This is a modern bistro, and it seems that everyone in Flagstaff either is eating there at the same time or has eaten there at some time. The chef is quite adventurist in his cooking, and creates dishes that are quite different from what you would expect. We started off with an appetizer of calamari. Different than almost any calamari I have ever had as this was lightly dusted with cornmeal, and served with sweet chile sauce and spicy remoulade sauce. Different? Yup! Delicious? Yup! Companion had Mexican Chicken Cordon Bleu con Mole. Again, different than anything either of us had ever had, but deliciously spicy and flavorful. For myself, I ordered Achiote Smoked Pork Osso Bucco. Instead of the usual Italian service of a tomato covering served with gremolata, this was deeply smoked with an achiote demi and falling off the bone with a green chile polenta and baby asparagus and carrots.
