which was super creamy but light with a crisp crème brulee topping, crunchy graham crust at the bottom and paired with juicy berries. Overall, Vargas is the perfect spot for a high quality fine dining experience with phenomenal food. read more
