TASTING MENU WITH WINE: You come here for the EXPERIENCE so make sure to make a reservation and plan to settle in for a few hours (3). This may not have been the "best meal I ever ate," but it was hands down the MOST CREATIVE MENU. You can't go wrong with the tasting menu and wine pairing. Just do it. Trust me. Service: the service was incredibly detailed and attentive. Any time they do anything they say "it's my pleasure." Definitely part of the training. The sommelier was the only person that went off script a bit to talk with us, which was nice. Ambiance: Definitely a high end date night. Enjoy!

"Nights in white satin, Never reaching the end, Letters I've written, Never meaning to send" (Nights in White Satin - The Moody Blues) Maybe not white satin, but there were plenty of white dinner jackets and white gloves on the waitstaff who lavished service on us for all 2 hours of our ten course tasting dinner to culminate our vacation in beautiful Cancun. We saw a team of five waiters decked out in white, and every time we were served a new course three guys took care of us, each one carrying a plate to the three members of our party. It was sensational service, which was appropriate for this beautiful and sensational restaurant. What was very cool, was that every time a course came out, we were treated to a little description of what the dish was, what its components parts were, and the chef's recommended way to eat it. And at the end of the evening, the Chef came out, shook our hands and thanked us for our business. Tempo is not included with the "All Inclusive" cost at Paradisus. It offers a la carte choices and two variations of the tasting menu. The tasting menu feast was offered with or without wine pairings for $ 709 Mexican pesos or $45 US and $1297 Mexican pesos or $83 with the wine pairings. Each course is served with a small course of a different bread. So what did we have? I'll let the eloquent menu answer that one. Snack Appetizer Organic Egg At Low Temperature, With Mellow Chick Pea Juice And Soft Crumbs Fennel Pearls In A Creamy Emulsified Risotto Pickled Mushroom Salad, With Quail And Foie Gras Cream On A Gelatinized Iberian Stock Grilled White Tuna With Mango And Capers On Soy Sauce Accompanied With Celery Salad Beef Tenderloin Accompanied With Swiss Chard Chlorophyll Camembert Cheese Bonbons And Iberian Ham Sauce Frozen Celery With Mango, Beet And Fruit Compote Chocolate Soufflé With Caramel And Cinnamon Ice Cream Petit -Fours So how was it? It was magnificent, every bite and every morsel. Even something as sketchy sounding as a low temperature egg with chick pea juice- that was decadently creamy, luxurious, and delicious. The main courses of tuna and beef were ridiculously good. The three desserts were a great way to finish things off. That chocolate souffle with cinnamon ice cream should be a controlled substance. Combine the welcome from the gorgeous hostess, the beautiful interior, the excellence and professionalism of the waitstaff, the long stemmed rose given to me to present to my wife, and the great food with spectacular wines, and you have a memorable experience that we will remember for a long time. Adios, Cancun. Nos lo pasamos muy bien.

My husband and I visited Tempo during our vacation and we are so happy that we did. When we arrived at Tempo, we were greeted with a glass of Chandon champagne. Initially, we were going to choose the a la cartel menu, but at ~900 pesos, we decided the tasting menu was the way to go. We decided to also select the wine pairing with our meal. Service was impeccable. Samuel and his crew did a great job of attending to our needs. Carlos, the sommelier, does a great job with the wine selection and pairings. My favorite dish on the menu was the low temperature prawns or the truffled egg yolk. Tempo is a must try for people who appreciate different techniques. The chef uses foam, gelee, dust, powder, etc. Dinner at Tempo is a great meal for the senses. Come hungry and leave full!

We came here for dinner on a Monday night during our 4 day stay. We had a 5 course meal with a bottle of wine. Our total meal cost about $200. Each dish was delicious and different. It reminded me of food that I would order at a nice restaurant back home. Service was absolutely lovely. The best we have had in a really long time. But the bottles of wine were a bit much. The "sommelier" wasn't much of a help and it felt like the wines were a bit more overpriced than usual since the wine cost as much as our meal. Overall, I would come back again. It is truly a fine dining restaurant within the Paradisus.

This restaurant should have a Michelin rating. One of the best meals of my life 10 courses with 6 wine pairing. It was a 3 hour dinner that was OUTSTANDING. Ignacio was our waiter., and each course was explained in great detail. This wasn't just a delicious dinner, it was a foodie experience. Pricey but worth it. .

Don't forget that the prices are in Pesos!

We had the 10 course tasting menu. First thing is that I have to give it 5+ stars for the superb service! Waiters & staff are very knowledgable However, due to some of the dishes being a little off . . . The food is only a 3.5 stars. We've been to San Sebastián & were looking forward to a tasty meal here in Cancun. The two dishes that did not agree with my palate was the oysters appetizer & the fennel foam risotto. I felt that the oysters were not as fresh & were too salty/briny/fishy. I usually love oysters everywhere so I was sad that I was not able to fully enjoy this dish. As for the fennel foam risotto . . . I thought there would actually be some grains in the risotto! But I guess the chef & I had different interpretations of what it should be. The foam fennel was just not enough substance to be a full dish. The other dishes in the menu were great & dessert was really the best part of the meal. Would I re comes this to others? Yes, it's a wonderful experience. I would just go back for the wine & service alone

Ahhhh tasting menus. You get dressed up (at least you should a little) and prepare to have your taste buds dance for 2-3 hours. We had a hard time getting into Tempo which just hyped it up even more. There were so many awesome tastes that happened that night! My personal favorite was the salad and the tuna steak . The wine pairing is a must!! Great wines that they picked. The chef came out and thanked us for coming. He even sent us an extra dish compliments of him because he had heard we hadn't been able to get in for the past few days. What a nice touch! I just had a couple problems. 1-way too much salt!! Our waiter warned us it might be salty (that's never a good sign) so when it got much too salty for me at the tuna course, I asked to switch to low sodium. He said of course! I'll bring the salt on the side just in case you need it. Which I didn't because still the following courses were basically dipped in a salt bowl. I took my knife and removed at least the top layer of salt of my beef tenderloin and could again taste the food. My only other problem-while our waiter was doting and attentive, whenever he would explain what our dish was he would only speak towards my dad, and so the 2 of us gals at the table couldn't hear him. So most of the time I didn't know what we were eating. What a bummer. I've done the tasting meals at other paradisus resorts and they are absolutely 5 star!! I have to give this one a 4 for the salt explosion though.

Wow wow wow! Tempo was definitely the highlight of our trip to Cancun. Coming from a foodie culture in San Francisco, and having had several Michelin star experiences, the fiance and I were completely surprised that this restaurant that we almost overlooked in Mexico could quite possibly be the BEST restaurant we've ever been to... EVER. The experience was perfect and the service was impeccable. The maitre d knew exactly who we were when we walked in and greeted us by name with a glass of champagne. Although to be fair, we were the only people in the restaurant at that time, which is mindblowing given the caliber of the place, and we felt so smart for having ditched the tourist traps to find a special and classy place all to ourselves. Once situated, we opted for the 12 course tasting menu with wine pairing, but the fiance couldn't help but order a the iberico ham appetizer which was a ballsy move considering the many courses we had ahead of us. The iberico ham was served generously on a large platter and was the best iberico ham of our lives! And we have paid much more for far less shoved into a paper cone in SF! The somm recommended a sparkling to pair with the ham and we of course indulged. Slivers of ham melted in our mouths and the champagne brought forth the perfect amount of sweetness and nuttiness. It was the perfect pairing. I teared up. After the first bite, I knew I was in for something special. Each plate, each bite was AMAZING whether it be foie, caviar, or beets (yes, beets!), and just when you thought something was delicious, that sip of perfectly paired wine takes you to another universe. DON'T YOU DARE come in here and skip the wine pairing! It was such a vital part of the experience and truly speaks to how much thought and consideration was put into each detail and flavor of the experience. At the end of the night, we were stuffed, happy, and a bit saucey. Our waiter came by and handed the fiance a rose to give to me, which made me lol because that's so corny and sweet. The bill came and I cried again - tears of happiness as we had only spent a total of $500 USD for what was one of the most indulgent and romantic meals of my life. I love you, Mexico.

Exquisite food in every sense of the word. I have had three different tasting menus in the three times I've been there and each were the perfect combinations of flavors and experiences. Service was exceptional and friendly and the space is ideal for a fine dining experience. This place should not be missed when you're in Cancun.

Had such a great experience at this restaurant. We really enjoyed the tuna tar tar and the Kobe beef. Would highly recommend.

Really more like 4.5 stars…read more Holy CAO - this place serves delicious food with inventive and entertaining cocktails, and vibes to keep you grooving in your seats as you eat. Located in the marina with both indoor and patio seating, you'll have a nice view of the water and a breeze in the evenings. My party spent 4 hours dining here for dinner; splitting a few dishes and mostly just talking with each other, the staff, and vibing to the DJ's tunes. At times the music was a little loud and I could see this deterring families with young children from sitting outside. They also push the alcohol sale here hard. As with most restaurants, I'm sure this is a big money maker for them (nothing is cheap here) but we had a person in our party who does not drink alcohol and the push was a little too pushy, even after we asked that they stop asking. We were celebrating a friend's birthday and they brought a cupcake at the end of our meal. Unfortunately, it was frozen solid in the center. Every entree and appetizer selection was excellent. I highly recommend the quesabirria and garlic shrimp! We're from the California Bay Area and the pricing here was like going out at home. It's expensive and caters to the tourist, so beware. I landed up getting another order of the chips ++ Cocktails. Not only were they delicious, but the showmanship was the coup de grace ++ The New York Aguachile was something else. The server cut the steak and seared it in front of us and applied all the sauces (more like vinegars), onions and guacamole ++ Try the rib eye gaoneras and the Cao Tacos. You definitely won't be disappointed We were so full, that we didn't have any space for dessert. I may have exaggerated on the 5+, but I think that's subjective and relative to competition. Among the multiple places in Cancun, this one definitely stands out.
