The bun was incredibly fresh, light, and pillowy, while the pork belly was melt-in-your-mouth tender with the perfect balance of richness and tang from the kimchi. The pickled vegetables added a bright crunch that tasted incredibly fresh. We started with the salmon tartare, and it was phenomenal! Rich, buttery, bursting with flavor, and so good we were literally fighting over the last bite. And the scallop? Order one for each person. Seriously. It's far too delicious to share. It had just the right amount of heat, leaving the perfect lingering warmth that immediately made us want another. Do yourself a favor and give yourself enough time to work your way through the menu, because every dish we tried was outstanding. Each plate was thoughtfully curated, beautifully executed, and cooked to perfection. I like to call it the C³ trifecta: curated, created, and cooked. Not drinking right now but the cocktail menu was super tempting. Every menu item sounded great. We got some help on ordering from our servers and Tanya picked ones she had enjoyed before. We also sat right beside the pick up window so it was fun seeing food come out! The food was fantastic. See pictures for what we ordered. I really liked The In Between's logo and interior design, it felt like stepping into the Prohibition era. We ordered a drink each from the Seasonal Summer Menu and shared a hummus plate. The drinks were nothing extraordinary but pretty good, and the hummus plate was a great shareable snack for the two of us. However, the service was super slow and frustrating. The staff were overextended since they were taking on both the bartender and server roles, so it was very difficult to catch their attention. We ended up having to approach them while they were in the middle of making a drink after trying to flag them down for 20 minutes and failing. We were in a bit of a rush towards the end so this was not the best experience, but definitely a bar worth checking out if you're not in a rush and have a lot of patience!

When I pointed to the slug why gave a small chuckle and half smile and stated, "well, it is farm to table." That is gaslighting. Right there that was a poor response. I see signs saying Michelin on this restaurant, but really...if you had served a slug to a someone rating you for a Michelin, you think you would get that rating? Highly doubtful. (which is perfect as I don't think it would carry well to reheat due to gravy) I can't forget to compliment the service. Our waiter checked on us often, gave suggestions when we asked, water always was refilled which we appreciated so much. Service is lost nowadays but not here! So come here for a small plate and specialty cocktails or craft beer night or a full meal.
