Walking into The Warren feels like stepping straight into the pages of a storybook. The space is absolutely stunning--warm wood tones, cozy nooks, bookshelves, and lighting that makes you want to curl up and stay awhile. It has all the character and charm of Silverton itself, but elevated with a magical, welcoming touch. The food is nothing short of incredible. I had The Chicky Boom sandwich, and the flavors were perfectly balanced--complex, smoky, and delicious. My husband ordered The Warren Bánh Mì, and it was just as amazing, layered with rich, savory flavors and the perfect crunch. Every bite felt like it was crafted with intention and love. The drinks were just as memorable. Our server, Thai, brought such warmth and care to the experience and served us some of the most delicious drinks. The hibiscus limeade was bright and fun, and the hot coffee called "Oh My God Becky, Look at Her Butter" not only had us laughing at the name but savoring every sip. The playful menu titles and clever touches show just how much thought and creativity went into every detail of this restaurant. Silverton is truly lucky to be the home of The Warren. It's a place where food, atmosphere, and community come together in the most wonderful way. Warm, cozy, creative, and absolutely delicious--The Warren is a gem that I can't wait to come back to again and again.

Cozy, comfortable atmosphere and great service. We had wine and the feta whip for a snack, and really enjoyed ourselves.

A place to taste a variety of PNW, Californian, French and international wines - paired with local artisan foods (I'll get to that later). Covid was a challenger in their intended first opening - but here they are Fall of 2025. Lucky is (locals)! Today I enjoyed a white wine flight, with wines from the Oregon columbia valley, Washington gorge, California Russian River and New Zealand. It's fun to break out - and taste the world! Then I saw they had one of my favorites - Le Ecole Chenin Blanc...so I had to order a chilled glass of that! Unfortunately I came with a full stomach - so didn't order any food. All local artisan sourced...ravioli, Draper family chicken, cheese and crab...but what I'm really looking forward to at my next visit is their (local) Pudding River cheese fondue! With sausage, baguette and apples if you like! Yes please and thank you. I also learned that great cheese pairing, art & wine events are scheduled. So sign up and make your fall and winter rich with great wine, food, new experiences and really great people!

Castor Kitchen & Bar - Amazing bread pudding!

Rainy Day, Great Bar Seat, and One Memorable Meal…read more It was a cold, rainy Oregon afternoon when I stumbled into Castor, and I'm glad I did. There happened to be one open seat at the bar, which is my favorite place to dine when traveling. Sitting at the bar lets you talk story with the bartender, learn the menu, and watch the cocktails come together. If you're eating alone, I highly recommend grabbing a seat here. The bartender was friendly, easy to talk with, and clearly knew both the menu and the craft behind the bar. One thing that stood out right away was their use of fresh local ingredients, which really shows up in the flavor of the dishes and drinks. I started with the Golden Manhattan, made with a pecan-infused bourbon that was fantastic. It had a rich, slightly nutty flavor with warm vanilla notes and just the right touch of sweetness. Smooth, balanced, and a great way to kick off the meal. Alongside that I ordered the chorizo clam chowder, which brought a creamy base with just the right amount of spice from the chorizo. Comfort food with a little personality. For dinner I switched gears and ordered the Creole Sour. This one really stood out. Bright citrus up front, a smooth bourbon backbone, and a subtle spice note that tied perfectly into the Creole theme. It had that classic sour balance, tart, slightly sweet, and refreshing without overpowering the drink. Dinner was the gumbo with hot bread and butter, and it delivered. Deep flavor, a nice slow warmth from the spice, and hearty enough to make the rainy Oregon weather feel like part of the experience. To finish things off I kept it simple with a neat pour of Ben Holladay, which made for the perfect nightcap. The staff were welcoming and relaxed, which made the whole experience feel easy and comfortable. This is the kind of place that works whether you're dining solo, meeting friends, out with someone special, or grabbing dinner with a group. The price point landed right where it should be for the quality of food, cocktails, and service. If you're in Corvallis and can grab a seat at the bar at Castor, take it. Order a cocktail, settle in, and enjoy the ride. It turned a rainy afternoon into one heck of a meal.

They are a pleasure to chat with as you have a drink at the bar, happy hour or not. Except yesterday they were admonished not to talk with us so much although it wasn't busy, so I guess we will not be going as much anymore. Great spot for a date night, special family celebration dinner, or catch-up with good friends. Loved the elderly couple who came for drinks and dessert only! First starter was the clam special in white, smooth broth with leeks, served with two big slices of crispy focaccia. YUM. I didn't think 25 clams would be enough to fill me up, but I was wrong, and this special was great. Second starter was the duck confit salad, and the duck leg was cooked perfectly, skin on. Husband liked the matchstick apples and cherry vinaigrette but thought the blue cheese was overpowering. First entree was the king prawn pasta alla vodka, and the noodles were overcooked - fastest way to kill a meal. Prawns cooked perfectly, but the noodles were mush in an otherwise nice sauce. Husband and I both loved his butternut soup, drizzled with good quality EVOO and rich texture. Curious what other ingredients they use (or where they get their butternuts) because their soup was WAY better than anything I've made at home. Dessert was fab: lemon mousse topped with vanilla pavlova. We saw another table order one of each dessert, but their lemon mousse went first, which sealed our decision! Would recommend for anyone passing through Dundee - just skip the pasta.
