Hadnt been back in about 20 years. Walla Walla got bigger. So did I. Good to see everyone doing well. Checked into hotel. Had business Tuesday. It was Monday. Needed food. Salted Mill. Sat at bar. Ordered non alcoholic beer. Tasted like beer. No alcohol. Basically they removed the consequences. Could be big. First night at a bar I always order cheeseburger. Cheeseburger test. You can learn a lot about a restaurant from a cheeseburger. For example if the cheeseburger is good they probably make a good cheeseburger. Ordered Drive-In Burger exactly how they make it. Never modify the test. Half pound beef. American cheese. grilled onions. pickles. Mill Sauce. sourdough. fries. $22. There are cheaper ways to get beef but I was already there. Burger took awhile. Started looking around. They have these enormous wine barrels that have been hollowed out and they put a table inside. People go inside the barrel and eat. Didnt understand. There were regular tables nearby where you can see the rest of the room. Barrel people chose barrel. Kept watching them. They seemed happy. Maybe barrel is good. I dont know. I dont like ruling things out before I have all the facts. Drank more non alcoholic beer. Still sober. Product works. Might invest. Asked about burger. Burger coming. Good. Started talking to some people next to me. All bartenders. Asked where they bartend. Other restaurants. Apparently Walla Walla bartenders finish bartending and then go to another bar where a different bartender bartends for them. Then that bartender eventually goes somewhere else. Money basically stays in the bartender system. Very efficient economy. Asked what their group was called. Nothing. Couldnt believe it. They already had members. They had meetings. They had beverages. They had geographic concentration. No brand. Told them they need a name. They asked me for one. Had nothing. Classic consultant. Told them I would circle back. Burger arrived. Forgot about bartenders immediately. Insane burger. Crispy edges on meat. Very important. Sometimes the best part of something is the part where it almost burned. American cheese. Correct. People disrespect American cheese because it comes individually wrapped. I like knowing which cheese is mine. Grilled onions everywhere. Pickles extremely pickle. Mill Sauce got on both hands eventually. Burger was no longer really contained. Sourdough fought hard. Held together until almost the end. Respect. Fries were excellent. Ate every one. Found one underneath burger after I thought I was done. Huge night. Burger took awhile but I no longer cared. If something is bad and takes awhile thats waiting. If its good and takes awhile thats cooking. Cheeseburger test passed. Started talking to bartender group again. Asked about the barrel people. Nobody could give me a convincing reason to eat dinner inside a barrel. One guy might have tried. Didnt convince me. I am not anti barrel. Just dont know why I need to be inside one. Investigation remains open. Staff was awesome. Everybody knew everybody. One of those places where you walk in alone and 30 minutes later you're involved in a local bartender naming dispute. This is America. Paid bill. Walked back to hotel. Thought about grandma. She probably walked around some of these same streets when she was at Whitman. Different restaurants though probably. Hope she ate good. Tuesday night my work teammates were in town. Told them about burger. Built burger up pretty hard. We went to go get it. Closed. Wednesday tried again. Closed. Looked it up. Salted Mill is closed Tuesday and Wednesday. Very disciplined. Most restaurants try to sell food every night. Salted Mill willing to walk away from 28.5% of week. Power move. Scarcity creates demand. I wanted burger more. My coworkers never got one. Tough lesson but business trips aren't vacations. Thursday I left Walla Walla. Still no name for bartender group. Been thinking maybe Walla Walla Bar Association but apparently that name is already used by lawyers. Lawyers got there first. Typical. Could also call them The Pour Decisions. Too clever. They need something worse. Will continue working on it for free. Grandma helped Whitman for years. I helped 6 bartenders realize they need a name. Different generations serve the community differently. Great burger. Great people. Great fake beer. Barrel people appeared safe. If you are in Walla Walla on Tuesday or Wednesday I cannot recommend Salted Mill because you cannot go inside. Any other appropriate day highly recommend. 5 stars DM me if you have a name for the bartenders

The 1st time I went, not long after I moved here, I got a burger at lunch time. I remember thinking it was meh. The meat was dry and the bun was stale. That's about all I remember. 2nd time, I got their version of Eggs Benedict. The eggs were overcooked (jammy-to-dry yolks) and the cheese sauce was terrible. 3rd time was the salmon filet, which was significantly undercooked in the middle. 4th time, I got the Country Biscuit Breakfast: gravy was terribly salty and the scrambled eggs were rubber. Tonight, it was the corned beef hash with two poached eggs and a Belgian waffle: the hash was more green pepper than meat or potatoes, the "poached" eggs were white hockey pucks with completely solid yolks and the Belgian waffle was a fluffy waffle-shaped pancake, no crispness on the outside at all. The waitstaff are fantastic and extremely nice. The setting is ... dated, but serviceable. The place is still better than the truly awful Denny's in town. I really hate ripping the place because the folks are so nice. I guess I'll sum it up this way: I've never had a truly bad meal at Clarette's, but I've never had a truly good meal there, either.
