We arrived around 1:00 PM and happened to be the first people there, which was nice. The indoor ambiance is very casual. It's not really a place for large groups or gatherings, but it's great for a small group looking to grab a drink. Now for the service. Our server, who was also the bartender and chef, was incredibly accommodating, quick, and provided AMAZING service given the circumstances, so kudos to her. That said, she was the only person working in the entire establishment that day. While it was manageable when it was just our party, once more guests started coming in it was clearly overwhelming. She ultimately had to close the kitchen, which was understandable, but it happened before everyone in our group was able to order food. That left us in an awkward situation where we had to leave and go elsewhere so the rest of our party could eat. We still had a great time and enjoyed our drinks, and this is absolutely not a reflection on the server at all. This falls on management or ownership. Staffing only one employee the day after Christmas is something that really needs to be reevaluated. I genuinely felt bad for her.

She lined up six different recommendations and every single one stood on its own. No filler pours, no "this one grows on you" nonsense. Locals and regulars kept stopping by to speak with the owner and check out the wines available (or say hello to her pup). We had a larger party and special care was provided to all of us in attendance. I started with the gazpacho, which was just okay. The paella though was wonderful. This Cuban influenced version is a bit different than the traditional Spanish version with which I have far more experience. My guess was the biggest difference was in the saffron which I didn't pick up here. Visually, and you'll have to trust me here, a wonderful presentation. A great time was had by all. For those who are gluten-free, The Wave Kitchen & Bar is fantastic. They offer gluten-free toast, breakfast potatoes, black bean hummus, guac and salsa, and for dessert, a divine flourless chocolate cake served with your choice of vanilla or espresso ice cream.
