We were immediately seated on arrival and greeted with friendly faces. There is indoor and outdoor seating. I noticed that I can view some of the staff preparing dumplings, which was nice. We ordered the chili oil wontons, the seaweed salad, the sampler soup dumplings and the house fried rice. Everything was good. I actually used the chili oil from the wontons on the rice to elevate it IMO. I only had one soup dumpling as my child ate the rest but what I had did taste good. I would recommend!

Uncle is a small, Asian fusion shrine that one should place on your must visit list. In the Northwest area of Denver, Uncle has limited seating and a show if you sit at the bar. Reservations are strongly suggested and well worth the wait. Crazy combinations, flavor bombs throughout and a culinary delight you won't regret. Tonight, we sat at the bar and watched the magic happen. These guys are cranking out amazing and delectable treats you won't forget. The Uncle salad was a great starter with charred cabbage, lemongrass, mint, cilantro, arugula, and peanuts lightly coated in a Thai coconut dressing. A slight burn only leaving you to crave just one more bite, ha! The fried soft shell crab in a bao bun with green papayo slaw, coconut mayo and cilantro nam prik was sweet, perfect crunch and memorable. Two for two with one dish left. The cold spicy sesame noodles with seasoned chicken, granny Smith apple slivers, arugula, cashews and nanami togorashi, a perfect closing dish for an exceptional meal. The service, food quality, flavors and preformance from the bar seats were second to none. The concept, portion size, flavor and cost were a real treat in the big city food scene of Denver. If you haven't been here yet, get to the internet and book a table, I promise you won't regret it. To the staff, chefs, and all members of Uncle, thank you for a surprising and incredibly great meal, we will return on our future trips to Denver.

For drinks, we had the Thai tea and a lime leaf margarita. The Thai tea was super delicious, and the sweetness was just right. The lime leaf margarita is honestly one of my favorite margaritas I've ever had. For appetizers, we got the furikake potatoes, cucumber salad, and crab cheese wontons. They were all really tasty, but my favorite was definitely the furikake potatoes. The furikake seasoning gives them the perfect amount of flavor and spice, and I absolutely love the lime leaf aioli that comes with them. The cucumber salad was probably my second favorite. It has so much flavor, and I could honestly eat it all day. The crab cheese wontons were my third favorite, and my favorite part of those was actually the dipping sauce. For our main courses, we got the Korean fried chicken, tom yum noodles, and Three Treasures. My favorite was the Three Treasures. It's a vegetarian dish with stir-fried potatoes, eggplant, red pepper, and garlic sauce, and it was just incredibly flavorful. I was really impressed with how much flavor they packed into a vegetarian dish. The tom yum noodles were a very close second. They had shrimp, king trumpet and brown and white beech mushrooms, tomatoes, tom yum sauce, and spaghetti. Once again, the dish was just an explosion of flavor and really unique. The Korean fried chicken was my third favorite, but that definitely doesn't mean it wasn't impressive. The sauce on the chicken was to die for. It's a spicy garlic gochujang sauce, and it was absolutely delicious with the perfect level of heat. And then there's the Hong Kong French toast, which is one of my favorite things at this restaurant. It has a crispy cornflake crust, kaya coconut jam, sweetened condensed milk, and butter. It is seriously out-of-this-world good. If you're looking for an excellent place to eat or somewhere you want to take someone to impress them, I'd definitely recommend The Ginger Pig. Everything we had was fantastic, and I can't wait to go back.

I will start by saying that our server was helpful and attentive! So this is nothing against our service. The consistency of the food is where there were problems. The Not-So-Good Food Unfortunately, the French onion soup dumplings were undercooked. We could tell they would have been good if they were allowed the time to cook through. Additionally, the soft shell crab Bao buns were very salty and tasted a bit off. The Good Food We enjoyed the General Cho's soup dumplings and the sticks of wagyu beef were also good. Nothing to write home about, but nice to try. We were there on a Tuesday, so all day happy hour applied. We took advantage of the happy hour, but noticed that it wasn't much of a deal. For instance, they charge $7 instead of $16 for their dumplings, but they don't state that it's a half portion. Most happy hour items are like this, a half portion that equates to the same price per unit or $1 cheaper per unit compared to the regular menu. It felt a bit misleading and frustrating when you add the inconsistent food quality. I suspect this was a recent change, because many reviews have mentioned the excellent happy hour deals.

Flaky and crispy outside with a delicious pork and veggie filling. The side sauces were also unique and paired well. The mustard based sauce was a new one for me! Paired really well with the pork. The sweet and sour type was also delicious. The cucumber salad was crunchy, fresh, and just the right amount of tang. I could have had a whole bowl of just this! It is street food style so no formal table seating. If the weather is nice, I recommend hanging outside on the benches under a tree. Also eat location to grab and go as well.
