Found this fantastic food truck just below the Navajo dam on the San Juan River in a sleepy little town in far north west New Mexico. We had been out fly fishing the San Juan River for a long day. We unload at the fly shop and we are starved. One of the guides tells us about the pulled pork BBQ sandwich from this little food truck. Our interest is enhanced. We go in to settle up our bill with the fly shop, and he recommend this food truck! Thank you sir! Pulled pork sandwich is what to try here! My fly fishing equipment is ready on a moments notice, but to order one of these sandwiches is even higher on my list! And only a moment after we decided we'd get a package of Lumpia to make at home, we noticed the new food counter--took a split-second to decide to dine-in instead of cook at home--a no brainer, really. So, we both ordered the Snack Combo #1 (Lumpia + Fruit Tea for $8.95) and while the hubs ordered Dragonfruit Tea, I opted for an 'upgrade' to Rose Milk Tea ($1 extra). With a green straw, mine looked pleasantly seasonal and tasted delish (dragonfruit was yummy, too)! The new cozy dining area has a pleasant ambiance with several booths and a few smaller tables and it was encouraging to see so many customers ordering food, turns out this has only been an option for three weeks. With two things to note (personal preference?) the green chile was chopped into half inch by half in squares so smaller bits would have been better as far as texture goes for me.
