You start with a base, just like at Chipotle or Cava--greens, sweet potatoes, or quinoa, etc.--and top with veggies or salads, and, if you prefer a protein, you can add chicken, pork, or tofu. Or you can just go full-on veggie plate. Top with a flavorful sauce; my favorites were the spicy avocado and lemon herb.
