This review specifically addresses shipped coffee ordered from the web site, as I have never been in the cafe. I order from roasters all over North America and love trying new roasters that are recommended, so I was excited to try Theory after reading about the acclaim they have received for their beans. I ordered three bags. Two were whole bean as desired, but the third was ground coarse. I have never ordered ground coffee from a roaster before, and I am not sure why my order was modified. I grind only at brew time, never in advance, and the coarse grind does not work for the pour-over methods I use that require a medium to medium-fine grind. While the coffees I tried were well above average, my inquiries about the error in my order were completely ignored, and that is the basis for my review: four stars for the coffee, zero stars for customer service, for a net two star rating. I've become used to getting absolutely fantastic service from virtually every local roaster I have tried in recent years, and it is rather shocking to come across one that cannot even be bothered to respond to my inquiry. Even if they were not willing to make good on the error, it would be nice to actually get acknowledged as a customer who spent $50 on beans. Update: Within two hours of posting this review, I magically received an email from production in which I was offered the opportunity to spend more money with Theory for a 20% discount, which I declined. I wanted nothing more than what I paid for: a replacement for the one incorrect item in my order. Since Theory would not work with me, I tried to salvage what they had sent me by digging up an old French press, but the coffee they sent was so coarse that it didn't even work well for French press, which calls for the coarsest of grinds. In other words, this coffee would have been useless to ANY customer, not just me. There are too many great roasters out there who take care of their customers to spend hard-earned money with one that does not. It is absolutely mind-numbing to me that a business would rather be "right" and lose a repeat customer than to replace $20 worth of coffee and make an impression by giving a new customer the benefit of the doubt. I hope that other customers have better experiences than I did. read more

I had the beans from theory at another roaster so I was looking forward to going to their shop. Got two of their seasonal's: The Fall was made very well the apple cider was a wonderful touch and made an overall great latte Eggnog foam nitro cold brew was not that great. Not enough foam to balance out the flavor profile, it tasted like a nitro cold brew if a splash of egg nog was added on accident. Seasonals are hit or misses. This place is great! I was in town for the week visiting my folks and I spent a couple of hours every day at a local coffee place to do some remote working. Of all the places I visited, I think Theory is my favorite. They have your standard drip coffee and espresso beverages (made from beans they roast in house). But what I love are the more unique drinks like their soda espresso or matchacano. I ordered an espresso tonic and it was the perfect beverage to have on this 103 degree day. I also got their caprese croissant and it was a single serving of pesto-y, cheesy, and flaky goodness. Don't miss out on the entire back area with multiple work tables and couches. read more

I'm glad I stopped by on our temporary passing in Redding. I thoroughly enjoyed my Nitro Horchata Cold Brew from this coffeeshop! I saw Horchata and knew I must try it!! I thought the decor inside was particularly noteworthy and could tell they put in effort and time make the space look unique and carry some cool furniture. The baristas and workers were all very friendly and welcoming and in time of COVID-19, all workers were wearing masks safely as well. The cold brew was very smooth, and it had good flavor. They added a slide of orange to the cold brew, which I thought was interesting. I traveled into Redding for work and this cafe happened to be walking distance from my hotel. Admittedly I came here because it was 4.5 stars on Yelp and I wanted to try a local shop rather than going to Dutch Bros or Sbux. I received a friendly greeting when I walked through the door and was directed toward the Fall seasonal menu. I was in the mood to try something new so I went for butter beer latte and added shots. As I'm writing this I'm about halfway through it and it definitely does not disappoint. Send my sweet so if sweetness isn't your thing maybe go for something else but it hits the spot on a cool morning like this one. I wish I was staying in town longer to try more of their selection. Stopped here to order a cappuccino before continuing our drive back to the Bay Area. The location was very busy, and the decor was very sleek and clean. Really enjoyed learning more about the Modbar espresso machines that allowed their baristas to interact with customers without being obstructed by the machine. They gave us a choice of an Ethiopian blend or their house blend. I chose their house blend for the cappuccino, and it tasted wonderful! They were right about the notes of chocolate in the blend, and I appreciated the latte art that they tried to do. Will definitely stop here again if I need coffee in Redding. read more

We had two oat milk Lattes, and I had an additional straight espresso so I could taste it without other flavors. Each was very good. We had the breakfast sandwich and these too were excellent. We took a lemon pastry and a blueberry pastry for our trip back to the Bay Area. The lemon pastry was high art and excellent quality; the blueberry walnut was good. The staff were friendly. The espresso was excellent. The pastries were excellent. The service was good. Only one disappointment, but it is worth noting: I found the coffee bean prices excessive. This is not LA or Manhattan or San Francisco, it's Redding, where coffee bean prices ought to be more modest. At Theory, they are not. In fact, I found them more expensive than most prices in the San Francisco Bay Area and Los Angeles. There is serious competitive vulnerability to a coffee roaster that is immodest in its bean pricing. This roaster is (or should be) making good profit on its retail production. And, there is still good margin available in more reasonably priced beans. I am used to major metro pricing and I wanted to buy some beans, but they were just too pricey, even for a sophisticated buyer. This should tell this roaster something important about their bean pricing. read more

Cute coffee shop with a nice ambience, came during COVID-19 time so we weren't allowed to sit indoors, otherwise it would be very cosy! they do provide some outdoor seating which was also comfortable, so our visit was still pleasant. Okay now let's talk the F&B. Our party ordered hot latte, ice latte with maple syrup, kouign amann, and brownies. Everything was great! Really recommend the ice latte with maple syrup if you want an alternative to regular sugared ice latte. What an awesome coffee shop. I came in during a rainy day and it was so vibrant-- the energy was definitely needed. Not only did the energy came from the guests but also the employees. They were very friendly and provided recommendations if need be. They had a lot of holiday drinks (wished I took a photo) but ended up getting a iced matcha latte since I don't drink coffee (I know... I miss it though). Wasn't able to try the food but looked delicious. The drinks were on the pricey side but were delicious. The shop was quite large and had a back part with high tables and long tables for a larger group. Saw groups of people play cards and a couple of people on their laptops working. *Out of towner warning* A cross between Starbucks and your normal hipster coffee boutique. So like, a coffee Urban Outfitters. The coffee and food were no better than Starbucks IMO and pricing felt more aligned with atmosphere than taste. My oat milk cappuccino was not very hot and the espresso taste was lacking and a bit acidic. I kept tasting it wanting to like it. We also got an americano (also not the most palatable for us), blueberry scone (fine but also not great), and veggie quiche (fine, albeit kinda bland but also served barely warm). The vibes are nice though, with a large artsy space and friendly enough baristas. I say enough because maybe I'm used to more of the SoCal friend vibes? For Norcal they could be considered the friendliest of friendlies? Don't know. But it's a decent place to fuel up on a pit stop, plug away at some work, use a clean potty, etc. But don't think you'll be blown away. read more

Okay, so we just did a week long trip - drove around all three national parks starting from Redding - to Redwoods, up to Crater Lake, back down to Lassen. Man I was so let down with this place. We went on Wednesday, December 30th and it was very busy inside with people standing at the window counter just a couple feet from the line to order all of which were not wearing masks. Then we noticed the 2 men in front of us were waiting to order and also not wearing masks. They walked right up to the counter and were helped. Pretty let down in the way Theory is choosing to ignore public health guidelines during the holidays and a rapid surge in covid19. I could look past the people after ordering totally not being required to socially distance or wear masks, but blatantly helping people who haven't even ordered yet and have no mask is super lame. The Theory employee should have asked those guys to grab masks and come back. We left and chose not to support this business because of the way they're basically not handling recommendations for safe distancing and not requiring customers to wear masks during a pandemic. They have signs on their door that say they do this, but they actually don't. Hope Theory coffee starts making better guidelines for safe distancing within their shop and outlines a plan for their employees to handle similar scenarios and provides a safe atmosphere for customers. read more
