We tried a variety of dishes across both visits, and every single one was fantastic. The balance of flavors and the way different cultures are blended together is seriously impressive. Some standout dishes: the truffle ceviche was incredible, and the black tiger prawn causa had a sauce that was absolutely fantastic. The tallarín de marisco is a must-order, we loved it so much we ordered it twice. We also had the salmon anticucho and Colombian arepa, and everything was fire. Everything tasted fresh, well thought out, and perfectly executed. You can tell a lot of care goes into each dish. If you're visiting Whistler, Balam is a must-visit. It was easily one of the best restaurants on our trip to Whistler.

We opted for family-style dining on the outdoor patio, which set the tone perfectly--great ambiance, relaxed energy, and ideal for sharing plates and good conversation. Tatiana, our server, was fantastic--pleasant, attentive, and genuinely friendly, which made the whole experience even better. Food came out quickly, which was impressive given the variety we ordered. We went all in on the menu: * Truffle ceviche * Scallop ceviche * Black tiger prawn causa * Amazonian fish with prawns * Bistek a la Parilla * Yuca fries Everything was fresh, well-presented, and packed with flavor. The ceviches stood out, and the Amazonian fish dish was a highlight. It's definitely on the pricier side--more than I'd typically go for--but when you're on vacation with good friends, it's one of those "worth it" experiences. Great food, great service, and a setting that makes you want to linger a little longer.

Nice place to visit. Great cocktails. Unfortunately their products aren't up to snuff. I bought…read moretheir Lavender Gin at a local liquor store. It is the worse hard liquor I have ever bought. Lavender?? No, just some slightly amber gin that I can't even mix with anything. Whitley Niell makes a great Parma Lavender Gin that I first tried in a cocktail in Portsmouth UK. It isn't sold in Canada anymore unfortunately and was only for a short period. That was the reason I snapped up the Roots and Wings gin but I am resigned to using it for cleaning. I did try some of their other products and only the Abisnstine impressed me. I would have loved to have given a great review of their liquor but that wasn't possible. Drinking their cocktails is a different thing as they have a great mixologist. My advice- visit them, get a sample before buying, and buy only what tastes good to you. Everyone has different tastes.

I was the only there since it was 1pm on a Monday after all. Was about to grab to an Old Fashion after looking at their online menu, but was then told that they did flights so that's what I got. The flight; You choose six from a list of about 15. They do primarily vodka, but they do have some whiskey, gin, and even am Absinthe. I was very happy with all 6 and would order them again. I won't really go into any detail about each spirit since everyone has their own preference when it comes to alcohol. What I can say is that their Old Fashioned Spirit was my favorite. The service: The person working at the time was really friendly and helpful. Willing to answer questions about the spirits and make recommendations. The distillery: It's small and due to Covid Protocols they're only accepting 6 people in the building; however, they have a lot of outdoor space to enjoy. Their pick-up truck bar is the most eye catching so that's where we sat. I'd 100% come back here and if I lived in Langley I'd probably make this place one of my go to hangouts.
