I cherish retail, know times are hard, and wish the manager (owner?) seemed more aware that customer happiness is, kind of, pivotal. She is bitter and prideful - her own worst enemy. A retail space in the beautiful new Atrium it's bathed in light with high ceilings and almost floor to ceiling glass front windows. With cooking classes, and a full kitchen, this is sure to become a great spot to spend your time. They have a ton of excellent quality kitchen tools, a small but good selection of cook books (unless I maybe missed some?) and a lovely selection of locally produced food items. I chatted with a really friendly girl at the counter about how their new shop was doing and she was excited to tell me about their success and the things they offered. I somehow managed to leave empty handed, but this is a great new addition to the Victoria food scene, and sure to inspire curious cooks to be more creative, better equipped, and very well fed. They are embracing local food, seasonal ingredients, and looking to serve the local food community, which earns them a solid five stars.

It would appear that: 1) Bestechman's supplier had made a defective bearing, 2) bearing was assembled into a knife and 3) the errors weren't detected after assembly. Bestechman Customer Service, in China, were very frustrating to deal with. Emails were not responded too. Even had a buddy in China try to phone them several times (no answer). Ok, cutting boards are something I never really thought about before finding out about Legacy Wood…read moreCrafts. I thought you just buy a cheapo board at the cooking supply shop, or if you want to splurge you pay a bit more. A no brainer. That was until I saw these boards! These folks make the most unique and interesting cutting boards I have seen. You really have to see the beautiful figured maple boards, where every piece is unique. The boards are hand oiled with 100% tung oil and a cheese cloth, yielding a perfect food safe surface that lasts a really long time. They go by the name "Maple Magic" as well. They started out by using salvaged fir scraps that were left after milling huge beams in BC that were used for temples in Japan. They then expanded into using Western Broadleaf Maple as well. They dry the wood without using a kiln in natural dehumidification rooms. They do all of their milling on a small kerf band mill to reduce waste. You can sometimes find them setup at various Farmer's markets around town. I got one of their large boards about 2 years ago, and have been incredibly happy. It has 3 smooth sides, and 1 side that is left with natural rough edges that have been waxed. It is an incredibly unique piece that everyone that sees it comments on. But every piece they have would get the same comments. Really nice products! They also guarantee the boards and will even re-sand them for you if they get too chopped up over the years of usage. Haven't needed to do that yet, as it holds up really well to a very sharp chef's knife. I love these boards!
